The Best Steakhouse Dining Experience on a Poor House Budget

About seven years ago, we lost the ability to run out and have dinner out whenever we wanted to. It began with a change in income… or a complete lack of income coming into our house. The decision to eat fancy dinners at home was solidified with the birth of our son and later our daughter.

As I became more acquainted with the kitchen though, we soon realized that dinners out just lacked that pizazz that we could easily get from home. The food was a bit better, (if the house was relatively tidy) the atmosphere was better, and we could spend a whole heck of a lot less and get a whole heck of a lot more.

It is funny, now even when we have help to watch our kids, we still gravitate towards eating at home. I remember having a gift card for a fancy restaurant in town and we ended up spending $75 on dinner. I looked across the table at my husband and he said, “It was good, but…I like your tilapia better.” Yeah, the tilapia that I buy for $4.99 a bag and prepare at home tasted better than the $25 of one fillet of tilapia plated in front of my hubby… sickening, isn’t it?

Pictured above is the dinner that my husband and I shared with no children on New Year’s Eve. For these fancy dinners at home, I break out our wedding china (of which we only own four place settings), get out the fine wedding stemware, and I splurge a little at the supermarket on ingredients I wouldn’t normally treat myself to.

As I was picking out our steaks behind the butcher counter, the lady that was weighing them for me told me that she was planning to buy a couple of them herself.

“Yes, we try to avoid dining out on NYE because the crowds are so bad, ” I shared with her as she packaged the meat.

She looked up at me smugly and said, “You know what we call going out to eat on NYE? My husband and I call it amateur night. Who would ever do that?”

We both giggled and I will now refer to NYE and Valentine’s Day dining out as that because it is so not fun to go out on those nights.

Don’t get stuck on amateur night, my friends, but do make it fun for yourself. Play with new ingredients, buy something pre-packaged that wouldn’t normally fit in your grocery budget, try a recipe that you wouldn’t normally “waste” your ingredients or time on, and throw on some good music to cook to.

Don’t make it the same old dinner that you usually do, but make it a delicious experience that you can treasure. I think having great ingredients and new recipes to indulge in makes cooking feel like fun instead of the same old dinner routine that I have to perform.

I am sharing our delicious menu that was absolute perfection for us that I hope will inspire a deliciously wonderful date night with your spouse! My husband said it was one of my finer moments in the kitchen and we still talk about how special that night was for both of us!  This dinner cost about $30 in ingredients (an entire bottle of fancy wine included), but we had enough leftover for two meals. You couldn’t get a dinner like this out for that price!

Steakhouse Steak Marinade (adapted from Recipezaar)

2 steaks (whatever is on sale and looks good)

2 tablespoon olive oil
2 garlic cloves, minced
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar or white vinegar
2 teaspoons yellow mustard
2 tablespoon soy sauce
Freshly ground pepper

Mix all ingredients together and place steaks into freezer bag with marinade overnight. This makes enough marinade for two large steaks.

Below is an approximate timetable for how long to cook your steaks for a medium steak. I opt for a little shorter cooking time and prefer my meat to be medium rare. If you are unsure, a meat thermometer is the best gauge for the perfect steak!

Grilling Steak Timetable

Filet: 13-18 minutes

Ribeye, Boneless: 6-8 minutes

Ribeye, Bone-In: 9-12 minutes

T-Bone /Porterhouse: 14-16 minutes

Top Sirloin: 13-16 minutes

Strip, Boneless: 10-12 minutes

Cooking steak, to me, is not easy. I know it is not easy to a lot of other people too because I often get asked how to cook the perfect steak. Use the above timetable for steak as a loose guideline for how long to cook it. The best gauge for cooking will always be the scientific approach… a handy meat thermometer.

(Quick temperature guidelines: Rare is 120 degrees, Medium is 125 degrees, and Medium is 130 degrees)

More important than the degrees though is letting your meat rest. Don’t cut into it to check it when you pull it out of the pan. Give it plenty of time to let everything redistribute itself and then slice into it. That is the real secret to a deliciously juicy steak.

I love steak cooked out on the grill, but refuse to venture out there in the cold. Pictured above is my favorite tool for cooking steak and I got it at Goodwill! It is a cast iron grill pan that had rusted and been poorly cared for. I loved it up and got it in much better condition, and this is my favorite tool for cooking a beautiful steak without getting cold. I found one similar to it on Amazon, should you also be in the market for staying warm, and it costs less than $20!

Bella’s Rosemary Red Potatoes (adapted from Allrecipes Dinner Tonight Cookbook)

2 tablespoons butter, melted

1 tablespoon vegetable oil

8 small red potatoes, scrubbed and cut into wedges

1 tablespoon chopped rosemary

1/2 teaspoon salt

1/4 teaspoon pepper

Preheat oven to 375 degrees. Mix together melted butter and oil; pour into a 9×13″ baking dish. Place the potatoes into the dish and stir until coated. Sprinkle with rosemary, salt, and pepper. Cover with aluminum foil. Bake in the preheated oven for 30 minutes or until the potatoes are tender. Stir potatoes to ensure even cooking. Yields four servings.

Pan-Fried Asparagus (adapted from Allrecipes Dinner Tonight Cookbook)

1/4 cup butter

1 tablespoon olive oil

1/2 teaspoon coarse salt

1/4 teaspoon ground black pepper

3 cloves garlic, minced

1/2 pound fresh asparagus spears, trimmed

Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for one minute, but do not brown. Add asparagus and cook for five to ten minutes or until crisp-tender, turning asparagus to ensure even cooking. Yields two servings.

This dinner was served with a loaf of french bread (on sale), festive bakery cupcakes (on sale), and a bottle of red wine (guess what? ON SALE!!)

What an honor to share about my true passion of building your community authentically, transparently, and in the most balanced way that a mother can!

My name is Amy and I am the Founder of MomAdvice.com. I am a busy mom of two and live in the beautiful Midwest with my web designing husband and our two children. I love to cook, knit, drink coffee, take pictures, and am a total bookworm. I am dedicated to anything that will help make my life simpler, keep me on my budget, and that promotes family time!

We started this site six years ago as a platform to share about all of those topics that I had been searching for when I became homemaker. How do I cook? How do I clean this house? How do I keep my children entertained without breaking the bank? How do I manage a daily routine? Most of all though…how do I do all of this on a limited income?

What are the truths that I hope to share about building a community and blogging today?

Immediately Engage Your Readers- If you are featured in any noteworthy publication, site, radio show or television show, or speaking at an event create a Welcome page to those readers. Include some of your favorite posts from the archives, a bio about who you are and why you started your blog, and information on how to subscribe to your site. Imagine that someone is reading your site for the first time and gather everything they will need to navigate and find that great information.

Today I am speaking at BlissDom so I have created this page so you can see a little piece of what I work so hard on every single day.  Are you at the event too? Get a page up so when people are flipping through their business cards they will be able to discover what you represent and how to interact with your site immediately!

Live Authentically– My blog is like another extension of myself and because I write about my family and how we manage the day-to-day tasks of life,  I have to share about these situations authentically with my readers. I try to share the triumphs of my life and also the things that have totally bombed in our family authentically! This means sharing pictures of what is created in the kitchen, created during my craft time, the disorganized mess and then the freshly organized space, and glimpses of me as a mother and my family.

More importantly though, I am LIVING. I try to not sit at my computer all day because then I am not living an authentic life that I can share with you. I can’t share about crafts I create with my kids unless I actually did those crafts with them. You need to live your beautiful life to create an authentic blog life. The more living you are doing, the more inspiring your blog will be. THAT is what creates readers, not just sitting mind-numbingly at a computer for hours and hours on end.

Living authentically also means only taking opportunities that fit with your site and who you are. Our site promotes family, getting your family around the dinner table,  organizing solutions, and inexpensive living. Those are the opportunities that I should be seeking and sharing about. This means I turn down roughly five to ten opportunities a week. Sometimes it REALLY stinks to say no, but I know that I have to live AUTHENTICALLY to keep my readers engaged. If it doesn’t offer value to my community and if it takes me away from my #1 goal to be the best mom I can be, then I have to say no.  Don’t sacrifice your reputation for free stuff and that will give you the staying power to outlast other blogs. Believe me!

Today Transparency is Key to Your Community– The fastest way to lose your community is to not be transparent about what is happening behind the scenes. Get that Disclaimer up, make sure that product reviews fit with your site or that you are doing your best to offer those items back to your readers, and add an extra Disclaimer at the bottom of your reviews to make everyone feel right at home. For example, this is what I put at the bottom of EVERY review post.

The thoughts and opinions expressed will always be honest and heartfelt and no reflection on receiving a sample copy.  We promise to always do our best to also give away each of these products to our readers because it is always better to give than to receive!  Want to know more about how things are handled here at MomAdvice? Be sure to read our Disclaimer which clearly states how things work and know that we will always offer only the best reviews to our readers.

Reward Your Referrers- Without great referrals; you won’t be able to gain new readers. At the beginning of each month, thank the people that made your site great that month and what was most popular for the month on your site. I am able to see my top referrers through my web host so that is where I gather my information for compiling our top ten list at the start of the month. Here is an example of what my monthly recaps look like.

Highlight Others- Create a post weekly or monthly that will showcase others that read your site and to keep them engaged on your site.  I try to highlight weekly a round-up of great blogs that offer information that our readers will find helpful . I also try ideas that are highlighted in this round-up to further add the spotlight on these great blogs. In fact, Amy’s Notebook and our Notebook Experiments are some of the most visited and favorite posts of our reader’s week! I try to mix in people that have made our site a success (often those that are highlighted as referrers each month) because no one deserves to be highlighted more than someone who has created our community!

Boosting Energy By Embracing An Exercise Routine

I have great motivation to keep a healthy lifestyle which is what fuels me to continue to exercise and keep up with my active lifestyle. My motivators might be different from yours, but I am sure there is something that motivates you. For me, I find myself less depressed when I exercise, the aches and pains that I have seem to subside with regular exercise, I am trying to avoid the health problems that have plagued my family,  but most of all… I have the energy to keep up with my two energetic children.

I used to attend the gym regularly before I had children. On my lunch hours, I would head to the gym and take difficult kickboxing classes, pilates, power yoga, and aerobics classes. I had college weight to lose and the time to think about just me. The longer and the harder the class, the more I loved it! I would spend my afternoons at the gym and the evenings doing community theater and just thinking about me. It was just all about me all the time and it was glorious.

Those days seem a lifetime ago. My workouts have to be quick and effective,  crammed between two kid’s extracurricular activities, homework, laundry, and daily life.  I find myself trying to figure out how I can just find twenty minutes to myself. In fact, my workout routines are mixed in with children trying to exercise rightwithme and a cat that insists on rubbing against me while I am doing my ab work. Kids are crying for computer time or needing help in the bathroom and I am pausing the DVD and running back, hoping to continue my little burst in energy. What a far cry from an hour at the gym for just me.

That being said, I wouldn’t have it any other way and as the kids see me exercise, I know that I am modeling for them the importance of taking care of the body that God gave you. I could join a gym, but I have found that driving over to a gym takes more time and more energy than popping in a DVD or using the workout equipment we own at home. That being said, it requires a great deal of discipline to maintain a workout routine on your own. Thankfully, interacting online with my real life friends and internet friends keeps me motivated enough to do it all on my own.

What I have discovered is that moms need to find a solution that works best for them. The gym might be for some, but it might not be for you. Workout equipment at home might not be helpful to you, but for others they find motivation in having what they need right at their fingertips. Realize that as long as you are moving, you are doing exactly what your body is intended to do.

1.    Make it quick and convenient. Try aiming for just twenty minute sessions and do what fits best with your schedule. If going to the gym doesn’t work for you right now, stick to a workout DVD. If you can’t manage either, try a brisk walk around your neighborhood. Whatever you do, make it something that is easily doable and can be done in a short period of time.

2.    Make an appointment with yourself. Find the times that work best for you and do it every single day. If something gets in your time slot, push it back, but do not push it off.

3.    Schedule your workouts when it is best for you, not when you think you should workout. I can admit it; I am not a morning person. I have tried being a morning person and I just can’t do it. I will no longer apologize for not being a morning person and will understand that maybe I will come to a stage in my life where morning workouts work better for me, but for now I am content on being groggy in the morning and doing afternoon workouts instead.

4.    Get pumped up. Find what motivates you to get moving and incorporate that. Music is a powerful motivator for me and I love to get music from the local library and play that or load fresh music into my iPod for working out.

Others are pumped by community sites that help them track and login their workout times. SparkPeople is one resource where you can track your caloric content and exercise schedule while chatting with others through forums. Others are motivated by having a workout buddy or making a daily date with a girlfriend at the gym. Whatever it is, find what motivates you and get your body moving.

5. Challenge your spouse. My husband and I decided to challenge each other one month to an exercise challenge. I did a workout routine for 30 days straight and he did did sit-ups every single day. Both of our bodies were transformed by the experience and so was our mindset. Adding an element of competition encouraged me that I could totally take him on and added another level to my workout routine. Adding a little trash-talking in our dinner conversation also helped with our friendly competition that not only ended up rewarding ourselves with a more active lifestyle, but even added a little bit of spark back into our relationship!


5.    Get some workout gear. I don’t know why, but I have a hard time spending money on workout gear. The year 1997 called though and they wanted their workout clothes back so I knew it was time to make an investment. Buy a few good workout pieces for yourself and try washing your tennis shoes to freshen them up. Just slip off the laces and throw the shoes in the washer. Wash them on a warm setting with a little laundry detergent. After they are done, stuff the interior of the shoes with newspaper (to help hold its shape and also to absorb any lingering odors) and let them dry outside in the sunshine. Fresh workout gear can make all the difference in how you feel about yourself and can help you commit more to making exercise a priority.

6. Reward yourself. Rewards to myself are exactly what keep me motivated and what you might find keeps you motivated too. It could be something simple like a glass of wine in the evening, a bubble bath with a good book, a new pair of jeans after reaching a certain weight, a new DVD that will keep inspiring you to workout,  or a protein-packed smoothie that can only be drank if a workout is complete.

7. Switch it up. I need new routines each day to keep things fresh and keep myself motivated. I love to visit our local library and check out workout DVD’s for free and add variety to my workout routines without spending any money. If your library doesn’t offer a great selection, try pooling your workout DVD’s with friends and trading with one another to add different elements to your workout routine. If you have a movie membership, use that for a workout DVD instead of another couch potato night.

Dust off that old treadmill, use the Wii Fit that you told your hubby you would use regularly, but quickly gathered dust in your family room, grab those DVD’s that you just had to have to keep your workouts fresh, and put those five pound weights and mat that are still wrapped in their packages to work.

Do it for you, do it for your kids, do it for your spouse, do it for your body,  do it because YOU DESERVE TO BE HEALTHY! Do it for whatever motives you, but DO IT!

This is my motivation. I want to see them go to high school. I want to watch them at graduation. I want to meet the loves of their life. I want to watch them walk down the aisle. I want to hold my grandchildren.  I want to hold my great-grandchildren. I don’t want to miss a moment of any of it. I know I can do all of that if  I take care of myself and the body that God gave me.

We Lived Thrifty So We Could Do This…

I feel like a confession today. Over six years ago we purchased our first home and  have been steadily making progress on the house ever since. We have done everything from painting kitchen cabinets, painting walls, more painting, renovating our patio, and getting our children situated in their rooms. We have also outsourced things like getting a new roof, knocking out walls, landscaping, new furnace, and new air conditioner that were all desperately required updates on our late-sixties home.

We are coming to the end of the DIY road and now moving into uncharted territory…a major home renovation. We will be knocking out a wall to create an updated family room complete with built-in storage and fresh new drywall with crown molding. We are finishing our basement to create a private home office that will be away from the family chaos so I can write my first book (editor’s note- let’s see if anyone actually picks up on what I just said). We will also be creating a walk-in pantry with a cubby for our kitchen computer. To top it off, we are getting new flooring throughout our home.

We will be doing all of these home improvements and paying for them with cash that we have been saving. Truth be told, we are paying for all of our home renovations with the money that I earned from my site. Although we don’t do “his” and “hers” accounts, we keep my income in a separate account to track income earned and business expenses. That account is where we will be withdrawing the funds from to complete the project.

I have gotten some criticism from family and friends that we should just move into a new house and skip renovating this home.  If the housing market was better, if there were better houses on the market that fit in our budget, and if I had a desire to get out my neighborhood, I would…but I just don’t. I didn’t pour all of this money, blood, sweat, and tears into this home to abandon it because it is lacking two rooms that I would like. It makes more sense to me to invest in the home that I have learned to love so much and make the most of it. These renovations offer a long term solution for making the most of our space as our children get older.

When I think about it, it makes my heart beat really fast and I find my hands getting sweaty. Spending money makes me do that. Spending this will greatly diminish the financial cushion that I love so much. It doesn’t mean we will be eating beans and rice every night, but it will mean careful management and hard work to restore the cushion again.

You just can’t be a frugal blogger and not address something major like pouring money into a home renovation. I am very proud that we can pay cash for it, that we continue to live in a home that is within our family’s budget, and that we will be able to renovate our home to accommodate our family’s long term needs.

I look forward to sharing with you what is happening in our house, how we saved on our projects, and why these renovations will offer long-term living space for our family.

Why am I telling you this? Because I want you to know that we are still living within our means. Still paying cash. And still committed to a life of no debt. I want you to know that we even bartered my husband’s web design services to save on the project. I want you to know that the reason this blog works is because I am authentic and committed to the goal of living my life on a budget.

Basically, it feels good to share it with someone who understands the beating heart, the constant questioning of yourself that you are making the best choices, that even though you save so you can spend on what is important that it is so incredibly hard to part with your money, and that is still cheaper in the long run to update your home then to move and start paying on a new mortgage, and I am absolutely making the right choice.  Can you tell me that?

Skillet Penne and Sausage Supper

You know when you have one of those moments that you know what you are planning to serve your family is going to to totally bomb at the dinner table, but you want to just make it for yourself anyway. This dish, I thought, would completely bomb at our house. It has spinach, sun-dried tomatoes, penne pasta instead of spaghetti, and white sauce instead of red. In short, it had vegetables and it wasn’t spaghetti.

The thing was, it didn’t bomb… in fact, everyone happily munched away. It might have been the right day for introducing new foods, it might have been that it was later than it usually was and everyone was starving, or it might have been because this dinner is so darn delicious.

Whatever the reason, it reminded me that many times my own fears about how my kids will feel about foods inhibits my cooking style.  I am often holding my own self back from introducing them to new foods because the stress of them not eating or rejecting what I am offering influences how I cook. It offered a reminder to me to keep on introducing those new foods, those new vegetables, those delicious nutrients and stop worrying so much!

The next night when I served sugared snap peas instead of the edamame that I had planned for our dinner hour because of a mix-up in the supermarket freezer section, my son found a new favorite food. My daughter still happily pulled the peas out and didn’t eat the skins, but it was a new food that they were willing to try.

Now that you know that this dish was a hit with my kids, I hope you might give it a try at your house. It is a recipe adapted from The America’s Test Kitchen Cookbook and what drew me to the recipe was the fact that it was a skillet supper.

Skillet suppers rock and are one of my favorite weeknight meals because it is a one pot dish which cuts down on clean-up and leaves me more time to read or watch a little American Idol this winter. The Skillet Ziti with Chicken and Broccoli and Cheeseburger Pasta both make fun weeknight skillet dinners minus those packages of Hamburger Helper. Secretly though, I just love Hamburger Helper… I hope that I won’t be rejected completely from the foodie community with that admission, but I believe it must be said!

Tonight enjoy a night free from a sink full of dishes and be proud to introduce your kids to new fun foods that embrace just a hint of vegetable-packed deliciousness!

Easy Skillet Penne and Sausage Supper (adapted from The America’s Test Kitchen Cookbook)
Serves Six

1 tablespoon olive oil
3 cloves garlic minced (I do buy the bottled variety at Aldi)
1 pound Sweet Italian Turkey Sausage Links (remove from the casing)
1/2 cup sun-dried tomatoes, chopped fine (I buy the packaged variety over by the potatoes in the produce section of Walmart, next to the garlic)
1/2 pound penne pasta
2 cups chicken broth – low-sodium
1 cup milk
1/2 cups grated Parmesan cheese
6 ounces baby spinach

Heat the oil in 12-inch nonstick skillet over medium heat until shimmering. Stir in the garlic and sausage and cook, breaking up the meat with a wooden spoon, until no longer pink, about 4 minutes. Sprinkle the penne evenly over the sausage. Pour the broth and milk over the pasta. Bring to a simmer, then reduce the heat to medium-low and cover. Cook, stirring occasionally, until the pasta is tender, about 10 minutes (it took mine around 15 minutes). Stir in the spinach a handful at a time, and cook until wilted, about 2 minutes. Stir in the Parmesan and sun dried tomatoes. Season with salt and pepper to taste.

Note: Italian pork sausage can be used here, however, you may need to spoon off some of the fat before adding the pasta. When you are adding the spinach, it may seem like a lot at first, but it wilts down substantially. Be sure to at least have a 12-inch wide skillet here– this recipe fills it nearly to the rim.
