Great Reads for Moms: March ’13 Edition

I hope everyone is off to a great reading start this year! If you are looking for more ways to squeeze in quality reading time, be sure to read this month’s article on how I made reading a priority in my own life again. I am off to another great start this year, although at a slower pace than I would like thanks to our busy schedule.

11/22/63 by Stephen King

It has been many years since I have read a Stephen King book, but I kept hearing that I should pick up this book from so many people (including my amazing friend Kristen from Dine & Dish) that I thought I would give this book a try. I have to say, that I believe already that this book will be among my top ten for 2013, simply because the concept of the book, the characters, and the beautiful weaving of history throughout it have stuck with me since I read it.

This is not horror fiction, but historical fiction offering up the hypothetical scenario that if you could change something in history, would you alter it and what would the consequences be if history was changed.

Jake Epping  teaches high school English in Lisbon Falls, Maine, and is recently divorced from his wife and going through the everyday minutiae of middle-aged life. When he happens upon an assignment from one of his students, a brain-damaged janitor’s story of a childhood Halloween massacre by their drunken father, it brings him to tears and he finds that he can’t stop thinking about what if his life had worked out differently.

When he has lunch at his favorite diner, the diner owner and friend, Al, shares that he has a secret portal to 1958 that he uses to time travel in the back pantry of his restaurant.  He has been taking notes and following Lee Harvey Oswald to see if he can alter the JFK assassination. His dying wish is that Jake can use his notes and actually complete the mission of killing Lee Oswald Harvey before he kills JFK.

Jake decides to fulfill Al’s dying wish and begins a new life in 1958 under the name of George Amberson. What Jake doesn’t expect is how quickly his life can become settled in this new era or how his life would change if he met his one true love?

I loved absolutely everything about this book and when I finished it, I wanted to read the story all over again. It has a beautiful love story, great suspense, and leads to the ultimate question, “Would you change history if you could?”

I can’t recommend this book enough- I would give it ten stars if I could!

The Night Circus by Erin Morgenstern

The Night Circus is a book that I have picked up from the library no less than half a dozen times, but never could seem to get around to reading it. I usually abandon popular fiction, but this book kept coming up in conversations with fellow readers and everyone kept encouraging me to read it. I am so glad that you did, I really did enjoy this fresh take on the circus and the magical elements within this book.

Unlike a traditional circus papered with announcements of dates and times of arrival, the night circus arrives without warning. Within the black-and-white striped canvas walls is a circus called Le Cirque des Rêves, that appears out of nowhere and is only open at night. What lies within these black-and-white walls is a circus like no other with room upon room of optical illusions, magical acts, and a behind-the-scenes competition between two young magicians.

Celia & Marco have been both been training as magicians for this competition since they were children, although they never knew who or what they would be up against. Both of them are skilled magicians, each with a specific skill set that they are strongest at, and they are to be pitted against each other in a battle to the death.

What neither  Celia or Marco expects is that they will fall in love. What could the outcome be when only one opponent can remain standing?

This book is imaginative in concept and in its writing. I found myself sucked into a world of vivid imagination and could not put the book down because I needed to know what the fate of Celia & Marco could be. The book has many, many characters, which definitely kept me on my toes, but each character offers a different element to the circus that helps mold this unique story line.

Schroder by Amity Gaige

Schroder is an absolutely riveting read that I finished in a record 24 hours due to the captivating story. The book shares the story of  Erik Schroder. When he was just a boy, he applied to attend a summer camp, where he makes up a fictional name of, “Eric Kennedy,” with a rich East coast background contrary to  his real first generation East German immigrant background. Once he adopts this fictional identity, he severs contact with his father and starts his life free of his German roots, and enjoys what he believes to be the American dream.

Years later, Erik and his wife are going through a divorce and his custody rights are basically taken away from him. In an impulsive decision, Erik finds himself on an urgent escape to Lake Champlain, Vermont with his daughter on a week long journey filled with bad decision after bad decision.  In an explanation to explain his behavior his story is then told to his ex-wife Laura from a correctional facility where Erik confesses why he adopted a different identity, how it felt to not have his daughter in his life, and what he did on those six days on the run with his daughter.

There are so many things I loved about this book. First, Erik is truly one of the most unlikable characters you will ever read, yet the author still manages to pull at your heartstrings and make you feel sorry for Erik and his circumstances.  The second, is hearing this story told form Erik’s point of view makes you wonder what the story would be if told from Laura’s point of view or his daughter’s point of view.

There are some loose strings with this one, like the fact that Erik was able to go his entire life without getting caught with his new identity or how he was able to pull this identity switch over on his wife. Despite the improbability of that though, I really thought the characters were well-developed and the story would lend itself well to a book club discussion!

Wuthering Heights by Emily Bronte

Each year I make a goal to read a literary classic or two and I was excited to read Wuthering Heights for the first time this year. The Masterpiece Theater adaptation of the book and the classic movie of this book both are among my favorites ever watched, yet I had not read it.

If you are not familiar with the story, Wuthering Heights is a love story of dramatic proportions between Catherine Earnshaw and Heathcliff, an adopted child of their family. When Mr. Earnshaw passes away, Heathcliff is bullied and humiliated by Catherine’s brother Hindley. He ends up leaving Wuthering Heights, believing in his heart that although he loves Catherine, she does not love him back

When he returns years later, successful and wealthy, he exacts his revenge for all of the cruelty invoked on him as a boy and for the love he lost.

Dark, cruel, twisted plot lines, and an unrequited love story are what make this book so darn good. You find yourself loving and then hating Heathcliff.

I am so proud I tackled this classic and am looking forward to reading more great classics this year!

Blue Asylum by Kathy Hepinstall

Virginia plantation wife Iris Dunleavy is put on trial and convicted of madness amid the chaos of the Civil War. The problem is that Iris is not actually insane, but simply does not agree with the way her husband is managing the slaves that they have on their plantation.  She is sent away to Sanibel Asylum to be counseled and restored back into becoming an agreeable wife. Unlike others there though, Iris knows that she did nothing wrong and refuses to change when her husband is the real criminal.

There is a mix of unlikely characters at the Sanibel Asylum, all with varying senses of lunacy. When Iris begins playing checkers with Ambrose Weller, another patient at the asylum, a relationship quickly blossoms and an unlikely love story develops.

Determined to escape the asylum, Iris finds herself conflicted as she falls more and more in love with Ambrose Weller, a man who is dealing with posttraumatic stress disorder after serving in the Civil War. Will she stay to be with Ambrose or will they runaway together and what will be the consequence of taking Ambrose out of his therapy setting?

This is a great, quick read, that historical fiction fans will love for a quick escape!

Baked French Breakfast Donuts

Baked donuts have become a special food tradition in our house. These French Breakfast Donuts are the new family favorite though because they come closest to resembling those delicious fried donuts that we love so much from the doughnut shops. Do you have a doughnut pan?  You should put it to work with this delicious recipe.

I have heard often from people that they are disappointed in the flavor of baked donuts. I think it is important to go into baking donuts know that they will most definitely not take like a fried doughnut, but taste more like a muffin with a fun doughnut shape.

Since we have started eating baked doughnuts, my kids don’t really like the doughnuts from the doughnut shop which I find WEIRD because no kid should not love a doughnut from a doughnut shop. That being said, not to lead you astray that my kids are so healthy,  I think they just like that they can consume more of these baked doughnuts than they can of the fried version.

Have you sampled any of our doughnut recipes around here? We have a doughnut for every season in life. We have snickerdoodle doughnuts, fluffy cake doughnuts, apple pie doughnuts, rich chocolate doughnuts,  lemon blueberry doughnuts, pumpkin doughnuts, and even gingerbread doughnuts.

When I say I have a doughnut for every season, I mean it!

I find doughnuts enjoyed in another room in our house are always a hit. One day over our winter break, I laid out a tablecloth and served doughnuts on a breakfast tray with mason jars of orange juice for an unexpected morning treat. The kids were thrilled to get to take over our room AND eat doughnuts. You gotta love a cheap thrill like this!

These French Breakfast Donuts are light, fluffy, and laced with nutmeg. After they are baked, they are dunked in butter and coated with cinnamon and sugar.

They are so delicious that I guarantee that you won’t be able to eat just one!

Baked French Breakfast Donuts
Recipe Type: Breakfast
Author: Adapted from Cooks.com.
Prep time: 5 mins
Cook time: 20 mins
Total time: 25 mins
Serves: 6
A baked doughnut that actually tastes like a doughnut. If you don’t have a doughnut pan, these can easily be made in a muffin tin as well!
Ingredients
  • 5 tablespoons unsalted butter, room temperature
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup milk
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup sugar
  • 1 tablespoon cinnamon
Instructions
  1. Preheat oven to 350 degrees. Coat doughnut pan generously with nonstick cooking spray. Set aside.
  2. Cream together butter and sugar until fluffy. Add egg; mix well.
  3. Sift flour, baking powder, salt and nutmeg together. Add dry ingredients alternately with milk.
  4. Fill doughnut tins half full. Bake 15-20 minutes. Take out of pan immediately and swirl tops into melted butter, then sugar and cinnamon mixture.
  5. Makes 6-7 doughnuts.

Statement Necklaces

Statement necklaces are one of my new favorite things to add to my Spring shopping to-do list because they can change everything in your wardrobe into a completely different outfit. Even an inexpensive white t-shirt suddenly looks different with the addition of a great statement necklace. You can find statement necklaces for very cheap, but I have found that they don’t hold up very well and I have started investing in one or two good pieces of costume jewelry for the year instead of buying necklaces that break on me before the season ends.

Nautical Knits

I love trends that never seem to go out of style and nautical is something I am always adding to my closet because it lasts from year to year. Each year I try to get one knit dress that I can dress up or down for the summer. This Nautical Knit Dress ($49.50) is the perfect example of a dress that can be accessorized with a bright belt, a big statement necklace, or thrown on for a day at the beach. Ironically, I spotted almost the same dress in my own Pinterest board that I had pinned ages ago. I already knew that this would be the perfect dress for me!

Coral & Mint Hues

I am loving all things coral and mint for Spring. This Shades of Perfection Top ($49.50)  is so cute and could transition out of these colder days with the long sleeve t-shirt and easily put on sleeveless for Spring. DIY Peep Wreath With Rolled Ribbon Rosette

Easter is just around the corner and today’s DIY Easter Wreath is an adorable Peep Wreath created with that infamous Easter candy and adorned with a simple rolled ribbon rosette. Peep wreaths are easy to create for the Easter season and are inexpensive Easter decoration to add to adorn a wall or interior door of your home.

Here is a picture of the supplies you will need for this craft and all of the supplies for this tutorial can be found at your local Walmart store. You will need one 14″ straw wreath (leave this covered in the plastic wrap), 12 packages of Peeps in whatever color your heart desires, 1 yard of rosette ribbon (this will need to be cut in the fabric department), 1 piece of white felt, toothpicks, hot glue gun, and glue sticks. 

As an aside, if you haven’t visited the craft section of the store in awhile, you will be amazed at the new ribbon & trim offerings they are carrying. If making a flower isn’t your thing, they also have a variety of pre-made flowers by the hair and new baby accessories line that you could use in lieu of making the flower I am going to show you today.  It had been awhile since my last visit, and I was a little overwhelmed with the new choices available!

Assembling the wreath is easy and can be done one of two ways.  Poke your toothpick through your Peep almost until the toothpick pokes out of the top and then push your toothpick through your straw wreath OR you can just poke the toothpick directly in to your wreath and then stick your Peep on top of it.

My only aside to this is that I do think that if you are planning to keep the wreath, I would add a dab of hot glue to each of the Peeps. The idea of just skewering with a toothpick just didn’t work for my wreath due to the depth of how I positioned all of these. They really needed a little extra hold especially the Peeps that were on the bottom and inverted upside down. 

Find a design that makes sense for you. I did three rows of Peeps with them all uniform and in a row.  My Type-A personality does not allow me to be whimsical with design. I want them all in a row, the right way, all in a line. If you know me, this would not surprise you at all.  To add depth, I also did a few in between rows of two Peeps (as pictured above).

Once again, I would recommend hot gluing a bit as you go to add a little extra security, otherwise, you will hear those sad little plops of Peeps committing suicide and jumping ship from the wreath. It is heartbreaking, but can you blame them?

If you do your wreath right, you will end up with six Peeps to spare and Peep dust all over your table. I can only give you an estimate on the number though (give or take a few) since I find Peeps (and Peep dust) awfully delicious!

You may remember this Rolled Rosette tutorial from this adorable Easter bow I made my daughter last year to go with her Easter outfit.

To start your rolled ribbon rosette,  you will want to start with one of the roses on the ribbon to create the center of your pretty flower. Now all you need to do is start twisting your ribbon in between each of the little roses (find those spot where there is only tulle like I have pictured above)  add a dab of hot glue, and then twist again, glue again, and repeat. If you twist the ribbon tightly, you will have a tighter and flatter flower. If you twist a little looser, you will get more of the petal effect with the frayed edges working their way out more on the ribbon. Either way, it will be beautiful. Keep twisting until you reach almost the end of the ribbon. Add a dab of glue and tuck it into the back of your bow.

Finish by cutting a circle out of felt. You can use a drinking glass to trace your circle on the felt or just freehand it. This felt circle will hold all of that ribbon secure and together underneath your Rolled Ribbon Rosette Hair Bow. Hot glue your felt circle to the back of your flower. Hold this for a couple of seconds to secure it.

Once you have secured your felt circle, add more glue and attach it wherever you want on your Peep wreath. Feel free to add other rolled rosettes like these or cute felted loopy bows or just add a fun fabric bow. As you can see, the possibilities for adorning your wreath are endless.

This wreath makes me so happy and is a fun nod to the season. The best part? It will cost you about $20 in supplies (assuming you have a glue gun, glue sticks, & some scissors in your craft supplies like me!)

In the meantime, try some Kool-Aid dyed eggs, bake a batch of Bunny Bread in your bread machine, make a cute hair accessory to go with your daughter’s Easter outfit this year, or try your hand at marbleizing some eggs. Weeknight Chicken Noodle Soup

I don’t think there is anything more satisfying than a bowl of homemade chicken noodle soup on a cold day. My homemade chicken noodle soup recipe is the chicken soup recipe to rival all chicken soup recipes. It is the chicken soup recipe my kids beg for when they are sick and it rivals any bowl of soup you could buy anywhere. Keep on reading to find my secret ingredient that will save you time in the kitchen and help you make this batch of soup even on the busies of weeknights.

If you are looking for a soup with that tastes deliciously homemade, but can be prepared in about 30 minutes and happily feed your family for a week, then this is the soup for you. The trick with this soup is starting with a good well-seasoned base and then working from there with quicker cooking techniques and ingredients.

My secret ingredient is a rotisserie chicken, which rivals the price of a fresh chicken with a fraction of the work, and to give the stock that I-cooked-all-day flavor, I sweat the veggies out in olive oil and seasoning before incorporating my chicken broth, and pour the broth directly over that rotisserie chicken to incorporate all of the seasonings from the chicken right into my soup base.

While you can make your own bread utilizing that handy bread machine in your kitchen, when we are under the weather or looking for a quick dinner fix, I love to visit the day old bakery cart at my local grocery to snag deeply discounted bread for our evening meals. This soup begs for a good baguette or french loaf to dip in it to soak up the flavorful broth.

What does the soup taste like? Soulful, satisfying, rich, delicious, comforting, and restaurant-worthy! This is definitely a lot cheaper than going out for soup and you can enjoy these leftovers all week long!

While I can’t guarantee that this soup heals all, it heals an awful lot in our house- sore throats are soothed, bellies are warmed, and whatever ails us in our life deserves a bowl of this chicken noodle soup for a little homemade comfort on a chilly night.

Weeknight Chicken Noodle Soup

The world’s best chicken noodle soup. We call this soup, “Better than Panera,” soup. I have a feeling after you try it, you will agree!
Ingredients
  • 2-3 cups egg noodles (I like the Ream’s brand in the frozen foods section)
  • 2 tablespoons of olive oil
  • 2 stalks chopped celery
  • 3 chopped carrots
  • 3 tablespoons chopped garlic
  • 12 cups low-sodium chicken broth
  • salt & pepper to taste
  • 1/3 cup cornstarch
  • 1/4 cup water
  • 1 rotisserie chicken
  • fresh parsley
Instructions
  1. Bring a large pot of lightly salted water to a boil.
  2. Add egg noodles and cook until tender.
  3. Drain, and rinse under cool running water.
  4. Meanwhile, in a large saucepan or Dutch oven, saute the carrots and celery in two tablespoons of olive oil for five minutes to start your soup base. Add garlic at the end (to prevent burning)
  5. Add your rotisserie chicken and any drippings form the chicken to the pot, directly on top of your vegetables. Pour your chicken broth directly over the chicken to incorporate all of the good flavors.
  6. Heat up broth and bring it to a simmer.
  7. Reduce heat, cover, and simmer 15 minutes.
  8. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved.
  9. Pull out your chicken and set aside to dice.
  10. Gradually add the cornstarch to soup, stirring constantly.
  11. Stir in noodles and diced rotisserie chicken, and heat through.
  12. Toss in a handful of fresh chopped parsley and ladle into bowls.
