4 Fun New Ways to Cook Rice

I absolutely love rice, but never had a really appreciation for the diversity of this dish until I really started experimenting with it. Much like pasta, it can be made into many different dishes for even the pickiest of palates. Rice can be made into a perfect accompaniment to fish, you can add an Italian or Asian flare to it depending on your main course, and it can even be made into a tasty pudding. The possibilities with this side are endless!

The best part about rice though is that it is so darn inexpensive, making it the perfect dish for the frugal cook. I try to keep a variety of rices on hand and have experimented with different grains and textures from the traditional long grain white rice to a deliciously nutty brown. Even the more exotic rices like aborio or jasmine rice still are inexpensive and can add a different dimension to your meals depending on your main course of the night.

I wanted to showcase today four different ways that you can prepare this dish to add a little bit of fun to your typical side dish fare. These four recipes have stood the test of time in our house and are four of my favorite ways to make rice

When I ran across a recipe in one of my cookbooks for rice with pesto, I knew this would make a lovely side with our herb baked tilapia. I honestly wasn’t sure if the kids would eat it though since it did have a light green color to it. They ended up gobbling it up just like those rice mixes in a box and the pesto added delicious flavor as a side to fish. It felt a little more grown-up than the Rice-A-Roni and we all enjoyed this very much.

Rice With Pesto or Herb Oil (from “How To Cook Everything“)
Serves Four

1 tablespoon canola or other neutral oil
1 1/2 cups basmati or other long-grain rice (I used white long grain rice for this)
2 1/4 cups water
Salt & freshly ground pepper to taste
1/2 cup pesto or 1 cup fresh herb of your choice: chives, parsley, chervil, or cilantro, 1/4 cup canola or other neutral oil, & 1-2 tablespoons water if needed.

Heat the tablespoon of oil in a medium saucepan over medium heat. Add the rice and cook, stirring, until the rice is coated with oil. Add the water and season with salt and pepper. Turn the heat up a bit and bring the mixture to a boil. Cover and turn the heat to medium-low.

After 15 minutes, turn off the heat under the rice, but leave the cover on. Wait 10 minutes, then stir in the pesto or herb oil. Check the seasoning and serve immediately.

If you do not have pesto: While the rice is cooking, rinse the herb and place it in the container of a blender or small food processor. Turn the machine on and gradually add teh 1/4 cup oil. Blend or process until smooth, stopping the machine now and then to stir down the mixture. If necessary, add a tablespoon or two of water to the mixture; it should be the texture of heavy cream.

I use white rice for this one, but I may need to try this dish with brown rice sometime instead. This is a fun and inexpensive side dish and even our rice-haters ate with great enthusiasm. Serve this with a big platter of chicken enchiladas and don’t forget the homemade enchilada sauce to keep your evening perfectly frugal!

I think this will be a repeat performer in our house!

Mexican Rice

1 cup uncooked rice (not instant rice)
2 tablespoons oil
2 garlic cloves, minced
1 medium white onion, chopped (omitted because of personal taste)
2 ripe plum tomatoes, seeded and chopped (I omitted this ingredient because I didn’t have any tomatoes)
1 (8 ounce) can tomato sauce
1 cup chicken broth or beef broth (we chose chicken broth)
1 tablespoon chili powder (you can reduce this- I added 1 teaspoon)
3/4 teaspoon salt

Heat the oil in a heavy skillet. Add the rice and stir over medium-high heat until rice is golden brown. Add the garlic and chopped onion, and sauté until the onion just begins to brown. Add the tomatoes, tomato sauce, chicken broth, chili powder and salt, lower heat and cover. Simmer for 20 to 25 minutes until all liquid is absorbed. Remove from heat and allow to sit, covered, for 5 minutes. Fluff with a fork and serve.

I can admit that in the past I was not a big fan of brown rice. I have tried other cooking methods, but this baked brown rice is my favorite by far. We eat this at least twice a week and my children absolutely love it. I usually throw this brown rice in with some Caesar or Ranch Pork Chops & a tray of lemony green beans since they all cook at exactly the same degree. It is the perfect side to any weeknight meal! If you hate brown rice, you must try it this way!

Alton Brown’s Baked Brown Rice

1 1/2 cups brown rice, medium or short grain
2 1/2 cups water (we substituted this with chicken broth instead)
1 tablespoon unsalted butter
1 teaspoon kosher salt

Preheat the oven to 375 degrees F. Place the rice into an 8-inch square glass baking dish. Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour. After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

Amy’s Notes- When I package this up for leftovers, I add a tablespoon or two of water or chicken broth to the rice before storing it for later. This seems to help keep the rice more moist and helps it hold it’s texture a little better.

If you are looking for a great side dish with your fish, then look no further than this fantastic Lemony Rice Pilaf. This rice is sticky and flavorful with a burst of freshness from the lemon, parsley, and garlic. I love to serve this rice alongside baked salmon or as an accompaniment to my herb baked tilapia. It is a recipe that is in constant rotation and tastes like something you would eat at a fancy seafood place. Lucky for you, it costs practically nothing to make!

Lemony Rice Pilaf (Courtesy of Recipezaar)

1 teaspoon vegetable oil, preferably canola oil
1 cup finely chopped onion
1 1/2 cups long grain white rice
3 cups chicken stock (vegetable stock makes this vegetarian/vegan)
1 grated lemon, rind of
1 tablespoon freshly squeezed lemon juice
1/2 cup coarsely chopped flat-leaf Italian parsley
fresh ground pepper

In a heavy saucepan, heat oil over medium heat and cook onion for 5 minutes, or until softened. Stir in rice, then stock, and bring to a boil. Reduce heat and cover; let simmer for 20 minutes, or until rice is tender. Stir in lemon zest, lemon juice, and parsley; taste and add pepper if you wish. Note: This reheats very well so you can make a double batch for another night, if you like!

Life… Under Construction

Renovations are going on and my life is resembling nothing of itself since this started. I have never been more out of schedule with exercise, reading, eating, living, wanting to be alone more, or further off budget with our eating plans.

Everything is covered in a film of drywall and I have been writing SOS messages in the dust on my furniture.

I am told that this will be almost all done  on Friday. Minor things will need to be done the week following, but we will have a few little things happening this week… like… floors.

I am so thankful the crew is running on time and under our budget. My continuous rants about not having a single dollar extra to pay them must have worked.

I am grateful to friends who let us crash their houses all day and all evening, family who helped us survive the weekends by letting us stay there, and my husband who must be questioning my sanity every day when he comes home to me this last week.

I don’t know how people survive this longer than two weeks. Despite my posts planned on, “how to survive a renovation,” the only advice I can offer is, “Expect the unexpected and go with the flow.”

I am officially the crazy lady in her pajamas drinking dusty coffee and talking about how  tight money is all of the time.

At least I wear my pajamas with chic boots to avoid touching the plywood flooring.

We welcome our old life back soon!

All Knitted Up: Knitted Gifts With a Purpose

My knitting needles have been clicking at high speed these days with knitted gifts that needed to be turned around quickly. That being said, there is nothing more meaningful to me than knitting with a purpose. I love to have an intention that gives me the opportunity to focus on someone really important and make a gift to show them what they mean to me.

My girlfriend, Kathy Friend, has been such a gift to me.  She is the first person I call when I need help with a big event in my life. She has helped me find clothes that fit, she helps me feel more confident by guiding on me on good style choices, and she is my sounding board on the difficulties of working from home. She is my friend through and through. It is rare that you find someone that genuine in your life and I am so thankful for her friendship.

For over six years, Kathy and her husband have been trying to adopt a little girl named Anya from Russia. There has been much paperwork, many hurdles, and so many life lessons that they have garnered from this experience. After waiting this long, they are in Russia now to get their little girl. My heart skips a beat when I think about it.

I wanted to create a gift for Anya that would be meaningful and hopefully remind her of coming home.  I made another Bon Bon Baby Blanket but larger, that could be her travel blanket as they make the flight from Russia to America. It was done in all of the colors of the US flag as she comes to America, to live with her family that love her more than life itself.

Please keep the Friend family on your prayer list as they finish the final details of bringing Anya home. It is such a big moment of transition for all of them and I am so full of hope for this little family!

Welcome to America Travel Blanket

Pattern: Sweet Bon Bon Blanket by Suzanne Middlebrooks (available as a free download for Ravelry members)

Needle Size: US 9 Needles

Yarn: Lion Brand Homespun Candy Cane Red, Lion Brand Homespun Hepplewhite (used as the garter stitch section throughout the entire blanket), and Lion Brand Homespun Blue Sky Montana

Notes: Homespun yarn is definitely not my first choice when it comes to a baby blanket. For a travel blanket though, this yarn worked really well and created a beautiful design throughout the pattern with the mix of colors. If you were creating a baby blanket though, cotton yarn would definitely be my first choice!

This pattern is a great one for a beginning knitter and the only stitch you need to know is  the kfbf combination, which I found how to do on You Tube. Because of the width of this blanket (a cast on of only 96 stitches) it comes together very quickly and it makes a beautiful chevron pattern with a garter edge.

I stuck to the 96 stitch cast on and just made the blanket longer so it could be draped over her legs. My little Emily was a great helper and held my yarn for me as well as letting me use her as a model for travel blanket sizing.

I could not be more proud with how this turned out. It did take a lot longer to make then I had thought (four weeks almost), but I am so proud of the results!

I hope it will be something special for her and something that she will be able to snuggle up with for a long time. Welcome to America, Anya! We can’t wait to meet you!

When my I spoke to one of my girlfriends and found out that her mom was ill, I wanted to do something…  anything to help her.  For me, learning to knit was as much a gift to myself as it is a gift to others. I asked what color was her mother’s favorite and she shared with me that her mom really loved pink. I put my needles on a speed of eleven, and worked on this shawl for hours at a time until it was done. I wanted it to be there when she needed it most.

I wanted this prayer shawl to offer warmth and comfort while still being fashionable and something that I myself would wear. I went back to my favorite shawl pattern, “Alice’s Lace Shawl” by Alice Beck in the The Prayer Shawl Companion book.

For me, half of the beauty of a prayer shawl is in the details. It isn’t just the knitting that makes it beautiful, it is the personalization that is created for that special person. I found the beautiful cross charm at Michael’s in the jewelry section. It was $7.99, but I used my 40% off coupon. The yarn was marked down to $2.99 a ball and it took two balls to create.

I used ribbon from my ribbon stash to pull it together and printed a prayer out for her that came from the book that is highlighted above. It was printed on pink polka dotted paper that I already had in my craft supplies. Tucked in tissue, it was shipped Priority and sent to the sweet recipient to let her know she is being prayed for by someone who has yet to even meet her.

Pretty In Pink Lace Shawl

Pattern: Alice’s Lace Shawl by Alice Beck (from The Prayer Shawl Companion Book)

Needle Size: US 13 Needles

Yarn: Bernat Softee Chunky Solid in Antique Rose (2 Skeins)

Notes: Prayer shawls can be simple or complicated, but the idea behind them is that they are woven together with yarn and with prayer. As you create them, you pray for the person and ask God that the shawl can offer them comfort through difficult times.

I found a fantastic book on prayer shawls called The Prayer Shawl Companion by Janet Bristow & Victoria A. Cole-Galo. The book offered thirty-eight different patterns that could be used to create a unique prayer shawl for someone in need. In the pattern book, I chose, “Alice’s Lace Shawl,” because the pattern had only one row of pattern and then a row of purling and a row of knitting. It was simple enough that I could concentrate on prayer and complex enough that it created a scalloped edge with just enough lace, while still being warm.

This project took me six days of straight knitting every single moment that I had. The lace shawls that I created with Homespun Yarn knitted up much, much faster than this one, but they didn’t have any pink Homespun at Michael’s so I had to go with a less bulky yarn.

Comfort Food: Italian Meatloaf With Smashed Red Potatoes

The weather has been so cold and the snow has been never ending. I won’t complain too loudly though because compared to my friends on the East Coast, I might as well be living in Hawaii.

On cold days like this, there is nothing like a little comfort food to warm your belly.  My go-to comfort food has always been meatloaf, mashed potatoes, and a little cornbread. Even as a little girl, it was my top request for my birthday meal every year. There is just something about those flavors that makes me happy.

Over the years my recipe for meatloaf varies depending on what is on sale and what flavor combination sounds good at the time.  This time I had red potatoes leftover from buying a big bag of them for our fancy steak dinner with rosemary potatoes, and I wanted to incorporate the potatoes in another recipe.  The Italian turkey sausage was on sale and I mixed that in with the ground beef (that was not on sale) to create this delicious combination.

Touching meat seriously grosses me out. I have a gag reflex watching people putting their hands in the bowls to mix ingredients when I watch Food Network. I find my pastry cutter to be a useful tool when mixing meat. This one from Pampered Chef has an extra long  handle and it works beautifully to mix things quickly. I guess I will never be a Food Network star because of this, but I am okay with it!

I hate to keep bringing up a recipe, but there is just no better accompaniment to a meatloaf dinner than a big batch of pumpkin cornbread muffins! If I make a batch of these, I can get my family to eat just about anything because they are so distracted by the bread.  This pretty picture also cancels out that icky picture of meat. I am so sorry about that!

Enjoy a little comfort food tonight and kick your feet up one evening by using your extra meatloaf from the freezer! Give yourself a night off and revel in the deliciousness of great comfort food and all that is warm!

Italian Turkey Meatloaf (This will yield two meatloaves- one to eat, one to freeze)

2 pounds ground beef
2 pounds Italian turkey sausage, removed from the casings
1 cup seasoned bread crumbs
1 cup Parmesan cheese, grated
3- 8 oz can tomato sauce
2 eggs

In a large mixing bowl, lightly mix turkey, bread crumbs, cheese, 1 can of tomato sauce, and egg. Shape into two loaves in shallow baking dishes. Pour a can of tomato sauce over each of the meatloaves. Sprinkle top with garlic salt.  Bake one loaf uncovered at 350 for 1 1/4 hours. Baste several times while cooking. Freeze the other loaf (uncooked) for another meal later this month.

Side Note: I do not have a big problem with grease with the ground turkey, but grease can be a problem if you buy higher fat content ground beef.  If you are trying to cut back on the fat there is a very easy way to do it. Before patting the meatloaf into the pan, lay down two pieces of bread to soak up the drippings. Pat the ground turkey mixture in, over the bread, and the bread will catch the fat at the bottom. It will also help to keep the shape of the loaf.

Smashed Red Potatoes (Courtesy of Allrecipes Dinner Tonight Cookbook)

2 pounds small red potatoes, scrubbed and quartered
1/2 cup butter
1/2 cup milk
1/4 cup sour cream
Salt and ground black pepper to taste

Bring a large pot of lightly salted water to a boil. Add potatoes, cook until tender but still firm, about ten minutes. Drain and set aside. Add butter, milk, sour cream, and alt and pepper to taste to potatoes. Mash together until smooth.

Just in time for planning your romantic Valentine’s Day night is a list of 9 simple and frugal ideas for creating a wonderful night with your spouse. If my recipes for a fantastic steakhouse dinner don’t win your husband over, maybe one of these inexpensive ideas will!

I don’t know about you, but I never knew how creative I would have to be in order to squeeze in a little alone time with my spouse.

We don’t get to escape as often as I would like and it is hard to find people you really love and trust enough to watch those that are most precious to you.

Not only that, but teenagers sure seem to be a lot busier than they used to be!

I am so thankful for the grandparents who offer to take our kiddos time and time again so we can get that time away.

With that in mind, I wanted to share with you some creative ideas for dating that will cost you little/no money and won’t even require paying a babysitter.

These are the ideas that have worked for us through these years and I hope you can share some ways that you have found to creatively date your spouse when you are low on cash and sitters.

Book Club Night – My husband and I have started, what I jokingly refer to as, our “magical book club” together.

I have been dying for him to read the Twilight series and he has been dying for me to read the Harry Potter series.

We made a deal to exchange books and talk about them each night.

Obviously, this is not intellectual material we are talking about, but I have to say that I am so enjoying every moment of this exchange.

You could also read the same series together or tackle a literary classic together.

Better yet, reread those amazing books from your childhood. Have a book club night together instead of a night parked in front of the television.

Once we have finished the books though, we plan to have a screening night of the movies together too.

I am wondering if I am pushing the envelope too much if I make my Edward cupcakes?

 

Engage in Conversation Starters – I think I know just about everything there is to know about my husband, especially since we have been together since we were teenagers.

Conversation starter questions though can sometimes lead to some beautiful surprises of happy memories that we had never heard before.

Anything that gets you talking together is a great investment of your time!

Late Night Dinners – When our kids were really little, our time alone really felt few and far between.

We would sometimes shift our dinner hour until after the kids went to bed to enjoy a romantic and quiet dinner together.

I would put table linens on the table, break out the beautiful dishes and stemware, and make a fancy dinner that the grocery budget would not be able to normally accommodate.

After all, you are still staying in so there is still a great savings in that!

Don’t be afraid to move your dinner somewhere else in the house.

Sometimes I would set up a folding table and chairs and dress it up in a different area of the home or put a fancy spread out on the coffee table with a fun movie.

In those long days of newborn feedings and diaper changes, this little change in location was really something to look forward to.

Game Time – My husband & I are both very competitive so we love to play games together after the kids head to bed.

For outdoor games, we love a good badminton match and for indoor games we love a good board game challenge or a fun game of Wii bowling.

Challenge each other to a match and feel free to indulge in childish behavior to escape the reality of adulthood.

 

Dollar Store Extravaganza – This is something that I have planned for the two of us as a fun date night idea.

Just make a small budget of $10 or less and challenge each other to a contest to see who you can come up with the most creative gift from the dollar store for each other.

You can really put a lot of creativity into this and it will be a fun exchange to do after the kids go to bed.

See if your husband really knows what your favorite candy in the world is and he can see if you know how to pick a great book for him or what type of puzzle book would be a fun one.

Enjoy Some Time By the Fire – After the kids go to bed, we love to start a little fire in our fire pit and sit by it together.

Plan an Anniversary Getaway – I decided awhile ago to begin putting money into a separate savings account for our ten year anniversary.

At the time, we were really penny-pinching, but $25 a month didn’t seem like a ton of money so it has been automatically transferred every month for our anniversary getaway.

I swear that we talk about this (at least) once a month.

Even though there is just $1,000 saved, we have come up with a zillion places we could go to and have been number-crunching to see how much we will have from making this tiny investment each month.

Sitting around and just planning a vacation can be so much fun together.

It is such a fun way to spend your time, imagining the places you will go and talking about how quickly we are approaching our big anniversary.

Make it more fun by challenging each other to plan the best anniversary getaway package.

You could each research and put together your own vacations and then sit down together and see who came up with the best ideas for the least amount of money.

File it away for future reference when you actually do to get to go on that getaway.

 

Exchange Babysitting With a Friend – I am really lucky because if I really want to go out with my spouse, I can call up my sister and ask if we can do a babysitting exchange.

If you have a good friend that you can exchange babysitting with and trade nights out, then you get great care for your kids without having to shell out any money.

While you are enjoying some time alone, you can still enjoy the frugal things in life.

Some of my favorite date nights are hitting a movie at the second-run theater, packing up a picnic dinner and taking it somewhere with a view, lounging around Barnes & Noble looking for home improvement inspiration, or even enjoying an evening at home without the kids.

If your spouse can take off work, use a vacation day and try and plan your date during the day.

You can take advantage of cheaper matinee rates and even affordable meals out at restaurants because of the earlier hour.

 

Start a New TV Series – Now that I have given you lots of ideas that don’t involve the television, I think I can bring up an idea that does.

I love to pick up a new television series together, particularly in the summer months when nothing good is really on television.

You can rent these using a movie membership or check on Hulu or the network websites to watch a series.

Try looking for an older series that you have never seen before and watching it for the first time.

On our list of never seen television- Lost, 24, and House.

We also love to watch rerun sitcoms and relive all those funny moments all over again and watch Friends, Everybody Loves Raymond, & That 70’s Show just for laughs.

I don’t mean to brag, but this man of mine is awesome! He works a full-time job AND manages to run all of the programming on this website too.

I am willing to set aside as many fun & free nights as I can to hang out with him.

Even when times were very lean, we have found creative ways to spend time together. I know we both benefit from it and so do our children!
