I am so excited to introduce you to my friend, Todd Greer. Todd is a ferocious reader and an incredibly gifted entrepreneur.  I recently reached out to see if he could share some of his favorite books with us and he graciously offered to share his perspective on some of the best reads this year. How lucky are we? I will go ahead and let Todd share with you today about his background and why reading is so important to him.

So, let me get this out there. Reading is my alcohol. It’s my partying. It’s my binge watching. It’s the addiction that I live with daily. I sneak books. I hide my book purchases. I subscribe to multiple book services.

It’s Brokeback Mountain, “I can’t quit you” serious. That is how I feel about books.

So since I have let you in on my little secret now we can chat. I am an entrepreneur. I started a business in Mobile, AL called The Exchange. We are a coworking company, helping our community to “reimagine work.” Before that I was a Non Profit Executive, a Minister, a Team Building Facilitator, a Volleyball Coach, a College Recruiter, a Political Operative, a Communications and Events staffer, a Hardware Store clerk, and a Paperboy.

Yep.

I have done a lot of stuff.

Oh, and I have a PhD.

I like to do stuff, and collect knowledge, and connect people. That’s what I do.

So, when it comes to books, I am the guy that is simultaneously reading four books. No. Not an exaggeration. And I have a pile of other books that I am regularly pining over just waiting to be able to taste and enjoy.

Essentialism by Greg McKeown

*Right now I am reading Essentialism by Greg McKeown (seriously, this is one of those open your eyes reads about how easy it is to hold on to crap you don’t need and say yes to things you really don’t want to do),

The Aviators by Winston Groom

The Aviators” by Winston Groom (Not sure that there is enough here to hold me. We are jumping around a little too much between the different pilots and the storytelling just isn’t drawing me deeper),

The Pale Horseman by Bernard Cornwell

The Pale Horseman” by Bernard Cornwell (ok, if you have watched the series on Netflix you know just how much of a BAD@$$ Uhtred is! This series has me hooked – if you don’t know Bernard Cornwell and you like the Game of Thrones, you need to read his work),

Accused by Lisa Scottoline

and “Accused” by Lisa Scottoline (I want to like it, but this first book in the series has some seriously played out stereotypes as it is working to develop the characters. Frankly, it’s still a wait and see).

Well, more accurately, I listen to a lot of books (and read a few). Last year, I read 78 books. This year, I already have 50 down.

Seriously, very few people I know read at the rate that I do. Well, except our dear friend at MomAdvice.com (she is only two ahead of me and I think I can catch her. Oh yea, and last year I beat her by ten books – so take that, Amy). 

Editor’s Note: Please note that I consider these words to be fightin’ words. I will be regaining top position this year.

Each of us reads (or doesn’t read) for a variety of reasons. Here are mine: to fall asleep, for a short drive (audio), for a long ride (audio or reading), to prep for a presentation, to be current in research or current affairs, to do yardwork, to de-stress, to learn, to get lost.

Much like my music taste, I have an eclectic palette with books. I read mystery, autobiographies, history, historical fiction, religion, social science, business, and fiction. If you can engage me, inform me, amuse me – I will read your work!

In the days and weeks to come, I will actually talk a little more about the actual books. Till then, my bookshelf is calling me!

My reading time was limited this month with the whole getting everyone back to school, buying all the things, filling out all the things, driving to all the things. I am finding that audiobooks are my jam again as I run my kids back and forth to activities and school. If I have to be driving, it is so nice to take advantage of those pockets of time in the car!  I have so many must-read picks for you for August and am already working on my next stack for reviewing.

There are lots of projects going on over here (I can’t wait to show you)  and my cheap bluetooth headphones are the next best thing to sliced bread.

Sorta Awesome Show

I also had the opportunity to join the Sorta Awesome Show and share the best (and worst) in my summer reading. When I tallied up how much I read this summer it totaled 28 (!!!) books. Laura, also known as the Hollywood Housewife, is one of my own go-to resources for books so I couldn’t wait to hear what she had been reading. As soon as we got done, I put everything she mentioned on hold. She’s that good!

One thing we talked about was how the heck do I read so much. This post might be a good one to read if you want to consume more books this year!

If you want to geek out over books too, you won’t want to miss this episode! I’ll be excited to hear if you agree and disagree with our opinions.

The Longest Night by Andria Williams

The Longest Night by Andria Williams

I love historical fiction, especially when that historical fiction involves a story that I had never been aware of. Williams shares the true story of the SN-L Nuclear Reactor and the only fatal nuclear attack to occur in America in her beautiful novel, The Longest Night.

When Nat & Paul Collier move to the town, Paul is not only frustrated with his immoral boss, but he has a growing concern with the safety at the plant. When an altercation sends Paul away, Nat becomes friends with a man in town and lines between friendship and attraction for one another becomes blurred.

Set in Iowa in 1959, Williams builds a beautiful tension between her characters. It reminded me a lot of Mad Men and Masters of Sex. Once you finish the book, you will be running to look up the facts of this little known tragedy to learn more.

All is Not Forgotten by Wendy Walker

All Is Not Forgotten by Wendy Walker

Fans of Defending Jacob will appreciate Walker’s novel,  All Is Not Forgottenas it focuses on what parents will do to keep their children safe.

The book opens with a teenage girl, named Jenny Kramer, who attends a party and is brutally raped. The graphic and shocking nature of the rape is laid out in detail in this story so highly sensitive readers may need to steer clear.

After the rape, Jenny is given a drug that suppresses the memory of this horrific event, in hopes that Jenny can move forward in life. Unfortunately, Jenny just can’t move forward because she has to know what happened to her.  There is one problem through.  What if the person that is supposed to be guiding her to the answers has his own ulterior motive?

It has been a long time since I have read a book told in first person minor and Walker chooses to narrate her story through the psychologist’s eyes. Unfortunately, for lack of better words, this guy is an absolute douchebag. This can be a turn off and, at times, distracts the reader from the plot. The book held my interest, but I was hoping to know more from Jenny’s perspective.

Can you believe MomAdvice called someone a douchebag on here?

Oh, you bet I did!

That said, I always love to read the books before the movies and this one will be hitting the big screen.  I will be curious what Jessica Knoll and Reese Witherspoon’s production team come up with when writing and producing this one for film.

The Assistants by Camille Perri

The Assistants by Camille Perri

I used this month’s Scribd audio credit on The Assistants, and I am SO glad I did. This book was such a treat from start to finish and a really enjoyable listen, should you be sitting on a little credit too.

Tina Fontana works for the head honcho at her company who is swimming in money. When a technical error occurs with an expense report, Tina uses it to her advantage to pay off her student loan debt…to the tune of $20K.

Only one problem though… other people in the office have been noticing and want their loans paid off too.  More people become involved, more money is funneled, more loans paid, and more stress that Tina will get busted.

Imagine a Robin Hood story, but with a modern twist. This book is just the medicine for anyone who has struggled with student loan debt (raises hand high!). I love this book so much and found the ending to be pure perfection. It certainly was the sweetest literary escape this month for me!

You'll Grow Out of It by Jessi Klein

You’ll Grow Out of It by Jessi Klein

Few books have brought me to tears of laughter the way that Tina Fey’s, Bossypants, book did. Lucky for me, You’ll Grow Out of It just so happens to be the kind of book that makes your sides hurt with laughter and has some of that Fey magic that I have been missing in my life.

Klein is a tomboy through and through so her book focuses a lot on the silliness of expectations on women, the unbelievable things we must do to maintain our good looks, the ridiculousness of wedding dress shopping, and even the expectations we feel deciding how we give birth to our children. From her rants about barre classes to the rudeness of being called ma’am, it made me laugh SO MUCH. There are a couple of raunchy chapters I could have done without, but the majority of the book was just incredibly honest and hilarious. I’m so glad I read this one!

The Couple Next Door by Shari Lapena

The Couple Next Door by Shari Lapeña

I am a sucker for a good thriller and The Couple Next Door was a really incredible keep-you-up-past-your-bedtime read. The story revolves around parents that are invited to a birthday celebration party with requests that children not attend. When their babysitter cancels, they decide to still attend the party at the neighboring brownstone, leave the baby sleeping in the crib, with an agreement to take turns checking on the baby every half hour. When they check in, later in the evening though, they find the crib empty and the baby is nowhere to be found. The reader is taken on twist after twist as the couple tries to find their baby and the motive behind it.

I was surprised the book opens right away with the baby going missing and wondered how the story would ever build out from there when such a big part of the plot happens in the opening chapter. The author crafts plausible (and not so plausible) twists though that takes you on a wild rollercoaster ride with these parents. Just the discussion alone of whether or not the couple should have left their baby would make a great one for book club discussions.

This one brings all the twists and builds great tension. This one is worthy of a reading binge-and I consumed it in a mere 24 hours!  I just loved it!

Before the Fall by Noah Hawley

Before the Fall by Noah Hawley

Before the Fall has been on my summer reading bucket list so I was excited to finally make time to dive into this one. The story revolves around a plane crash and the aftermath that happens following the accident.

Many chapters are like individual short stories, sharing the real story of these eleven passengers. The main story though is focused on a down-on-his-luck painter who becomes a hero when he brings one of the plane’s smallest passengers to safety.

In many ways, these stories reminded me of Did You Ever Have a Family, with all of the individual story threads being woven together. There were many moments in the book that I enjoyed and some that dragged a bit for me. The ending, for me, was abrupt and a little disappointing.

I’m glad I read this one, but it read like a slow read for me.

If you are looking for an alternative to your little black dress, I found this gray heathered wrap dress (did you see she named it after me- awww!!)  in an a-line cut that makes a great substitute. Wrap dresses, as long as I have been around, never go out of style and are a fun piece to accessorize with. The material is very soft and feels like a nightgown. I am wearing a Small and I find this to just fit. I would size up one in this one!

Ali advised wearing this with a bralette. You know that I have preached and preached that Coobi bras are the next best thing to sliced bread, but I did hear from you that some of you can’t pull it off without support (LUCKY DUCKS!). Her shop offers bralettes that are not padded and can be worn with your regular bra, offering the support you need, without the bulk, seam, or annoying roll-up of a cami.

Cami rolls are the worst.

This first look is a great look for a nice dinner out or for church!

Here is the same dress, but now I am wearing it like a skirt, a trick anyone with a capsule wardrobe is doing on repeat in their wardrobe! I tucked the tie inside the shirt and tied the hem of my flannel shirt. I am wearing a J. Crew factory flannel in an XS and I can’t rave enough on how well this washes and the fit on this shirt. You will get lots of wear out of that piece too!  This didn’t need a lot of accessorizing so I went with a small zodiac necklace from the shop. You can see a close-up on my IG feed.

Dresses can still look cozy especially when paired with a longer cardigan, boots, and tights. I tied the tie towards the back so you wouldn’t have it hanging out in the front. This is a great look to look dressier, but still super comfy for your day. If you haven’t discovered fleece tights, get some for winter. You can find them even at Walmart now!

Ponchos and capes are so fun, but can be a PAIN to stay on and the fabric can be a lot to maneuver on a petite frame. I find the ones without arm holes to be distracting and the ones with arm holes to limit my range of motion. I also hate doing chores around the house with a lot of fabric on me. I am PARTICULAR.  This sweater has the shape of a cape, but is a sweater with sleeves. Ali has these in a few color options for you. I am wearing the Rust colored one and a size Small. This fits true to size!

In this styling I am pairing these very simply with a basic black pant, leopard slip-ons, and a long & short simple necklace.

You know when you see pictures of women wearing capes and gazing at their cell phones while holding tiny dogs in their purses? I feel like this is tiny dog in a purse style and I don’t even like dogs. #teamcats!! You can pick a statement necklace in any color and make this look a little different. The best part is how comfy this is while still looking polished.

Plain tees can get a little boring so I was excited to find this t-shirt because the cut is really flattering (and comes in a curvy size too for my curvier friends-holla!). This is a great mom uniform- a cute t-shirt, black jeans, and suede moccasins. I am still madly in love with my chevron necklace and this looks great with this shirt. This is a great outfit for running my kids back and forth to activities.

Tees don’t always feel like great going out choices, but I have found with the right accessories, they can feel quite dressy. This bib necklace made of fringe was a $4 find from Walmart that I still love. Paired with black pants, booties, and a bright clutch, this would make the perfect sushi date outfit with my hubby!

I feel like I could style this shirt and pants the very next day and no one would even know this was the same shirt and pants! Layering a neutral cardigan over it and cinching the tee waist with a skinny belt adds a totally different look. It hides the pattern, making this feel like a different piece.

You may not have noticed that these pants are on repeat too. Did you catch that? If you are looking for something that fits like a legging, but offers support and doesn’t pill, these are an EXCELLENT option.  On me, they sit above the belly button and are full length. For taller girls, this might have a cropped affect (LUCKY LADIES!!).  The shot all the way to the right is how I folded them inside themselves so they would look more cropped.

These fit true to size and have faux pockets on the back that make them look like a pant (without the bulk of a pocket), but offer an elastic waistband. I know I will be wearing these all the time and I am told that they wash like a dream. I still would wear something with full butt coverage over them, personally (elderly hipster!), but I like that they look like a structured traditional pant instead of tights.

Street Sneaks for $26!!

You might be surprised to know that I wear my sneakers A LOT. These pants pair perfectly with sneakers. My favorite classic New Balance  sneakers are always in rotation, but I know those can be a little pricey. Ali actually sells these adorable sneakers for $26 (!!!), that look so stylish and are surprisingly comfortable. I have a wide foot and this is wide enough for my block feet. These only come in whole sizes. I teeter between a 7 and a 7.5, but the 7’s still had plenty of toe room for me! There was no need to break these in- I never had a blister. You can’t beat that price for an attractive street sneaker.

Fashion Capsule Shopping On a Budget (See My Haul)

I promised to take you on the journey from start to finish on planning a capsule wardrobe. I shared my possible contenders (that link is where you can read more about what a capsule wardrobe is!) and I wanted to share with you the fit on these items as well as my thoughts on some other pieces that I picked up. Since this is my first time doing this, I would SO appreciate your feedback if this helps you with your own wardrobe planning.

A Little About Me

Before I begin I want to let you know that I am merely remarking on quality and best buys for your buck and not what you should or shouldn’t wear.  If you need help picking out clothes for YOU please take this course. It is an amazing class and will help you pick the right fit and look for your own body type.

If I were forced to classify my own style it would be Elderly Hipster with a lean towards classic lines.

Oh, you haven’t heard of Elderly Hipster?

It means I might lean in a bit to boho or retro, but you won’t catch me back in overalls. It means I lean towards classics with clean lines so I find things like distressed jeans to be distressing and patterned leggings to be pajamas. I also feel weird about the exposed shoulder trend especially the weird cut-out shoulders. I can’t do it.

I like them for you, but not for me. 

I normally don’t purchase as much, but I got pretty sick this year and my clothes are not fitting right anymore. I haven’t really felt like myself and have been lacking a bit of confidence because, to me, I look worn down and sick. It sucks. Instead of trying to tie up skirts and pants and knotting/belting/zip tying all the things to make them have shape around me, I bought some things and am putting clothes away until I look like my old self again.

I used you as an excuse to shop though so I hope that’s okay.

A Little About You

Since many of the items have an affiliate link (something I try to always disclose), I am able to get a good snapshot of what you guys like. What I can see from these reports is that you love a good deal from familiar stores like Old Navy and LOFT. I can also see that you are willing to invest in quality staples to round out your purchases like a good pair of jeans. One of the top things you are buying are these ballet flats, for example, which tells me you value quality and comfort like I do.

Boutique is also okay, but it must be classic, made well, and affordable. I partnered up with Ali On The Boulevard and we worked together to come up with affordable capsule options that have longevity from her store. I wanted to work locally so I could actually feel and see the items for you, not just act like I knew if it was good or not. I even stood there while she called every supplier too to make sure you guys could purchase any of the pieces and everything that is featured you will be able to order. The highest price item is $38 and most sit in the $25-33 range. I hope this will add to your enjoyment of capsule shopping. I will be sharing these items with you next week (along with HOPEFULLY some of the items that have not arrived yet)  and the accessories/shoes that I found to compliment them.

I had also made a commitment to embrace secondhand, but the feedback I got from you is that, while this was certainly inspiring, it made it hard to replicate. Not everyone desires the thrill of the hunt like I do. Many of you signed up with thredUP, but maybe got lost or overwhelmed along the way.  This time I wanted to show you smart purchases, but I also spent some time looking at your purchase history to make sure it fell in line with what you buy.

You guys had mixed feelings about Stitch Fix and I did too. I had some credit sitting in my account so I thought I would give it a spin again and this time I actually kept three items (first time ever!). I had no idea they started carrying shoes and they picked out some trendy comfortable shoes for me which made the delivery worth it. This time it worked out, but it took them three tries to finally nail it.

So that’s the scoop on you and me. I am ready to show you what I got. I also have a new appreciation for fashion bloggers. I don’t want to do this again for a long time!!

Every year I get asked about mustard cardigans and, you guys, THIS IS THE ONE!! It is soft, the length is perfection, the sleeves have a dolman sleeve quality to the cut, and this baby is only $12.99- BOOM! I took a risk and got three of these in a variety of colors. This fits true to size (I am wearing the XS) and the length fits like this on someone who is a towering 5’1″ (jealous?) I still can’t believe this find this year and I hope you can snag one in the whole rainbow too!

Also this necklace is beautiful and just the chevron detail I had been looking for. It’s two toned and the piece is heavy with a sturdy necklace to hold the chevron. I highly recommend for a knockoff Madewell look!

I am going to say they look like something that rhymes with LEIKS and far more affordable. Oh, and JUST as comfy, I guarantee it.  This floral print shirt is amazing and has the mustard and blush color blended right in it. It runs small, I think, so I would size up one on this one.

This dress has a lot of fabric to it and I was worried it would overwhelm my petite frame. This dress runs big so size down one. I am wearing the Petite XS and you can see the length on me is perfect. I will stick to wearing a belt with this one because I’m not paying for alterations until I am for sure planning to wear it for many a season. That said, when I eat my giant dinners, I shall let the belt fly and not worry about my belly hanging out.

If you carry weight around your middle, this is a great way to camouflage it.  Just skip the belt and distract the eye with a fun necklace or scarf.

You guys! This is me being edgy. Remember, elderly hipster! I got this dress on impulse after that first one fit so good and I LOVE THIS DRESS. I do need to iron it (I’m exhausted- the kids, the running, the meals, the neverending story of my life), but the thing that I really love about this is that it is fully lined. I like it not belted, but my husband says it looks like a nightgown. I think we both need to warm up to the boho look because I adore this dress. It can also be paired with that mustard cardigan, but I didn’t want that in every picture because I do have a few other looks.

This one fits true to size, perhaps, a tiny bit baggy if you are on the fence of two sizes. Isn’t it just the cutest? I’m happy I went with that impulse. Combined with their every single day is a sale day coupon code and you can get this one in the $20 range!

I got two of these pintucked blouses for dressing up and for layering. I REALLY love these because they have a lot of movement and an adorable tie in the back without that open racy look (elderly hipster).  I am wearing an XXS in this one- sizing probably fits pretty true to size, I just have trouble with my smaller frame.

Stitch Fix sent the Just Black jeans and I fell in love. They are buttery and soft, but not linty and trapping cat hair as my other pairs. They sent me ankle-length and they were nearly perfect in length for me. I have been wearing these nonstop since I got them.

I don’t often think of pink as a neutral, but this soft pink delivers in so many color schemes that it is a new neutral for me. I think this is one of my wisest wardrobe investment pieces just for the variation it brings with color.

That neckline is hella fun too for a million colors and necklaces. This also has the tie back feature without the raciness (get off my lawn, whippersnappers!).

I just love everything about this. The top can be dressed up or dressed down and the neckline on this makes it perfect for pretty much everything. The pocket sits higher so it’s not right on the boob. Not that I have those. But for all of you SPECIAL ladies. This was made by an in-house brand for Stitch Fix, but I snagged it on consignment. Such a steal! This is my first jean vest ever and another SUPER edgy piece to my wardrobe.

How cute are these items? I had my doubts, but they finally pulled through. I made sure to request SMART basics for a capsule wardrobe. The top wasn’t my favorite until I put it on and realized how lovely it is. It’s almost a light sweater material and it drapes beautifully. These black jeans are my new favorite jeans and the slip on shoes complete my busy mom lifestyle. REALLY happy this time and plan to try again with the next capsule.

This is one of the weirdest things in my capsule, but I fell in love with it. This is a maternity dress. No, I am not making an announcement. Putting Me Together said this is the ultimate striped dress so I went with it. On a taller person, this will be right at knee length or higher (look at her- legs for days!). On me, it is a comfortable midi length. I absolutely love it and it feels like…you guessed it…pajamas. She says this one doesn’t pill after being washed- woohoo!

When the receipt breezed through, I had to text my husband and remind him that if I was pregnant, I was birthing the next Savior. We double locked it. LOL! Only fur babies moving forward!

The only miss was just because I am so petite. This cardigan was going to be everything. As you can see, I have PLENTY of cardigans and no need for this piece. It’s being returned. This would be adorable on someone of taller stature though!  I just couldn’t carry the volume or length very well.

I am so excited to share with you these DIY No-Sew Reversible Chair Cushions I made today for our kitchen. While we have loved the aesthetics of our metal chairs in our kitchen, some of the bony bottoms in this house haven’t wanted to spend too much time in them. Lest you feel lead astray, it is not my rear that is struggling, thanks to a healthy dose of Sir Mix-A-Lot genes. I just get to hear from other people in my house about their discomforts.

Since I don’t sew pillows (and struggle with exactness and measuring of materials) I wanted to create these DIY chair cushions to comfy up your metal chairs AND I wanted that seat cushion to be able to have two prints so we could switch them around. This great idea is so easy to execute and no sewing machine is even required. Not only does this give you two choices, but if you get tired of the print, you can reuse your cushion materials inside and recover them again with a fresh print.

I don’t want to brag, but I also think these are SUPER cute too!

Don’t think of these as just an accessory for metal dining chairs though. I have found that these seat cushions can also double as bench cushions for our outdoor picnic table benches too.  

Want a longer cushion? Use this tutorial to make gorgeous bench seat cushions that span the width of your benches. Thanks to their lightweight materials and how thin they are, these are also great to transport to any picnic gathering…somewhere else or even in your own backyard. With coordinating throw pillows, you have everything you need to make seating in your home feel beautifully cohesive.

Supplies Needed (everything including these gorgeous fabrics are found at Walmart!!)

Your choice of matching Waverly Inspirations Fabric (measure the dimensions of your chairs to figure out your yardage)

Trim (I purchased two yards for each chair, but this will also depend on your own chair size!)

Directions for No-Sew Chair Cushions

1. Begin by placing a large piece of parchment over your chair seat to create a template of the sizing of the seat of your chair. Mine had a lip that outlined around it that I followed for tracing. Cut this out and use this as your guide for cutting your foam. Using scissors, cut to the size of your template (Note- if you are worried about your template holding up, you can trace it on heavier paper and then use that as your guide).

2. Grab one of your fabrics and place the foam cushion on top. Cut (with your rotary cutter and on your mat) around the cushion, giving yourself 2″ of wiggle room around the cushioning. Repeat this same step with your second piece of fabric.

3.  Now it is time to glue your pieces. You want one fabric with the print out and one fabric on top with the print in. We will be turning these inside out once they are dry so you want to be sure your fabric is facing the correct direction. Also be mindful what direction your print is going so you can repeat that on each cushion.

4. Using your fabric glue, glue around the entire square, leaving an opening to slide in your cushion on one side. Repeat this on all of your cushions. Set the cushions aside and let them dry for 24 hours.

5. The next day, carefully open up and turn the cushion covers to the right side. Slide your foam cushion in and then either sew the opening with a needle and thread or (this is my lazy girl way!) line up the fabrics folding it in to match and hot glue that seam shut.

6. Grab your trim and carefully apply your hot glue and then secure your trim. Do this all the way around your cushion. If you have any excess, line the cushion up and figure out where to secure a tie (or two!) for it. You can either secure this to the cushion with a bit of hot glue or you can grab a heavy thread and needle and stitch it to the back.

Pressure Cooker Korean Street Tacos

I have heard the praises sung from so many about their Instant Pots that I finally decided to take the plunge and get one for our family. We have had the best time cranking out meals, breakfasts, and snacks with it and I am so excited to share those recipes with you on the site. The first recipe we made were Korean Tacos for a fun Friday night feast together. The best part is that this meat is fall apart tender in 45 minutes and so easy to shred, it is just a matter of pulling it apart a bit with two forks.

Instant Pot

If you haven’t joined the cult of Instant Pot,  I would like to share why the church of the Instant Pot is the best. In this one gadget you are able to saute your dishes, slow cook your dishes, pressure cook your dishes, and even use it as a rice cooker. It has, basically, eliminated the need for multiple kitchen gadgets in my house. I bought the 6-quart that is minus the yogurt making setting and I am really happy with it. You can certainly splurge a little more for all the bells and whistles and tell me all about it!

Instant Pot

Pressure cooking the first time was SCARY! I read my booklet three times and about lost my crap when I had to release the steam out of the top of the venting thingamabob. When I say I lost my crap, I basically started screaming and ran in the other corner of the kitchen.

Then I realized that this really was not a big deal.

It’s steam.

I will not die from it.

right?? right??

There is a learning curve with this one. One day I was venting it when it was supposed to be shut, another day I had it closed when it should be venting, and the biggest issue I have had is figuring out timing.

If a dish says it is ready in JUST seven minutes, please know that they are not counting the preheating time which can be agonizingly long when you wait until the last minute for that “JUST seven minute” meal.

Several nights my kids were clutching their bellies and moaning around the house.

“How many more minutes? I’m so hungry.”

“LOOK, I AM DOING THE BEST I CAN. IT SAID SEVEN MINUTES AND EVERYONE IS A LIAR. IT’S ONLY 9 AT NIGHT. YOU ARE ALL BEING VERY DRAMATIC.” (runs under table to shield oneself from the evils of the steam monster).

Once I started to understand when to vent/when not to and gave myself an extra half hour start time before meals, I fell in love with this. I have used it every single day since we got it from slow cooked oatmeal to quick risottos to these delicious Korean tacos today. It is my new best friend!

Pressure cooking is amazing for its ability to make quicker work of things that normally take a long time or that can be very labor intensive. Steel cut oatmeal in four minutes, risotto in seven (with no pot hovering), shredded beef in forty-five minutes. It’s a dream come true!

I am sure I will have more to say about this gadget as I progress my way through new recipes! For now, let’s make some tacos!

These Korean tacos take about 45 minutes to make (after the preheat time- ahem!) and is made with items you most likely already have in your kitchen. A squeeze of fresh orange juice, soy sauce, beef broth, and a diced apple make an incredibly flavorful beef. I love that this is created from a bottom roast so it makes this an affordable dish to create and a wonderful one to entertain with.

To balance the saltiness of these, I topped these with a sweet Asian slaw made from cabbage, sesame oil, rice wine vinegar, and honey (to taste). It adds that irresistible crunch and balances the flavor in these.

Don’t have a pressure cooker? No worries! Just put this meat in a slow cooker for eight hours on LOW instead.

Don’t forget that this can also be transformed into taco bowls for your week too! Prepare the rice in the Instant Pot (some recommend getting an extra insert to make quick work in the kitchen!) and enjoy this delicious meal all week long.

These were a huge hit with my whole family and we made quick work eating through this batch on busy weeknights! I can’t recommend this one enough!

Pressure Cooker Korean Street Tacos
Prep time:
Cook time:
Total time:
Serves: 8 servings
Put your Instant Pot to work to create this flavorful Korean Street Taco for your week. This is a great one for busy weeknights & can be made into delicious rice bowls for your lunches!
Ingredients
  • 4 pounds bottom roast, cut into 2″ cubes
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • ½ cup soy sauce
  • 5 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 Granny Smith apple peeled and chopped
  • juice or one large orange or 2 small
  • Corn tortillas (warmed)
  • 1 cup red cabbage (shredded)
  • 2 cups cabbage mix (shredded)
  • ¼ cup cilantro (chopped)- cilantro haters OMIT.
  • ¼ cup rice wine vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp sriracha, optional for added heat
Instructions
  1. Season your bottom roast meat cubes generously with salt and pepper.
  2. Turn on your Instant Pot and select the Saute setting. Once the pan is hot coat the pan with the olive oil and in batches brown the meat on all the sides. Transfer meat to a plate while you’re working.
  3. Once all the meat is browned, using a whisk, deglaze the bottom of the pot with the beef broth, scraping up all the browned bits.
  4. Pour in the soy sauce and stir to combine.
  5. Return all the meat back to the pan and then place the garlic, ginger and appl on top of the meat, stirring lightly to slightly combine.
  6. Finish by adding a squeeze of orange juice.
  7. Place the lid on your Instant Pot and using the manual button on normal pressure set to 45 minutes. IMPORTANT: Make sure the valve is CLOSED.
  8. While the meat is cooking, begin preparing your slaw. Add the red cabbage and regular cabbage mix to a medium sized bowl.
  9. In a small bowl, whisk the rice wine vinegar, sriracha (optional), soy sauce, honey and sesame oil together.
  10. Pour the dressing the cabbage mixture and toss to combine.
  11. Once the pot is done, release the steam and shred meat using a fork. On a warmed tortilla, scoop meat and then slaw to finish.

One of our goals this week was to get the painting my husband found at an antique shop in Saugatuck framed for our home. If you haven’t given Hobby Lobby’s framing department a spin, it is where we have taken all of our pieces for framing. This one required custom framing and we splurged for the museum glass (did you know you can use a coupon on that- so nice!). That splurge pays off though to not have a glare across her face.

We got her hung in our family room and then my husband remarked how she really should be anchored by something…you know, like a new record console since that corner was so bare. Anyone else feel like these switches spiral into other purchases? I insisted we make do and switched tables, moved things around, and gathered greenery from the backyard. It works for now until we want to continue spiraling.

She really is a beauty and adds so much to our little living room.

Here are a few other things that are making me happy!

Old Navy Brushed Fleece T-Shirt World’s Coziest Top

Next week I am planning to try on and post the things that I ordered for my capsule wardrobe for fall, but I couldn’t wait on this one, for fear they will sell out. You guys. THIS TOP IS EVERYTHING!! The outside is made of the softest material ever felt (almost like a faux cashmere material) and the inside feels more like a terry material so you don’t get overheated. It is the top you will want to wear all the time, I promise you. As someone who hates shirts to be too short, the length is absolutely perfect on this one with satisfactory coverage. This one runs true to size (I purchased the XS and it is not too tight). I had ordered it in Gray and in Oatmeal and it is paining me not to order more. That is how much I love it.

Since Old Navy pretty much runs a sale every single day, I doubt you would ever pay the full retail price of $20 for it, but if you did, it would still be the best $20 you spent.

I tried it on and ran up to my husband.

“Touch me,” I said (with a glint in my eye).

“Okay,” he said (with a glint in his eye.)

“Can you believe this shirt?” (I said with eyes dancing)

“Oh, I guess we were thinking different things..” (sad face emoji).

He touches the shirt…

“I am so jealous. I want a shirt like that. If I had a shirt like that I would wear it every day.” (more sad face emojis because no male t-shirt equivalent on their site)

So there you have it, I can’t endorse this one enough!! Snag it ASAP.

Crazy Ex-Girlfriend

Musical Geek Awesomeness

I was so excited that Crazy Ex-Girlfriend came to Netflix and I have been treating myself to an episode in the afternoons. Have you guys seen it? It is pretty much my dream show. The main character, Rachel, lives in New York and is a successful practicing lawyer. When she bumps into an old boyfriend, Josh, on the street she believes it is fate and drops everything to try to get him back including a great career and her life in New York.

Yup. She’s crazy.

This city girl moves to a small town in California (two hours from the beach, four hours in traffic), taking a job at a small town law firm (with hilarious co workers) in hopes she can get back together with Josh…poor, unsuspecting Josh!

This is dark comedy at its finest and they manage to weave in the most beautiful (and hilarious) music that make it feel like each episode is a taste of a Broadway show. I cry-laugh through almost every single one.

If you haven’t watched it yet, DO IT. You can watch it on Netflix, Hulu, or stream it through Amazon.

We don’t have cable (one of the best financial decisions we have made) and so I am always on the hunt to share new options for affordable streaming for families. We have had a Roku box for years and I was so excited to see that they have created a Roku now that is simply a stick that you can stick into your television’s HDMI port, that has all of the shows you are currently streaming. For wall-mounted televisions, it is a fantastic way to watch your shows without figuring out where to put a box.

The best part about it is that it is completely portable. For our family, it would be fantastic when we rent homes for family vacations, a way to keep the kids busy when stuck in a hotel room, and for our own wall-mounted television in our office (that had a Roku box dangling from it- not kidding!). For other families, it might be a great one to send off with your college kid so they can still use the account or to take to your parent’s house so they can catch a flick with you- that kind of thing!

Did I mention you can plug in a headset for private listening?

Oh, I know what kind of person you are- you know you don’t want your kids to hear your shows.

I can’t be the only one indulging in Broad City!

Some of the channels that we use like Pandora, Spotify, YouTube, Hulu, Netflix, and Amazon Prime are all available through this (along with a lot more!). Slow Cooked Honeycrisp Apple Oatmeal

 

Completing: Cleaned out my car! Jazz hands! Emily said, “Oh, I just love our organized car.” I just love not driving around in the equivalent of a dirty dorm room.

Reading: I’m listening to this book on audio. I had never heard of it before (or this incredible story in history- who knew about this lady before Helen Keller!?).

Slow Cooker Creamy Coconut Oatmeal (& Tips for Perfect Slow-Cooked Oats)

It’s become an embarrassing pattern of mine to make a resolution every year to be better about eating breakfast. Each time, I start on the path towards healthy eating. However, as life becomes fuller and mornings more hectic, I find that eating a good breakfast often gets pushed to the side.

This year, I discovered how invaluable my slow cooker was in creating a beautiful, hot breakfast for my entire family that I could serve in the morning and enjoy for mornings to come. I could also serve it as a midday pick-me-up or as a healthy late- night snack. The discovery might seem a bit old-fashioned, but a batch of oatmeal is a great way to start the day. This isn’t just any old oatmeal though—this oatmeal is made from delicious steel cut oats.

What’s the difference between rolled oats and steel cut oats? Well, a part of it is their structure and the other part is the way that our body digests them. While both contain whole grain oats, they are processed differently. Rolled oats are steamed, rolled, steamed again and toasted, ending up as thin flakes. Steel cut oats are made from oat kernels that have been chopped into thick pieces.

The reason steel cut oats are so awesome is because they digest more slowly than rolled ones, leaving you fuller longer. Like all other grains in whole or cracked form, steel cut oats rank lower on the glycemic index than rolled oats. This just means that it takes longer for digestive enzymes to reach the starch inside the thicker pieces, slowing down its conversion to sugar. For me, those highs and lows are some rough stuff, and I’ve found that a bowl of steel cut oats keeps my blood sugar much steadier.

I make a variety of different oatmeal recipes in my slow cooker and have found one thing to be consistent no matter what kind I make. Can I let you in on my little secret? I absolutely hate cleaning the slow cooker after making oatmeal. I also hate that the oats can get crusty pretty quickly on the edges, yielding a less than creamy bowl even when I have the perfect liquid ratios.

How to make slow cooker oatmeal

Let me share my secret that yields the most perfect and creamy bowl you can imagine and it is probably something you already have in your kitchen:

1. Find an oven-safe dish that fits inside of your slow cooker and fill that dish with all of your ingredients for your oatmeal.

2. Fill a measuring cup with water and pour the water around your dish, just to about the halfway point. This creates a warm water bath (a lot like those candles we made this summer) and helps your oatmeal to cook more evenly yet remain delightfully creamy.

3. Put a lid on the slow cooker (no need to double lid) and set it to cook for eight hours. It’s okay if your slow cooker switches to “warm” in the night. Thanks to your water bath, your oats will not get overcooked, but stay hot until you wake up!

Once you have that perfect bowl of oatmeal, you can add your favorite toppings to it or create a quick toppings bar of ingredients for the week. For this Creamy Coconut Oatmeal recipe, I found the taste of rich blackberries and toasty almonds to be a delightful way to top it!

Slow Cooker Creamy Coconut Oatmeal (& Tips for Perfect Slow-Cooked Oats)

Ingredients
  • 2 cups steel cut oatmeal (no substitutions)
  • 1 can full fat coconut milk
  • 8 cups water
  • 1 tablespoon vanilla extract
  • 2 tablespoons organic cane sugar (can omit if topping with brown sugar)
  • 1 pinch of salt
Instructions
  1. Place all ingredients in your Kenmore slow cooker as I have shown you above.
  2. Cook on low for eight hours.
  3. Serve with your favorite oatmeal toppings like berries, dried fruits, nuts, granola, nut butters, coconut, brown sugar, cinnamon, or additional milk for topping.
