Delicious Make-Ahead Dishes To Add to Your Thanksgiving Feast

It is that time of year again where we are all dusting off our favorite dishes to grace the Thanksgiving table. I get to help host Thanksgiving dinner every other year and this year we will have both sides of our family joining us at our table. With seventeen people coming for dinner, I decided this year that I could concentrate on the turkey, mashed potatoes, & beverages and give everyone a dish idea for something that they could bring to the feast. With everyone contributing, this year should be fun & relatively easy… at least that is always the game plan!

I wanted to round-up a few great recipe ideas that I have used in years past  for Thanksgiving.  Most of these recipes can be made ahead for the big day so that you can actually relax and enjoy being together as a family!

Just as in years past, these make-ahead mashed potatoes are going to be created this week for the big day. This is perhaps my most impressive make-ahead dish because it is always a dilemma on how to get those mashed potatoes on the table, keep them hot, and not make a complete disaster in the kitchen while your guests are arriving.

These mashed potatoes not only freeze beautifully, but they also can be reheated on low in the slow cooker. Both of these qualities make them a winner because I can keep the oven freed up for the other dishes and I can make them early.

Here is my recipe, adapted to our personal taste, perfect for any holiday get together! These are creamy and have a hint of tang to them from the sour cream. Sprinkle with a little paprika, if you so desire, and enjoy the convenience of pulling these out of your freezer for this holiday season.

Make-Ahead Mashed Potatoes
Serves 15

5 pounds of potatoes
1 block (8 oz) of low-fat cream cheese, softened
3/4 cup low fat sour cream
4 tablespoons butter
3/4 cup milk (or more if desired)
1 1/2 teaspoons salt

Peel potatoes and cut into small cubes. Throw the potatoes in a large pot filled with cold water. Cook for 25 minutes or until fork-tender. Drain the potatoes and put them back into the hot pot. Add cream cheese, butter, milk, and salt. Mash with a potato masher or use a hand mixer to whip the potatoes. Spoon mixture into a freezer-safe container and label.

Thanksgiving Day: Put potatoes in the fridge 1-2 days before to allow them to completely thaw. Spray slow cooker with cooking spray and put potatoes in the slow cooker. Brush the top of the potatoes with a tablespoon of butter and sprinkle with paprika. Cook on low for two to four hours.

If you would rather bake these, bake the potatoes at 350 degrees for thirty to forty minutes or until completely hot.

I know green bean casserole is a family tradition, but if you are opting for a healthier tradition, I have the perfect green bean dish! While these can’t be made ahead, necessarily, they are quick cooking and could be thrown in the oven while you are carving the turkey. Within just a short time, you have an elegant side dish that will be elegantly plated with your turkey and mashed potatoes this year.

The original recipe did call for fresh green beans, but I use the fancy frozen ones and they are a little cheaper than the fresh variety. I added an extra ten-fifteen minutes cooking time for these and they were perfect for our taste. You can roast them longer, if you like, but this amount of time seemed to fit well for me.

Roasted Green Beans

2 pounds fresh green beans (or a bag of frozen fancy green beans)
1-2 tablespoons olive oil
2 tablespoons minced garlic (I use the bottled garlic to save a little time)
Salt & Pepper
Zest from one or two lemons (save the juice for later)

Thanksgiving Day: Preheat your oven to 400 degrees. Grab a jelly roll pan and dump green beans on the pan. Sprinkle seasonings, lemon zest, and garlic over the green beans. Drizzle the olive oil over the green beans and then toss with your hands until they are all coated with the seasonings and zest. Spread out in a single layer and slide your cookie sheet into the oven. Roast fresh green beans for 20-25 minutes and roast frozen green beans for an additional 10-minutes. When they are done, pull from the oven and put them on a serving platter. Squeeze the lemon juice over the top (from the lemon you zested) and serve.

If you are looking for an easy and fool-proof homemade roll recipe, then I highly recommend this one. These can be made the night before and waiting in the fridge for you for the big Thanksgiving Day feast. These are the most delicious rolls and the only thing that make them even more glamorous is serving these with a little homemade pumpkin butter.

Buttery Bread Machine Rolls Recipe

1 cup warm milk (70 to 80 degrees F.)
1/2 cup butter or margarine, softened
1/4 cup sugar
2 eggs
1 1/2 teaspoons salt
4 cups bread flour
2 1/4 teaspoons active dry yeast

In bread machine pan, put all ingredients in order suggested by manufacturer. Select dough setting. When cycle is completed, turn dough onto a lightly floured surface. 4. Divide dough into 24 portions. Shape dough into balls. Place in a greased 13 inch by 9 inch baking pan. Cover and let rise in a warm place for 15 minutes. Tuck into your fridge for Thanksgiving Day.

Thanksgiving Day: Pull the rolls from the fridge and allow them a half hour to an hour to rise on your counter. Bake at 350 degrees for 13-16 minutes or until golden brown.

When my kids grow up and leave the house, I hope that it is mom’s pumpkin cornbread muffins that they talk about and how much they loved me for them. Everyone should have at least one dish that is their “famous dish” and these cornbread muffins are my claim to fame at my table.

To have fresh baked cornbread muffins at your table, make this batter the night before and tuck it in your fridge in a covered bowl. In the morning, you can bake these and have them in a basket, ready for your dinner guests. These are best served at room temperature so it makes them the perfect bread accompaniment to make ahead!

Pumpkin Cornbread Muffins

1 1/4 cups flour
3/4 cup cornmeal
2/3 cup light brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup canned pumpkin puree
3/4 cup buttermilk (I substituted with regular milk and a teaspoon of vinegar to sour)
1/4 cup butter, melted
2 eggs, room
2 tablespoons honey
Sugar for sprinkling (I used the raw sugar)

Preheat oven to 350 degrees. Line a muffin tin with muffin liners. In a bowl, toss together flour, cornmeal, sugar, baking powder, salt, nutmeg and cinnamon. In another mixing bowl, mix with a wooden spoon, the pumpkin puree, sour cream or buttermilk , butter, eggs and honey, until well combined. Add the pumpkin mixture to the flour mixture just until combined. Store batter in a covered bowl in the fridge.

Thanksgiving Day: Transfer to the prepared muffin tin. Sprinkle with a little sugar (I used raw sugar) on top. Bake for about 20-25 minutes, or until edges just begin to color (Note: If you pull the batter right from the fridge that it may require an extra five minutes, but keep one eye on it!) . Cool to room temperature. Makes approximately 12-13 muffins.

No get together in our family is complete without a big punch bowl that is overflowing. This punch is always a hit and it can be ready when everyone arrives. It is loved by kids and adults alike. The night before you can prepare an easy ice ring to keep it cold so you can eliminate the need for a bucket of ice and keep it nice & cold for your guests.

Thanksgiving Day Party Punch

2 liter bottle strawberry-flavored soda (I found this at Walmart)
2 liter (half a bottle) Cherry 7-Up
1 (12 ounce) can frozen pink lemonade concentrate
1 can pineapple juice

Mix all the ingredients together for the punch. This will fill one large punch bowl or two smaller ones.

Ice Ring
Orange slices
Lemon slices
Lime slices
Maraschino cherries
Cherry juice or red food coloring
Water
Metal ring mold (I use my bundt pan for this one)

Create your ice ring by throwing in the citrus fruit slices and then pouring in the jar of cherries (juice and all) Top the bundt pan off with water and then freeze overnight. To serve, unmold ice ring into punch bowl and then add your party punch ingredients.

Cinnamon Bun Pancakes

I decided to surprise our family with a little unexpected treat and whip up a batch of these Cinnamon Bun Pancakes from How Does She? that we featured in our weekly notebook. Not known to be much of  a pancake flipper, I wowed the family with this special surprise and even had pancakes that were intact this time!  Another unexpected treat was the cinnamon maple frosting drizzle in lieu of the traditional syrup I usually serve.

Only quiet smacks and a few “ohhh’s” and “ahhh’s” were heard at my kitchen table. Swift and sticky hugs were given to me and proclamations of my awesomeness may have been made by my children.

Belly clutching and groaning may have concluded the dinner for the adults, but they were satisfying groans and an evening spent of television watching. There may have possibly been more proclamations of awesomeness as we made vows to hit the gym and treadmill the next day.

Great Reads for Moms: November ’10 Edition

I hope you are still enjoying our round-up of great reads each week.  I am still happily plugging away at my to-be-read pile, and just love sharing ideas for great books to read with our readers. This month’s reading includes both a couple of more serious reads, while still offering a couple of fun chick-lit books that would be great to tackle.  I don’t know about you, but as holiday preparations are underway, I find myself longing for a little escape through fun literature that can take my mind off of my endless to-do list. I hope that my suggestions will offer just that for you!

So far it is a huge success and I have gotten a few new ideas for my own stack!

Room by Emma Donoghue

“Room,” is a stunning book written by Emma Donoghue that will stick with readers long after they have read the final pages. Told through the eyes of a five-year-old little boy named Jack, Room & his Ma the only things he has ever known because he has been held, and was even born in Room, his entire existence. His only glimpses of the outside world are through a skylight above their room and the limited amount of television he has watched through his time there. Of course, he doesn’t believe that anything in the television is real because he has never had the chance to experience what lies outside of the room.

His Ma was kidnapped and held hostage for seven years. She was just a child herself when she was taken and she has done everything she can to make Jack’s life just as rich as can be without being able to leave Room. In fact, she put me to shame as a mother reading all that she was doing with her child. Ma has thought of everything from celebrating Jack on his birthdays, to art time, to gym time…she manages to make it work in this tiny room.

The book is written in the language of a child which I thought would be very annoying, but quickly found it to be both endearing and poignant. I am sure it was a true challenge as an author to write in this style and to not make it unbearable to read. Emma Donoghue captures the voice and innocence of Jack perfectly in this stunning book.

While I wish I could say more about the book, it would definitely take away from the plot and the beauty of enjoying this one through fresh eyes. As a reader though, know that your heart will ache and root triumphantly for this mother & child to see the outside world!

Last Night at Chateau Marmont by Lauren Weisberger

From the author of, “The Devil Wears Prada,” is a great new read following a normal everyday couple and what happens when fame comes knocking.

Julian & Brooke live a relatively idyllic life as both have focus on their careers. Julian works a day job, but has high hopes of one day becoming a famous musician. Brooke, his wife, is his number one fan who works two jobs to help support her husband’s struggling career as he tries to break into the record industry. They both hope that he will one day become famous and do what he loves so much. Of course, the old adage, “Be careful what you wish for,” really rings true when Julian finally becomes the rock star he has always wanted.

While Julian is whisked off and surrounded by a PR team and record executives looking to boost his image and get him mentioned in tabloids, Brooke is left wondering what this will all mean for her and their marriage. When a scandalous picture is taken of her husband with another woman at Chateau Marmont, Brooke must decide if she can truly believe Julian or if the pressure from fans and the people he surrounds himself with have become too much.

As she struggles to continue doing her job while still supporting Julian and being there for all of the events that are happening in his career, Brooke now finds herself, at times, lonely and practically single. With every obstacle placed in front of their marriage, the reader is left wondering if any marriage could survive the fame and scrutiny of the public.

A heartbreaking and real look at fame and how it could alter a relationship, this is a little more than your typical chick-lit! Lauren Weisberger delivers another great new read filled with pop culture references and many cameos from some of your favorite celebrities!

Ape House by Sara Gruen

Isabel is an ape researcher who has devoted her life to working with the bonobo apes. The apes are like family to her and they use sign language and a linguistics chart to communicate what it is they need. Isabel & the staff accommodate to what the apes need from getting them lattes to filming their excursions for the apes to watch later. All that they do is meant to study & research the apes while keeping them in a safe environment, and learn about how they communicate with one another.

John Thigpen is a journalist who has been assigned the story of the bonobo apes and comes to document what the research lab is doing with them. He finds he is immediately drawn to Isabel and the apes and is excited to write a piece about them.

Shortly after his visit though, the ape lab is bombed and Isabel is injured and hospitalized after the bombing. She is in pain, but concerned more for the apes and their well-being. When news footage shows the apes hanging in the trees because they are so frightened, Isabel becomes increasingly agitated about where they will end up. Where they end up though, no one could have guessed.

After the apes are captured, they are thrown into a reality series home called, “Ape House” and documented twenty-four hours a day on television that can be viewed for the price of a membership. A seedy former pornographer producer has decided to exploit the apes as they subject them to ridiculous situations in order to make money off of them. Particular concentration seems to be on making the apes act or do things in sexual ways, in hopes to boost the ratings.

When John begins working as a reporter for a tabloid paper, after being let go from his last job, he is assigned coverage of the Ape House series. He is once again trying to find out information about Isabel and what happened at the lab that would have caused the explosion. He ultimately is faced with blowing the cover off of the whole situation and uses his investigative reflexes to find out who would have bombed the lab and how the apes came into the hands of this producer.

I was so excited to dive into, “Ape House,” and couldn’t wait to see what Sara Gruen came up with next. Although she spent years researching and spending a great deal of time with the bonobo apes, which was evident throughout the storyline of the bonobos, the story just wasn’t as solid or the characters as endearing as I had hoped. I was hoping for more from this book and there were too many characters and side stories that took away from the research and beauty of the story of the apes. I still breezed through the book and found it to be a quick read, but wished that the storyline didn’t have so many loose ends and unnecessary characters, focusing more on the storyline of the apes themselves.

Mini Shopaholic by Sophie Kinsella

Over the years, I have enjoyed reading Becky’s shenanigans and expenditures in the Shopaholic series more than I can say and the new Mini Shopaholic is just as enjoyable and endearing as Sophie Kinsella’s earlier books in the series.

Becky is now happily married to Luke Brandon, the love of her life, and they have a two-year-old little girl who is Becky’s biggest challenge yet. Minnie is a strong-willed child who has a love and fascination for shopping just like her mother. As she is banned from stores for her bad behavior and tantrums uncontrollably when things don’t go her way, you wonder how Becky will be able to manage their child.

As Luke is wrapped up with work and the difficulties of managing his business & they struggle with their badly behaved Minnie, Becky decides to take it upon herself to throw a surprise birthday party for Luke that will include all of his friends and colleagues. The catch is that a financial crisis in London has forced everyone to be on a budget, and this will include Becky and the party of the year that Becky is hoping to throw. Since Becky has rarely had to do anything on a budget before, hilarity ensues as Becky tries to pull off a budget-friendly party and not have Luke catch on to her plan.

Readers will be entertained as Becky tries to find jugglers and fire-eaters by bartering through Craigslist with her high fashion wardrobe pieces and as she crafts homemade pom poms for the party décor. As a YouTube, “Happy Birthday to Luke” campaign is underway and newspapers are blasting about the party of the year, you will be giggling to the last page at what lengths Becky will go to as she tries to celebrate Luke’s birthday and extinguish the fires as the word begins to spread about the party.

I really enjoyed this quick read although the last two chapters really made the whole book for me. It is the glimpses of the realness of Becky and her everyday struggles with a strong-willed child that made this a great read for moms and her shopaholic ways that add that little bit of escape to every day life.

Weeknight Chicken Noodle Soup

There are few things that I love more than a comforting bowl of soup on a cold day, but there are few things I love to do than stand hours over the stove preparing that delicious soup. Homemade chicken noodle soup is a delicious thing, but not on a typical weeknight for me with homework and evening activities going on.

If you are looking for a soup with that tastes deliciously homemade, but can be prepared in about 30 minutes and happily feed your family for a week, then this is the soup for you. The trick with this soup is starting with a good well-seasoned base and then working from there with quicker cooking techniques and ingredients.

Of course, after I showcased the Presto Pesto Pasta Con Pollo as an easy weeknight meal that was prepared with a rotisserie chicken, I began to think about some other scenarios where that chicken would work for a busy weeknight dinner. I settled on this quick version of Chicken Noodle Soup that, dare I say it, rivals any homemade version I have tasted and could satisfy my Panera Bread soup cravings easily.

Begin by chopping your ingredients in uniform size pieces. I chopped up three carrots and two stalks of celery for this one.

In a large pot, get two tablespoons of olive oil heated up and then add your vegetables to the oil. Give them a gentle toss to get them all coated and then season with your salt and pepper. I like to get these sweating for about five minutes to get the vegetables going and start with a good base flavor. If you like a crunchier texture in your soup, you can skip this step.

Once they are good and sweating, add three boxes (or approximately 12 cups) of of low-sodium chicken broth to the pot and  get this liquid simmering. From here on out, you need to go very easy with the salt because the final stage, we are adding cornstarch to thicken it and we don’t want it to be too salty.

Now it is time to add your secret weapon to your soup.  I found this rotisserie chicken at our local Walmart for $4.98, or approximately the same cost as the whole fryer chickens that I would have to prepare myself.  They offered a few different varieties, but I thought this Lemon Pepper one would offer an interesting flavor to the soup. Don’t be afraid to experiment a little bit, or just go with the traditional variety, if that is all you can find.

Very carefully slide your rotisserie chicken into the simmering broth and put a lid on  your pot. Let this simmer for about fifteen minutes.  Then very carefully pull the chicken out and dice for your soup. Mix together a bit of cornstarch and water to make a thickener, if you like a thick broth and add it gently while whisking frantically into your broth.

Once that is done, you can add in two to three cups of noodles. You can have these cooking in a separate pot and then add them in, so they don’t absorb all of the soup liquid, or you can add them right into your bubbling broth and make it a thicker soup.   To  add to the homemade taste, I used the bagged egg noodles in the frozen section of the store, but you can use any variety that you like.

After the noodles have cooked, add your chicken back in and a handful of fresh parsley. Give it a stir and ladle into your bowls for a quick weeknight dinner. A side of my Portuguese White Bread, Pumpkin Cornbread Muffins, an Artisan Loaf, or my Homemade Whole Wheat Bread all would make a delicious accompaniment.

What does the soup taste like? Soulful, satisfying, rich, delicious, comforting, and restaurant-worthy! This is definitely a lot cheaper than going out for soup and you can enjoy these leftovers all week long! Loved by all in our family, it is a recipe that I will be repeating again and again!

With the Thanksgiving holiday quickly approaching, remember that this soup can easily be adapted with your yummy leftover turkey for another great way to use up those leftovers!

Quick Weeknight Chicken Noodle Soup

2-3 cups egg noodles (I like the Ream’s brand in the frozen foods section)
2 tablespoons of olive oil
12 cups low-sodium chicken broth
salt & pepper to taste
2 stalks chopped celery
3 chopped carrots
1/3 cup cornstarch
1/4 cup water
1 rotisserie chicken
Bring a large pot of lightly salted water to a boil. Add egg noodles and cook until tender. Drain, and rinse under cool running water. Meanwhile, in  a large saucepan or Dutch oven, saute the carrots and celery in two tablespoons of olive oil for five minutes to start your soup base or you can skip this step and proceed as directed, if you desire a crunchier vegetable.  Heat up broth and bring it to a simmer. Stir in celery and carrot. Gently add your rotisserie chicken and all of the drippings from the pan and put a lid on your pot.  Reduce heat, cover, and simmer 15 minutes. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Pull out your chicken and set aside to dice.  Gradually add the cornstarch to soup, stirring constantly. Stir in noodles and diced rotisserie  chicken, and heat through. Toss in a handful of fresh chopped parsley and ladle into bowls.
