Great Reads for Moms: June ’10 Edition

Has your library bag been overflowing like mine? I have embarrassingly taken out far too many books than I could ever read, but love being able to have a tiny little library of my own at home. Summer reading is my favorite kind of reading and I have been enjoying lots of great books in the sunshine while the kids play.

As I have mentioned before, I read many more  books than are just featured here, but try to feature the ones that are my absolute best picks of the month here. There is nothing more motivating than seeing what other people are raving about and my to-be-read pile continues to grow with all of my new friends on there!

I hope you are continuing to enjoy these reviews as much as I have enjoyed putting them together. It is so fun to indulge in my bookworm ways and can’t wait to hear about your own summer reading.

The Thirteenth Tale by Diane Setterfield

All children mythologize their birth… Ask him to tell you about when he was born. What you get won’t be the truth; it will be a story. And nothing is more telling than a story.” So begins the beautiful debut novel of Diane Setterfield, a book that took me on an adventure that I did not want to end. It was a book that interweaves two stories together seamlessly with some of the most beautiful writing I have had the pleasure of reading.

Margaret Lea has led a quiet little life, working in her father’s bookshop, and being proud of a few small autobiography write ups that she has done. She has a difficult relationship with her own mother and harbors a secret of her birth that has caused her to not be able to be close to the people she loves and has always left her feeling incomplete in her life.

When a surprising letter comes from the world-famous and reclusive author, Vida Winter, she is shocked to discover that Vida has requested her presence at her home to write the untold story of her life. She is famed for the surprising volume of books she has written in her life and is well-known the world over for her beautiful prose. Her most famous includes the book of thirteen fairy tales, that only held twelve, a mystery that has never been solved.

Even more famous though is Vida’s gift for the storytelling she has weaved for other past reporters about her life story. She has never truly told the real story to anyone, but it is her dying wish to have Margaret write her life story for the first time. She promises to tell Margaret the real story, provided she allows her to tell it in her own way at her own pace. There will be no jumping ahead in this story, but it is a story that she promises will surprise Margaret and that she will tell as truthfully to her as possible.

The story is unlike anything ever told and Margaret becomes enchanted with the life of Vida and how, in many ways, it has reflected her own life story and who she is. The story is about her mother, a set of feral twins named Adeline & Emmeline, a beautiful topiary garden that holds deep secrets, and a tragic fire that changes her life forever.

To tell the story would take away the gift of reading it, but what I can tell you is that it is every bit of suspense with each shocking and creepy turn. It is written beautifully, has references to so much literature and loveliness, and is the perfect book for any true book lover. Enjoy this book with a big cup of tea on a rainy day and you will be transported on an incredible journey.

If I could have given this book ten stars, I would. Thank you all for recommending it for my reading list!

The Particular Sadness of Lemon Cake by Aimee Bender

The Particular Sadness of Lemon Cake is a book that will stick with you for a long time after you have closed the pages. To me, the book encompassed my favorite scene in the movie Ratatouille when the food critic takes a bite of food and it sends him spiraling back in time. He is a child and his mother made him the dish and remembering the feeling of being young and what that dish symbolized to him. This book is a moment like that, but deeper and more magical as Aimee Bender captures this instance and takes it further into a more magical place.

It begins with Rose’s ninth birthday. Her mother has decided to make her favorite lemon cake to celebrate the occasion and Rose is so excited to eat it. As Rose eagerly dives into the cake, hot from the oven, and takes a bite, this bite changes her life forever. For within that bite, she is able to feel an aching sadness and sorrow in her mother that she never knew her mom possessed. It makes the cake taste horrible to her and forces her to realize that her mother is very unhappy.

The gift is not much of a gift for her as she struggles to eat foods that she normally liked that are filled with emotions that a nine year-old child is unaware that people experience. Relying heavily on prepackaged foods and one sad woman at her school cafeteria whose foods don’t taste bad to her, Rose has been forced to rethink everything about everyone.

Rose isn’t the only one with a secret though and as you read the book, you discover that each member in her family is living with their own complex secrets. To say more than that, would give the surprising plot away, but know that the secrets add much beauty and depth to the story.

Not a single word is wasted in this book. The story is beautifully told, magical, and unlike anything I have ever read. I can’t wait to read more from this author. This was definitely one of the best books of 2010!

the one that i want by Allison Winn Scotch

I am a huge fan of Allison Winn Scotch and still count her, “Time of My Life,” as one of my favorite reads and a great book to recommend to just about anyone. Her books are filled with women who have come to a crossroads at their life and must make a decision on what path to choose.

The One That I Want explores another crossroad of a woman who seems to have it all. Tilly is living the life that she has always dreamed of. She loved where she grew up and has a career as a guidance counselor and is married to her high school sweetheart. They live in a tidy little home that was purchased for them with the help of her father and, in her eyes, she has everything that she could ever want.

At a local carnival she runs into an old high school friend who has now become a fortune teller. Her old friend, Susie, decides to give Tilly a gift that she think that Tilly has never had…the gift of clarity. With the gift, if Tilly sees any pictures of the people she loves, she immediately passes out and can see visions of the future and what is to come.

What Tilly sees shocks her and she soon realizes that the life of perfection she has always thought she lived might not have been perfect. Her father is heading down a road towards alcoholism again, her husband isn’t really happy anymore, and Tilly is forced to decide if this “perfect life” is what she really wanted.

You will find yourself rooting for Tilly as the character is learning to rediscover who she really is. Her exploration comes through the help of her friends and family as Tilly rediscovers what a perfect life really is.

I love Allison’s magical spin on stories and loved this book a lot. I related much more to the characters in, “Time of My Life,” but still felt this was a strong book from the author. I was, once again, immediately sucked in and now will be drumming my fingers on the table awaiting another fantastic read from her.

PS- Allison is also on Twitter and very engaging with her fans! I spoke to her a few times and she is just as lovely as can be. I wish her all the luck in the world with this fantastic new release from her! Congrats to Allison!

The Lies We Told by Diane Chamberlain

I have been a huge fan of Diane Chamberlain since reading, “The Secret Life of Cee Cee Wilkes.” I was contacted by her publicist to see if I would be interested in reading her latest book, “Lies We Told,” and sharing my thoughts on it with my readers.

This story is about two sisters who are both hardworking doctors, but that is where their similarities end. Maya & Rebecca are as different as night and day and both harboring secret about the murder of their parents that have shaped them as adults.

Maya is married to a wonderful husband, but suffers from infertility that has caused a strain in her relationship with her spouse. Rebecca, on the other hand, is a free spirited woman who works for a disaster aid program where her job changes from day to day. The sisters are close and Rebecca acts as Maya’s fill-in mother since their mother has passed away.

After two hurricanes hit the state of North Carolina, Maya and her husband, Adam, decide to join the relief effort and help the organization care for those who are sick and injured since the devastating hurricanes came through. When Maya is sent to care for a group of patients being airlifted to the hospital, her helicopter crashes and Maya is thought to not have survived the crash.

While Rebecca and Adam continue to work for the disaster aid organization, they are both left devastated without Maya. They turn to one another for comfort as they cling to the small piece of hope that Maya may have survived.

Maya, meanwhile, awakens to find she is being cared for on an isolated island by a very pregnant Tully and her husband. They work hard to nurse her back to health and care for her until she can be rescued, while her family never knows that she is still alive and is planning her memorial service.

I loved this book, but hated the improbable and tidy ending of the book. I wished that the author went a little further after all of the character development. The ending left me shaking my head and wishing that it hadn’t ended the way it did. If you can look past the ending, the book was a good summer read.

Fireworks Over Toccoa by Jeffrey Stepakoff

I took a gamble on reading this book because it is nothing like anything I would normally pick up. I am not a big fan of the romance genre though so my thoughts on this book come from that place.

This book was a cross between The Notebook and Bridges of Madison County… a beautiful story of unrequited love that will leave you a tad frustrated and rooting for true love in the end. I read about it in a magazine and considering the author’s credits (producing shows like The Wonder Years, Dawson’s Creek, & Sisters) thought it would be a great book to add to my beach bag.

The story takes place during WWII and Lily Davis is awaiting the return of her husband, Paul, from the war. The two married too soon and had only been together two weeks before Paul was shipped off to war. Lily is left for three years on her own waiting for the man she hardly knows to return so they can begin their life together. During that three years though, Lily has changed so much and her fiery, independent spirit has grown even more fiery and independent.

As the town prepares for the soldiers’ return, Italian firework expert, Jake Russo, is hired to put together a welcome home firework show for the town. A chance encounter, brings Lily and Jake together and Lily finds herself falling deeply in love with Jake…a love like she has never experienced before.

Within a few short days, Lily begins to question who she is and who she would be if she stayed with her husband Paul. She is left with the tough decision of honoring her soldier husband and family’s wishes or following her heart and leaving with Jake.

The author captures their love beautifully in this short book with a surprising twist at the end that will leave your heart aching for Lily and the decisions she had to make.

A quick read that is perfect for the romance-loving reader and Nicholas Sparks die-hards. This is definitely chick flick material!

Wafflepalooza: 6 Amazing Waffle Recipes & Tips to Get Your Waffle On

In this family, we are all about traditions… especially food traditions.  One tradition that we started a few years ago was a waffle or pancake tradition each and every Sunday for brunch. It has become such a normal part of our week that you would think that it would lose some of its shine over the years, but it honestly has not. Thanks to a wide variety of fun waffle recipes and our fun tradition of jazz music with the Sunday paper, it is truly what Sunday afternoons have become all about for me and my family. Honestly, who could refuse a little Harry Connick Jr. and a little homemade waffle magic for a Sunday tradition? Not me!

This tradition is the gift that keeps on giving because I always make a double batch of orange juice and a double batch of waffles that are frozen and are at the ready for a quick breakfast that costs a fraction of the price.  With my big breakfast eaters in the house, it has definitely helped save us a lot on the cereal budget.

Today I am throwing my own little wafflepalooza with all of the great waffle recipes that we have featured over the years a few fun ways to dress them up,  and a few quick tips for great waffle success.

This waffle is still our absolute favorite and it has been tweaked over the years and is now the most perfect and light wheat waffle that I have ever eaten. Give this one a try!

Whole Wheat Cinnamon Waffles

1 cup whole wheat flour
3/4 cup unbleached flour
ALTERNATE FLOUR IDEA: Use 1 3/4 cup whole wheat WHITE flour instead of the wheat & white flour as directed above. If you use this, there is no need to separate the egg yolks and whites. It will still yield a very light waffle without beating the egg whites separately!
1/4 cup toasted wheat germ (I substituted this with 1/4 cup rolled oats)
1/3 cup instant nonfat dry milk powder
1 tablespoon ground cinnamon
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs (separate the egg whites from the egg yolks)
3 tablespoons canola oil
2 teaspoons vanilla extract
2 cups buttermilk (I used regular milk and then added 2 tablespoons of vinegar & let it stand for five minutes)

In a large bowl, combine the whole-wheat flour, unbleached flour, dry milk, cinnamon, baking powder, baking soda, wheat germ, and salt; mix well. Separate the egg yolks from the egg whites. In a medium bowl, mix the yolks, oil, buttermilk, and vanilla. Pour over the dry ingredients. In a small bowl beat egg whites until stiff peaks form (tips stand straight up). Gently fold egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white, Do not overmix. Coat your waffle iron with vegetable cooking spray and preheat. Pour 1/2 cup of the batter into the center of the hot waffle iron and cook until the batter stops steaming, about 6 minutes. Cooking time varies according to the they type of waffle iron you have. Repeat with remainder of the dough, applying the cooking spray between waffles. Serve warm with your favorite syrup.

While this is definitely a waffle that might feel more appropriate in the fall season, if you have a can of pumpkin gathering dust in your pantry, I highly recommend freeing up your pantry space on this waffle recipe. These are my most requested waffles by my kids!

Deliciously Spiced Pumpkin Waffles

1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1 pinch salt
2 eggs
1/4 cup firmly packed brown sugar
1 cup canned pumpkin puree
1 2/3 cups milk
4 tablespoons butter, melted and cooled

Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl. In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well. Gently fold in the flour mixture. Spoon in about 3/4 cup of batter into the waffle iron. Cook each waffle for 4-5 minutes. This recipe makes approximately 5 waffles on my waffle iron.

Additional Notes- I double this recipe to make an extra batch to freeze or when entertaining. Make sure to spray your waffle iron well with nonstick spray or these will stick to the waffle iron and make a big mess. Also, be sure to leave these on at least four to five minutes. If you try to take them off sooner than that, they will not taste as good or set up as nicely.

Sometimes you just want a deliciously light waffle just like you would get at a great waffle house. This is my favorite waffle house type waffle and comes from the legendary Better Homes & Gardens cookbook. It is rave-worthy and perfect for your next Sunday brunch!

Best Waffles Ever (Courtesy of Better Homes & Gardens Cookbook)

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 egg yolks
1 3/4 cups milk
1/2 cup canola oil
2 egg whites

In a medium mixing bowl stir together flour, baking powder, and salt. Make a well in the center. In another bowl beat egg yolks slightly. Stir in milk and oil. Add egg yolk mixture all at once to the dry mixture. Stir just till moistened (should be lumpy). In a small bowl beat egg whites until stiff peaks form (tips stand straight up). Gently fold egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white, Do not overmix. Spoon waffle batter into your waffle iron, making sure not to overfill it.

Note- I doubled this recipe for my family of four and we had enough for three extra Belgian waffles.

One of my oldest and most favorite waffles are these Oatmeal Cookie Waffles. They are deeply satisfying and are created using one of my favorite budget-friendly pantry ingredients!  This produces a giant batch of deliciousness with stick-to-your-ribs tastiness.

Oatmeal Cookie Waffles

4 cups quick oats (grind the oats in your food processor or blender until it is a fine powder)
1 cup all-purpose flour
2 teaspoons salt
3 cups milk (you can use prepared powdered milk)
2 tablespoons baking powder
2 beaten eggs
2 tablespoons molasses
4 tablespoons canola oil
2 teaspoons vanilla
2 teaspoons cinnamon
1/4 cup sugar

Mix all ingredients together until there are no lumps. Pour batter into well-greased waffle iron and allow each waffle to cook four minutes. Serve immediately.

Note: If you make the batter ahead of time, be sure to add milk to thin it out. My batter became too thick to even put in my waffle iron so add a little milk until you reach the desired consistency.

Looking for a waffle recipe that you can create the night before and then just wake up and heat up that waffle maker? Well, look no further than this delicious waffle that requires some time in your fridge overnight to rise. This recipe was gifted to me after enjoying a girl’s weekend with one of my dearest friends, passed on to her by her own mom. It is definitely great for after church service entertaining!

Overnight Yeast Waffles

1/4 cup warm water
1 package yeast or 2.25 teaspoons of yeast if bought in bulk(dissolve the yeast in the ¼ cup of water)
½ cup oil
1 egg
1 tablespoon sugar
¾ teaspoon salt
3 cups flour
2 cups warm milk

Mix all ingredients together, cover, and refrigerate overnight. Warm waffle iron and spray with non-stick spray. If batter is too thick, use milk to thin down.

Note: Keep water warm- if  it is too hot it will kill the yeast.

These waffles are our special Christmas morning treat and reserved for our Christmas Eve gift opening. These are so special and my kids know that they can look forward to this yearly tradition, reserved for this season of giving once a year. Bookmark this recipe for the holiday season!

Gingerbread Waffles (courtesy of 30 Minute Meals)

3 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon freshly grated nutmeg, eyeball it
1/2 teaspoon salt
4 l
arge eggs
2/3 cup packed dark brown sugar
1 cup canned pumpkin puree
1 1/4 cups milk
1/2 cup molasses
1/2 cup (1 stick) melted butter, plus some to butter the iron
Syrup, whipped cream or fresh fruits for topping, to pass at table

Preheat waffles iron. In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.

After years of trial and error in waffle-making, these are my simple tips for waffle success:

Get a Great Waffle Iron– The first tip to great waffle success is to find a great waffle maker.  Remember that a great waffle maker is not necessarily a bulk waffle maker. I made the mistake of asking for this Cuisinart 6 slice waffle maker that I thought would save me from standing over the waffle maker and enjoy some time with my family. Instead, we found the waffles that it created were teeny-tiny waffles and six of these teeny-tiny waffles barely fed one mouth and got cold before the syrup hit them. I am still a fan of a simple and inexpensive Belgain waffle maker.

Freeze the Leftovers– I try to always make a double batch of batter to insure that we can enjoy waffles all week long. As I make the extra waffles, I fan them out on my cooling racks until they are completely cool. Once they are cool, I slide them into a freezer bag, stacked on top of one another. If they are completely cool before freezing, they will just pop apart without the need for any wax paper to go in between.


Cut Those Waffles in Record Time– If you have several mouths to feed, cutting the waffles can be tedious work. My favorite and most overworked gadget in my kitchen drawer is the pizza cutter. Cut the waffles into waffle strips for dunking in the syrup on the side or cut into bite-sized pieces in record time.

Make the Toppings Fun– Waffle toppings don’t have to be boring and I love to add variety to my toppings. Try this recipe below for blueberry syrup in the summer or this apple cider syrup in the fall to spice up the waffles. Forget the syrup and serve with a little nutella, peanut butter, or just a little fresh fruit on top.  Don’t forget you can also ditch your dependence on store-bought syrups and make your own homemade pancake syrup at home.

Fresh Blueberry Pancake Syrup

1 pint (or two cups) fresh blueberries
1 cup sugar
1 teaspoon vanilla
1/4 cup water

Place all ingredients in a saucepan. Cook over medium heat and stir to dissolve the sugar. Allow it to cook for 12-15 minutes and give the berries a little smash with your wooden spoon to break them up into the syrup. This syrup can be served warm over The Best Waffles Ever or you can serve the syrup cooled.

Homemade Pancake Syrup

2 cups warm tap water
4 cups sugar
2 tablespoons molasses
1-1/2 teaspoons maple flavoring
1/4 teaspoon butter flavoring (optional)

In a three-quart saucepan combine the water, sugar and molasses. Put the pan on the stove over medium heat. Stir every now and then until the syrup comes to a rolling boil. Watch the syrup carefully because it has a tendency to foam and will boil over if your pan is too small. If this starts to happen, remove the pan from the heat and turn the heat down. After the syrup boils, cover the pot and simmer it for ten minutes over a low flame. Do not stir it for this ten minutes. Remove the pan from the heat. Take off the lid and let it cool on the counter for about 15 minutes. Stir in the maple flavoring (and butter flavoring if you’re using it). Store the syrup in a clean quart canning jar.

A Week of Summer Fun On $20 or Less

I have to admit that our family doesn’t go on a lot of vacations, but we do love to make a wise investment into a great summer staycation each year that the kids will remember (hopefully) for years to come. A summer staycation does not have to cost a lot of money.  In fact, it is fun to see how far we can make our money stretch and still provide beautiful summer memories for our children.

Really, the possibilities for free and cheap summer fun are endless. There are free story hours at libraries and bookstores, crafts and activity days at local parks, church programs and sport camps, VBS, inexpensive movie programs at the theaters, reading programs, ice cream treats, and so much more. Each year it seems we are trying to top the summer bucket list from last year.

Today I wanted to showcase some of our favorite things to do and share with you ideas for making those summer memories fit snugly in your family budget.

Happy Hour Out (Cost $.50-$2 per child)– Our favorite thing to do this year has been taking advantage of those Happy Hour drink specials that so many restaurants are now offering. Sonic, for example, offers a Happy Hour between 2-5 PM where your family can enjoy half price drinks. Steak & Shake is another restaurant in our town that offers a deliciously cool and refreshing milkshake for half price between 2-4 PM.  Don’t be ashamed to inquire at your local restaurants if they offer any type of summer drink special that your family can take advantage of and allow your kids to enjoy a fun summer treat that your budget can live with. At Sonic, two small slushes for my children and one large Diet Cherry Limeade for me is a total mere cost of $2.18. Fabulous!

Happy Hour Time At Home (Cost $1  in supplies or less)- If you don’t feel like venturing out and want to enjoy a little slushie fun or milkshake fun at home, it is easy to do with your blender and a few items that might be lurking in your pantry already! My kids love to indulge in our homemade slushies and homemade frosty shakes that your whole family will flip for!  The cost for creating these is minimal, but make sure you make enough for everyone in the family. This is a happy hour that you definitely do not want to miss!

Have a Park Day (Cost- FREE) – Going to the local park to spend the afternoon is nothing new, but it could be something new if you decide to explore another local park. Pack a picnic lunch, snacks, drinks, and your sunblock and enjoy a day of completely free fun. Go on a park adventure and visit a park that you have never visited before or venture outside of your own town into a neighboring town to explore a new-to-you town treasure. We love to load up the scooters, a ball, and a Frisbee to create even more opportunities for fun in the sun. This year we have made it a family priority to explore new parks that we haven’t tried before.

Have a Roast-Your-Own Dinner Night (Cost $5-7 in Food Supplies)–  One thing that we look forward to all summer long is the opportunity to roast some foods on our little campfire. Stock up on hot dogs and supplies to make s’mores and you can have a fun little night together that doesn’t cost a lot. I also love to keep the fire going after the kids hit the sack and make it into a fun little date night for me and my hubby.

Visit a Museum (Cost- FREE)- Free days abound at the local museums although I will admit that you do sometimes have to brave those crowds to take advantage of them. We always try to check the websites for local museums and find out when their free days are offered. If free days are not offered, call your local library and see if they offer museum passes that you can check out. Many local libraries offer passes that can get you and your family in for free!  Make it a family trip and take vacation days on those days so you can take advantage of those free admissions. Don’t forget to pack a picnic lunch that you can enjoy on the museum grounds or in transit to your destination.

If there is a special museum you have always wanted to visit, but they do not offer a free day, be sure to take part in the National Free Museum Day sponsored by the Smithsonian. Tickets can be printed starting July 1st!  This just might be the perfect time to take a road trip to experience a free museum that will cost only the cost in gas.

Take a Visit to a Local Farm (Cost $0-$5 per child)- This year we got the opportunity to visit an alpaca farm that was just thirty minutes from our home. The kids had the best time learning about the animals and getting the opportunity to feed, touch, and even take a few of them for a walk. If you want to  find an alpaca farm near you, visit I Love Alpacas to find a new place to visit in your town!

For other farm animals, see if there are any local farms in your area that you could visit and give your children the chance to have an experience like this. It is one that will long remember and gives them an opportunity to learn about where their food comes from!

Go Berry Picking (Cost $5 or more, depending on amount purchased)- One of our favorite things to do in the summer is to go berry picking. We usually buy around $5 in berries and then come home and create something in our kitchen together. With a variety of fruits for picking, the possibilities are endless for places and things to pick during the summer. Visit Pick Your Own to find places to visit and to take advantage of the foods that are in season.

Last year we went blueberry picking and then came home and created new things in the kitchen that the kids had never tried before. We dined on homemade waffles with blueberry syrup and even created a fancy blueberry syrup for our iced tea for a fun summer drink. We paid $5 in berries and we were able to make a whole day and evening of fun from just that $5 spent.

Sprinkler Fun (Cost- FREE)- Running through the sprinklers is a fun and free relief from the brutal summer heat. A good old-fashioned sprinkler or inexpensive sprinkler toy can keep kids entertained for days on end. More recently we have discovered that our town offers a lot of fun at the parks with the addition of splash pads and fun new sprinkler parks. The cost to visit these is free and can be a great way to keep cool in the summer. If your backyard sprinkler is starting to lose its luster, Google your town and the keywords “splash pad” or “sprinkler park” to see if you can find a fun new place to keep cool!

Oatmeal Cookie Waffles

Life has been feeling a little crazy these days. Am I the only mom who is feeling like she is treading water this summer and not getting anything really completed?  I find myself in a state of collapse at the end of the day despite my best intentions to remain unscheduled and laid back this summer. It seems that I have blinked my eyes and we are somehow almost halfway through our beautiful summer together.

No matter how busy we get, waffles are still my favorite Sunday brunch food and I am always looking for new ways to spice up our favorite weekly treat. I love a waffle that sticks to your ribs and settles there. I also adore a waffle that doesn’t get soggy under the weight of great toppings and syrup. This waffle is just that. It is densely delicious and will keep your children satisfied for an entire day of activities.

I have tried this recipe two ways- grinding the oats in my food processor and then making the batter with the oat flour and using quick oats that have not been ground and just allowing them to soak for a few minutes in the milk. Of these two scenarios, I greatly preferred the oats ground and mixed into the batter instead of the soaked oats. Soaking the oats seemed to add a gummy texture and a little too much chewiness for my taste. This is just my own preference though, feel free to experiment with this recipe yourself!

With the addition of molasses, cinnamon, and vanilla you might just close your eyes and think you are enjoying a delicious oatmeal cookie instead of a breakfast treat.

Nothing takes away that hectic, crazy, overbooked summer feeling like a little time out with a yummy treat. Wishing you each those few moments of peace over a batch of these waffles.

Oatmeal Cookie Waffles

4 cups quick oats (grind the oats in your food processor or blender until it is a fine powder)
1 cup all-purpose flour
2 teaspoons salt
3 cups milk (you can use prepared powdered milk)
2 tablespoons baking powder
2 beaten eggs
2 tablespoons molasses
4 tablespoons canola oil
2 teaspoons vanilla
2 teaspoons cinnamon
1/4 cup sugar

Mix all ingredients together until there are no lumps. Pour batter into well-greased waffle iron and allow each waffle to cook four minutes. Serve immediately.

Note: If you make the batter ahead of time, be sure to add milk to thin it out. My batter became too thick to even put in my waffle iron so add a little milk until you reach the desired consistency.
