We’re SO enjoying the return of grilling season, and I’m anxious to try this real food homemade BBQ Sauce on ribs…yum.

Nothing says summer like summertime grilling.  

Today I am sharing an easy 5-ingredient recipe for Caprese Pork Chops that you must try for your backyard grilling.

These 5-ingredient pork chops couldn’t be easier and are our family’s new favorite dish.

Anything that can be made with minimal effort, reheats like a dream, and makes my whole family happy is a winner in our kitchen.

This recipe serves all three of those purposes!

As we head into the summer months on the blog, my focus on projects and food are going to be all about simple things that add value and save you time in your day.

I hope you will appreciate the shift in focus and be inspired to try incorporating some of these ideas into your life, especially when they are so easy to execute.

If you plan to do some gardening this year, this recipe is a great way to use up your basil and cherry tomatoes or even create the pesto from scratch from your garden of herbs.

You can also try my version by hitting your local grocer, farmer’s market, or vegetable stand to snag these ingredients.

5-Ingredient Caprese Pork Chops

Serves: 8
An easy 5-ingredient Caprese Pork Chop that couldn’t be easier to prepare…or eat!
Ingredients
  • 8 thick center-cut pork chops, boneless
  • 1 jar of pesto (I love the Classico brand- over by the spaghetti sauce/pasta aisle)
  • 1 pint cherry tomatoes
  • 1 ball of fresh mozzarella
  • Handful of basil
  • Salt & Pepper, to taste
Instructions
  1. Place pork chops in a bag and pour the jar of pesto over them. Season with salt and pepper. Seal the bag and move the bag around to coat all of the chops in the pesto. Allow them to marinate for four hours or overnight.
  2. Slice the cherry tomatoes in half in a small bowl. Chop or tear the basil and add them to the tomatoes, seasoning with salt and pepper. Slice the mozzarella into eight slices and set aside.
  3. Preheat your grill on medium-high heat. Place chops on the grill and cook for five minutes on each side. In the last two minutes, add a slice of mozzarella on each pork chop. Shut the grill and allow the cheese to melt.
  4. Once the pork is cooked through, remove it from the grill and allow the chops to rest for 5 minutes. Top each chop with the tomato salad. Serve.

Sometimes the greatest gifts are the littlest of things. And random acts of kindness are beautiful and heart warming, not only as a recipient, but more so, when you give.

This post is inspired by a really great friend of mine whom I met at our kid’s kindergarten drop-off. I can definitely say that without her in my life these past 2 years, it would have been lacking tremendously. She is the kindest of souls.

Out of the blue, on a random day of the week, she made an extra meal for our family because she had enough ingredients. She popped by with dish and a little note that said “Bake at 350 for an hour. Enjoy!” I was overwhelmed with gratitude. Being a mom of 3, some days, I don’t even want to think about the next meal or dig through my pantry to see what I could possibly make! Of course, she didn’t think it was a big deal at all… but honestly, it made my week.

I returned the act of kindess last week when I popped by with a roast chicken meal from our grocery store. It wasn’t homemade, but it was a warm cooked meal that I know they certainly enjoyed. Even next day’s leftovers!

This back and forth got me thinking that I want to do this more often to unsuspecting mom friends who deserve a little mid-week break or pick me up. Hopefully this post will inspire you to do the same.

Happy Friday, friends!  I enjoyed a much quieter week than usual and I am so excited to end our week on a high note with another happiness list!  Let’s go ahead and get started since I am excited to share!

Can I just say that it is so hard to find a good quality t-shirt that fits properly and doesn’t cost an arm and a leg? Over the Fall I found these Old Navy Vintage Wash T-Shirts and promptly took home a gray v-neck to wear with all the things in my closet. I loved it so much that I was wearing it almost every day. It is one of those staple pieces you can dress up or down. When summer rolled around, I was thrilled to find that these also come in white and black so I stocked up for the summer to wear with all of my maxi skirts, summer skirts, and shorts this year.

You might remember spying that v-neck when I did our coverage of our site sponsor, Flourish Boutique. Honestly, I wear these t-shirts almost every day and they are under $10 each. The white is a little on the thin size, but with nude undergarments (like my favorite ones) or a full-coverage tank that covers your bra straps (these are my favorite), they are perfectly modest.  They are long, v-neck (but not too v-neck), and they fit true to size. This one shown here is an X-Small as I am a very wee woman on top. Not to be fooled, I am very Sir-Mix-A-Lot-Y on the bottom.

I wouldn’t pay full price for these- do a little hunting and you are bound to find some coupon codes or catch them on sale. I wouldn’t wait too long though-the best stuff always goes quick! ($8.50 each)

Nooch Popcorn from Gimme Some Oven

I happened upon this corn popping technique from Gimme Some Oven and it has now become our families favorite popcorn ever. The kernels are popped in coconut oil and then receive a liberal shaking of nutritional yeast. In our family, it also receives a generous handful of sea salt to top it all off. My kids now call it my homemade popcorn and beg for it on our weekends while we are tackling an evening of board games or Just Dance. You must try it- it’s a popcorn game-changer and healthy too!

I think we should just start a section of the site called, “Things Amy Drinks.” I am pretty sure every edition of this feature I have done so far included something to drink. I am so addicted to Passion Fruit Tea and was so thrilled to find that they have these iced tea bags at our local supermarket. For less than the price of one drink at Starbucks, I can make these at home and sweeten it just like I like to sweeten it. You can also mix in lemonade for a Passion Fruit Tea Lemonade, although I love it on its own.

I’ve priced these babies out all around town, in our town the best price is at Walmart, but buy them wherever the price is best around you. For $3.48, you can get SIX PITCHERS of tea. Holy heaven!

This drink helped me break my Diet Coke cravings and is the perfect thing to sip outside while enjoying the warmer temperatures!

 

Bonus Happy

And this week’s bonus happy, courtesy of my Instagram feed.  “You always bring a sun over my rainy cloud.”  To be loved like this? It’s the stuff that dreams are made of!

I also am excited my favorite band, Nickel Creek, has come out with a new album. This song is everything I love about that group! It’s been stuck in my head all week and oh-so-worthy of it.

Earn More Money to Help Save More and Pay off Debt Faster

Saving and cutting back are not the only way to get your finances in order – in our series we’ve discussed reducing expenseshow to deal with unexpected expenses, and 5 easy steps to a budget that works. But slashing spending is only half the battle. The other half is earning more money so that you can save more, pay off debt, and reach your financial goals faster. Today I’m sharing some ways you could potentially earn more as well as some ways to make sure that extra money doesn’t end up in extra spending.

Earn More Money

Earning more money is essential if you’re struggling to make ends meet. Here are some ideas to get you started on the path to earning more:

  • Ask for a Raise or more Responsibility at Work. There are many reasons to ask for a raise including being underpaid, having extra responsibilities, and being responsible for generating new income or cutting costs for your company. There are lots of tips for negotiating but the best way to get your boss to say “yes,” is to show your value.
  • Time to Job Hunt. If you are in a position where there’s no room for growth it’s time to look at new jobs. Your skills could be more valuable elsewhere. People often see a jump in income when they make a lateral move from one company to another.
  • Start a Side Gig. Whether you have an idea for a small home business or can tutor kids from home in the evenings’ it’s likely you have skills or hobbies that could be used to earn you some extra money.
  • Get a Second Job. Getting a second job may not sound ideal but look for work that fits your schedule. You don’t have to work two 40 hour a week jobs. You may find a part-time or job you can do online or at home when your regular work day is done. Use your network, friends, and family to find something that is a good fit. This could be anything from a part-time barista job to being a virtual assistant from your computer at home.
  • Improve your Education or Training. If you’ve reached as far as you can go with your current role it may be time to look at more education or training. For some industries it makes sense to go back to school for an advanced degree while for others a certification course will help improve their skill set. If you’re short on cash to pay for further education look for training, programs, or degrees that will be covered by your current employer.
  • Add New Skills to your Resumé. For many people they have a set of skills that they work with each day. Look at related skills to help improve your value to your current or future employers. For ideas on things you might consider search LinkedIn for colleagues or those with similar titles at other companies.
  • Start a Blog. Read some great advice from Amy on long-term tips for bloggers. Blogging is definitely not a ‘get rich quick scheme’ but it can be helpful for reaching new clients for your day job or be a creative outlet that’s totally different from what you do from 9 to 5. And yes it can eventually earn you some extra dough.

Temporary Boosts in Income

While the following ideas won’t get you out of debt entirely or help you save every year they can be a great way to jumpstart your financial goals:

  • Sell Off Items. Whether it is baby gear you no longer need or housewares that aren’t getting use daily you can earn some extra cash by selling items you no longer need or want. Using Craig’s List or other services works well for local only items (like the play kitchen your kids outgrew) while eBay works well for items like collectibles, designer clothes, and electronics.
  • Take Surveys. There are multiple sites that will allow you to earn cash for answering a few questions. Some are based on your fit for the survey while others offer to pay for your feedback no matter your personal fit.
  • Use Apps that help you Earn. Apps are available to help you earn now. The Ibotta app allows you to earn cash for shopping after answering a question or two, liking on Facebook, or even watching a short video. GigWalk is another app that allows users to take photos, submit surveys, and share info with companies that are looking for ‘on the ground’ help.

In the end earning more only helps you reach your goals if you stick to your budget. While it can be tempting to spend a little more on things since you’re earning more-don’t. It’s pretty easy to get yourself right back into living paycheck to paycheck if you aren’t careful. A simple way to manage the extra funds is to have them deposited into a separate account that you use to save, pay off your debt, or reach your other financial goals.

One Surefire Way to Improve Your Marriage

Later this month I’ll celebrate my 15th wedding anniversary. As a matter of fact, come this October my husband and I will have officially been a couple for 20 years. Obviously that means a) we met at a VERY young age and b) I am a total expert when it comes to relationships.

Well, yes and no.

(Side note: I learned today that crystal is the traditional anniversary gift item of Year 15. And while I don’t anticipate receiving anything made of crystal this year, I also am happy to point out that crystal beats the traditional gift for the seventh wedding anniversaries: wool. Huh. Wool is the gift of choice for the year of the infamous seven-year itch? Surely THAT can’t be a coincidence! But I digress…)

Anyway.

While I’ve made it to my crystal anniversary and am happy to say my marriage is stronger than ever, I would never claim the title of relationship expert. I have much to learn and am thankful for the opportunity to keep doing just that. But even while I’m in the process of learning to be a better wife – to create lasting memories, healthy boundaries and open communication – I know there’s one surefire way to improve my marriage in an instant.

Are you ready? Here goes:

Say thank you.

Now, quit it! Don’t roll your eyes at me! Give me just one minute to explain this seemingly simple piece of advice.

I know – OH I KNOW – there are times when it’s easier to say thank you than others. Some days gratitude just spills out of us – whether it’s to the husband who gets the trash to the curb seconds before the garbage truck rolls around the corner or the one who holds our hand as we await results from that terrifying medical test. Little things to big ones force our thankful hearts to bubble over into our words, our faces, our touch – into everything.

But – and please believe me, I’m talking to myself here, too – isn’t the same true when we are LESS than thankful? When that husband we love so much insists it’s your turn (AGAIN.) to get up with the baby or forgets your anniversary or birthday or big-presentation-at-work day? When he doesn’t ask how your day went or isn’t thrilled to eat tacos (AGAIN.) for dinner? How thankful are we then? What overflows into our eyes and our conversations then?

For the first MANY years of my marriage, I offered my husband conditional love. In fact, I was convinced that he needed to earn my love, my appreciation, my gratitude.

You’re right. This was NOT the recipe for a happy marriage.

Once I realized that gratitude was the answer – and not just some irritating platitude of all the marriage conference speakers and cheesy plaque makers – my marriage began to change.

I’m not saying that expressing gratitude changed my husband. No, it changed me. It changed my heart and my perspective. When I focused on the things – something, anything! – that I appreciated about him, all of a sudden my Spidey Sense went alert for the good parts of the man I married instead of the mistakes and failings I’d been lasered in on before.

This isn’t easy. I mean, yes, sometimes it’s easy to look back on the day and recount all the wonderful ways my husband blessed me. But other days? Not so much. That’s what making this gratitude a habit is so vital.

In an era of “conscious uncoupling” (what the what??), why not make a stand for conscious coupling? Why not choose to be mindful of the things that still draw us to our husbands? Why not be intentional about choosing gratitude and choosing him?

Sure, fine, yes – but what does that even mean? Well, I think it looks different for every couple, but here’s what it looks like in my house:

Use your manners. Say thank you.

I know. I already mentioned this. But I know for me the first people to suffer my bad moods or exhaustion or stress or WHATEVER are my family. The people who I love most and deserve my best often get my leftovers – and when that happens, it certainly doesn’t include using my manners.

He passed you the bread? Say thank you. He helped your daughter with her homework? Say thank you. He brought in the mail? Say thank you. He rented the movie you suggested? Say thank you. For all the little things – the things you would thank a stranger for, perhaps – say thank you.

Keep a gratitude journal.

When we began doing this I really only meant to teach THE OTHER PEOPLE who live in my house to be more thankful. Obviously, I didn’t have a problem with it. Except – and I’m sure you saw this coming – it teaches me something, too. Every time. Taking time to be thankful, expressing gratitude on purpose somehow transforms us into more gracious, more appreciative people. Not just in the three minutes it takes to go around the table and share. No, when you know that you’re going to be asked to tell your family what you’re thankful for each day (or, in the more practical case of my family, each day that you remember to do it…which might be closer to once a week), YOU LOOK FOR THINGS TO BE THANKFUL FOR.

And so it goes with marriage. Before we even celebrate our 15th anniversary, I’ve decided what I’m giving my husband for our 16th. I’m committing to writing down something I’m thankful to him for EVERY DAY (or, again, every day I remember – but I’m really shooting for every single day!). Then after a year and more than 300 thanks recorded, I’ll have an amazing gift to give him (which certainly beats hollow silver items, apparently the traditional gift for everyone’s 16th anniversary – YOU CAN’T MAKE THIS STUFF UP!).

End your day with thankfulness.

Whether you climb into bed together or not, why not make your last words of the day to your husband ones of thankfulness? My husband works nights, so I often text him a good night message before I hit the hay. Though he’s never mentioned the days I make sure to thank him for getting up early to play with the kids or grilling chicken for dinner or attacking the weeds around the front porch, I can’t imagine it hurts. (Plus, he’s a man of few words…unless the topic involves sports or cars or work…) And now that I think of it, I need to do this more often.

Our schedule is crazy; yours might be, too. Some days are so busy we barely see each other and my thank you might be for something more big-picture, like Thank you for loving our girls. or Thank you for working so hard at your job.

I realize that not every marriage presents opportunities for gratitude easily. And I definitely know from experience that every marriage goes through challenging seasons where you might have to look REAL hard for something to thank him for. But I sincerely believe – and I have seen it in my own life – that looking for the good (and then appreciating it) can go a long way toward improving your marriage, your outlook, your life.

When I started reviewing books for our site, I had no idea that NetGalley existed and everyone kept telling me I should sign up, especially when I first launched our book club.  NetGalley is a site that if you are a reviewer, blogger, journalist, librarian, bookseller, educator, or in the media, you can use NetGalley for FREE to request, read and provide feedback about forthcoming titles.  If you are any of these people, I can’t tell you how fun it is to get to preview books before their release date. I have them sent directly to my iPad, using my Kindle app, and get to sneak peek books from some really amazing authors.

That is how I got to sneak peek, “One Plus One,” by Jojo Moyes. If you haven’t read The Girl You Left Behind or Me Before You, you must reserve them at your library because they are amazing. I don’t know how she does it, but this book made me laugh, cry, and connect with every character in this book. She weaves an endearing story of a mother who is down on her luck and can barely make ends meet when her daughter is offered the chance of a lifetime to receive a scholarship for her excellence in mathematics that will cover 90% of her daughter’s education. Coming up with the other ten percent seems impossible, but she is determined to make this happen for her daughter. When she hears of a math contest happening in Scotland that offers a cash prize, she must do everything she can to get her there… including hitching a ride with the most unlikely man who could ultimately change their entire world. 

Anyone who has ever struggled financially or who would sacrifice it all to give their kids everything they need will appreciate this extraordinary book that, I hope, will be adapted to movie one day. It is that good!

Spending my evenings with this book made me oh-so-happy! It truly was a treat from start to finish.  If you can sign up for NetGalley, it’s a lot of fun to sneak peek these books before they hit the shelves.

 

Live G Free ALDI

Gluten-Free Deals

I was so excited to see that ALDI is offering this week their own line of gluten-free products called Live G Free. I hit my store this week and stocked up on brownie mixes, gluten-free sandwich wraps, frozen pizzas (to take with me when I have the dreaded pizza parties), crackers, pizza dough mixes, and brown rice pastas. I chatted with our cashier and she said they had some trouble keeping the shelves stocked which she said is always a good sign if ALDI decides to carry these items regularly in their store.

I was getting a little sweaty when they started ringing everything up though because I definitely stocked up on items and I brought cash. Luckily, I had just enough cash for everything so you could say that made me extra happy to not be outed for enthusiasm for gluten-free foods.

If any of these items are a big hit or if I hear anything about them keeping these on their store shelves, I will let you guys know. In the meantime, I left them feedback on their FB page begging for them to keep this stuff. It never hurts.

Fancy Dresses With Pockets

It is no secret that I have become addicted to Twice. If you missed my past posts about it, it is a site that has extremely discounted mint condition brand name stuff and it is marked to half or less than its retail price.  I always keep my eyes glued to the dresses page because… can a person have too many dresses? I think not.  I saw this dress pop up and I had to have it so I used my referral credit (thank you, friends!) and treated myself to this Anthropologie shirt-dress and HOLY HEAVENS, it is perfect in every way. The sleeves are just right, the print is even prettier in person, it has a built in petticoat that makes it full and pretty on the bottom, but (as if it couldn’t get better) it has pockets. So I sashayed around in this and graciously accepted the compliments on it. I mean…wouldn’t you?

I don’t know if anything else they sell will ever top this beauty.

And here is one last bonus happy for you.  This amazing photographer, Dave Engledow,  has his first book out, “Confessions of the World’s Best Father,” with some of the most hilarious pictures with his daughter that you just have to see and belly laugh over how cute they are.   There is a great round-up of some of the images over here and you can also get a little hilarity on your Facebook feed by liking his page.

Happiest of Mother’s Day, friends!  We are planning to spend the day visiting our local botanical garden and walking all the nature trails together in honor of the the holiday! I hope you have lots of fun in store too!
