One Way I Save Money: We do not subscribe to the newspaper because all of the information about our community is posted online and we read the news there. I know, I know- you would miss the advertisements in the Sunday newspaper. Well, you can look at all of the advertisements online through SundaySaver.com and find even your grocery store advertisements. I didn’t know, for instance, that our SuperTarget had a weekly advertisement. I looked online and found tons of web-only coupons for all of my grocery shopping needs.

Saturday Snack: This makes a quick & tasty snack for the whole family! Serve with a little whipped cream.

Chocolate Pudding
Serves Six

3/4 cup sugar
1/2 cup Bisquick. baking mix
1/3 cup cocoa
2 cups milk
1 cup cold water

Mix sugar, baking mix and cocoa in 3 quart saucepan. Gradually stir in milk and water.

Cook over medium-high heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

Cool, stirring occasionally to prevent film form forming.

One Way I Save Money: I have a true coffee obsession. I am not like a normal person who just enjoys coffe- I am extremely addicted to it. When, David Bach coined the phrase “latte factor” I immediately thought of my coffee addiction. In order to avoid blowing a ton of money at Starbucks, I preset my coffeemaker in the morning. I don’t own a programable one, but I do put the grounds in and set my cup next to it. Just knowing that I have this waiting for me in the morning, gives me a reason to skip hitting the Starbucks drive-thru (even though it is so yummy!) I try to ask for gift cards to help finance my addiction so I don’t feel guilty and rely on my own coffeemaker for my coffee in the morning. This saves me a few dollars each day, which adds up over time!

On Our Dinner Table: It is slow cooker day in our house. I am making our family’s favorite spaghetti sauce. I love my slow cooker and can’t imagine my life without it right now. The only downside to this little gadget is that I must smell that yummy food all day long and it makes me REALLY hungry!

Italian Sausage Spaghetti Sauce
Serves Eight

1 package Italian Turkey Sausage – mild
2 cans crushed tomatoes
1 can petite diced tomatoes
1 can tomato paste
½ cup beef broth

Brown the turkey sausage in a large skillet. Place cooked sausage in the bottom of the slow cooker. Pour over the sausage all of the other ingredients, including any of your own Italian seasonings. Cook sauce on low for six hours or on high for three to four hours. Serve over your favorite pasta.

General Whining & Some Other Stuff

Today I had a date with MomsTown radio to promote my website. I have been looking forward to this all week long. My husband took a half day so that I could concentrate on the segment of the show and really blast the website for all it is worth.

I waited and waited and waited to get on the air. I called and called and called until FINALLY someone answered. I was so excited to be on the air and get to talk about the site. I waited and waited some more as other moms shared their work-at-home opportunities and tried to be patient about waiting my turn.

I finally make it onto the air and just get to talking about my site when….they disconnect me. It was horrible! I did manage to get MomAdvice.com in my first words, but that was all I managed. This was just horribly frustrating.

Being your own PR firm, writer, manager, etc… is tough. I am not trying to whine or anything, but there are typical setbacks that I feel I experience because I am the only one on the job. I love my site and I want others to know about, but I don’t have the dough to hire an army of people to get us out there. It makes me question if this is all worth it? Are people benefiting enough from it? Is this a valuable resource to someone?

We have been pursued by the best, but because we are not 1 million hits strong every single day, we get the “don’t call us, we’ll call you,” discussion and I feel like I am back at square one again.

On a lighter note, we will be featured in MomsTown’s newsletter that they send out, so hopefully I will still get the promotion that we were hoping for, especially after such a frustrating day.

Oh, and while I was chatting with them, I also won tickets to a conference in Las Vegas. Please tell me how I could get away for two whole days from my kids (particularly the baby who nurses 24/7) and learn from other people? I don’t think I will get the opportunity to utilize these, but it was nice regardless.

One Way I Save Money: I ran across these handy-dandy little sandwich holders at the store the other day. It is sandwich shaped and you can throw your sandwich in there to keep it fresh for your lunch. I thought that this served two great purposes…

1) No nasty mashed up sandwiches. Nothing is worse than opening your lunch bag and finding that the apple you put in there has rolled over on the top of your sandwich and then permanently dented it.

2) I don’t have to use as many sandwich bags which I find to be very wasteful. I think this was a good investment and they should have them in the plastic container aisles of your store.

On Our Dinner Table:

I have discovered Tilapia and we love it! If you are not a fish person, bear with me because this stuff doesn’t have a fishy taste at all. This dish has been going into my regular rotation because it is inexpensive and delicious. You can buy Tilapia fresh or in the frozen foods section of your grocery store. Even my toddler will eat this dish so it is definitely worth trying. I am trying to incorporate more fish into our diet and this seems like a great way to do it.

Herb Baked Tilapia
Serves Four

4 tilapia fillets – 4 to 6 ounce
1/3 cup Parmesan cheese
1/4 cup low-fat mayonnaise
2 Tbsp minced scallions
1/4 cup dry bread crumbs
1 tsp dried basil
1 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper

Heat oven to 400 degrees. Place tilapia on nonstick
foil. In a small bowl, combine cheese, mayonnaise and
scallions. Spread evenly over fish. In another bowl,
combine bread crumbs, basil, oregano, salt and pepper.
Sprinkle over fish. Coat fish lightly with cooking
spray. Bake 10 minutes or until fish flakes easily
with fork.

Target Dollar Bin & BBQ Chicken Sandwiches

Thank you to everyone who has emailed me and let me know how much they like the new direction of my blog. I think that I am still trying to find my niche in the blog world and it is good to talk about things that are important to me, while helping someone else in the process.

This weekend I did run across some good deals in the Target Dollar Section. Can I just thank the person that thought of that great idea? I want to kiss them and smack them at the same time because my budget will never be the same. I have found some wonderful deals in there, and I am always amazed at the new selection each week. This week I found a notepad magnetic menu planner, a take out menu organizer, and a magnet that has kitchen conversions on it. Lots of great stuff this week! If you are a gardener, they had a great selection of gardening gadgets and doodads. Can you tell how into gardening I am- I don’t even know what the stuff is called? Now you will know why my lawn and flower beds look so lovely! Oh well! I can’t be good at everything.

Tonight I am hosting our HOOTOWL group. Each week a subgroup from my Mothers & More group get together to have dinner and gab. HOOTOWL stands for Husbands Out Of Town Or Working Late- cute, huh? Wish I could take credit for that acronym, but I can’t. It is a great group of women though and I look forward to my evenings with the girls. Since we had a busy day planned, I decided to rely on my slow cooker to provide our dinner this evening. I am an enormous fan of my slow cooker, particularly since the birth of our daughter. It is so nice to throw everything in, switch it on, and have dinner ready in the evening with minimal effort. I have just completed writing an article on spending a month with your slow cooker and I will be sure to let you all know when that one is posted.

Tonight we are having BBQ Chicken Sandwiches. This is my favorite recipe and came from one of my cooking buddies. Leftovers can be spread over a pizza crust (check my blog for pizza crust recipes), sprinkled with cheese, and baked for a BBQ Chicken Pizza. Leftover meat freezes well so you can pop the leftovers into the freezer for another night. This makes a great Friday night dinner. The past few Friday nights, I have been making these and then after we eat we have been out walking enjoying this nice weather. I hope you can add this one to your family’s dinner one night- in my book, this is a keeper!

Slow Cooker BBQ Chicken
Serves Six

4 chicken breasts – can be frozen
2 cups ketchup

4 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon vinegar

½ teaspoon garlic powder

Mix together all ingredients (except chicken) in slow cooker. Add the chicken, coating each piece in sauce. Cook on high for four hours. Remove chicken and shred/pull with forks. Return to pot and stir in sauce to coat. Serve on toasted buns.

Blog? What Blog?

Well, I have discovered that I am about as good at blogging as I am at journaling and keeping up with baby books….I fear that my children are going to be disappointed someday when they see that mom has never written a single thing down for them to remember me by or themselves in their youth. Hopefully, I will be a brilliant storyteller when I am around so that I can make up for my lack of the written word.

Luckily, I am a little bit better about keeping up with our website. My husband has been frantically working at putting together a whole new look and feel for our site and I am super excited about it. Don’t get me wrong, the current design is outstanding too, but the new look is going to be a good move for us. I am hoping that the new site will be more user-friendly and we will continue to feed you guys with the same information that we were offering before. I will no longer be writing on the topic of organizing though because, these days, I am not in the organizing mode….I am in survival mode. Anyone with an infant and a toddler knows what I am talking about…I just can’t explore the topic of organization when I am sitting in a disaster zone. I will leave the organizing section to people who can write about it honestly, and I will concentrate on the easier stuff like money & food.

With all these changes in mind, I have decided that my blog needs a new shift in purpose. Despite the fact that I am hilarious (in person) and can talk people’s ears off with my stories, I just don’t have the time to keep up with typing them all out. My typing time consists of two minutes here and there, which are better spent writing things that support the site. My typing is also now done with one hand (Emily in the other) and consists of simple mouse clicks right now.

A better fit for me will be to share ways that I save money and what is on my dinner table. If I decide to share a story….well, then you know I had a good day with the kids (or a seriously bad one and I am using the writing as my therapy).

Truly, much of my day is spent finding and trying recipes for my menu planners, and putting together our dinners. Another part of my day is doing research on how to save our family more money and keep me home. Then the rest of my day is just the day-to-day grind of paying bills, laundry, and (barely) keeping up.

Hopefully you will enjoy the shift in the blog and I am hoping it inspires some of you to try some new things for your dinner table. I am constantly researching and trying new dishes and it will be fun for me to report my experiments to you all.

I am also a bargain hunter and try to be as thrifty as I can be (with the occasional bad idea of running to Target for just one thing) so I will get to share with you the ways that I save our family some dough.

In the meantime, keep an eye out on our site…May 1st is our goal for our relaunch. Thank you to all of you who inspire me and share with me- without you, I would not have anything to write about! Cheers!

Mom of the Year

I am returning from my hiatus (please note the sarcasm) and am trying to get back on track with the website and blog. I know it has been a LONG time since my last post, but I am hoping to be able to squeeze in a minute or two, here or there, to post new things that are going on with our family.

Having two children is definitely very different than having one child. Emily is turning ten weeks and I am just beginning to feel a little bit sane again. She is an amazing baby and I love her to death! Despite having a child with a great disposition, our family & life feel as though they have been turned upside down. The normally in-control momma is now a raging loony who greets her husband (usually about once a week) at the door bawling. As if my bawling was not welcome enough, it is often met with the louder bawling of both of the kids. I still don’t know why this man keeps coming back or why he doesn’t just turn around and walk right back out when he sees us. I guess he must love us (or else I am really good at pulling the guilt card) because he returns no matter what mental state I am in.

Oh, and in case you were wondering my house is now a pit, my laundry is lying in piles (each load takes around one week to process), and I do go for days without showering. I have lowered my standards for myself and now feel proud if we are all dressed before my husband gets home, if both kids are changed (let’s not talk about potty training, m-kay?), we have clean diapers (yes, I am cloth diapering, crazy freak of nature that I am!), and there is something to eat (bread does count as a meal, right?) I have made peace with the fact that I will not win the Mom of the Year award….well, at least not this year, and am just going with the flow these days.

Despite the craziness and feeling a bit out of control- I am so proud of my family. The transition, although not as smooth as I had hoped, has been made and we are now a family of four rather than a family of three. If only the transition was as easy as it is in the game of Life. You land on the spot to add a person, pick a blue or pink peg, plop them in the car, and then keep on trucking. We are trucking along, but it seems like we are taking a really long-winded detour of insanity these days. One of these days we will be back on the clean & organized path, but until then I will just hold on to my application for the Mom of the Year award.

Oh, in case you were wondering who beat me for the honor this year…it was Britney Spears. Gawd, that girl gets everything!

Making Her Debut….

Our little girl is finally here after much waiting and anticipation. Emily Marie was born at 7:07 PM on December 19th. She weighed in at 6.3 pounds and 19 inches long.

Thank you to everyone who thought of us and prayed for us during the pregnancy and delivery of our child. She is perfect in every single way and seems to have a great disposition.

I will be popping in and out online, but wanted to let everyone know that she has arrived safe & sound. We are all adjusting to having a new little one in the house. Amazing how much you forget even though our son is only three years old. It truly is like learning everything all over again (although it is nice to have a little experience under our belt this time).

Potent Prayers

Thank you to all of my friends, family, & fellow internet buddies for all of your prayers about our potty-training situation. Blessings to you all because your prayers are most potent!

Now don’t get too excited because our Ethan is still not potty-trained…that would be some answered prayer, indeed! No, he has not graduated to the world of Bob the Builder underwear yet, but he did get moved out of that awful class that they were going to put him in this fall where he would have had to been able to use the potty.

We had Ethan’s meet & greet night at school and I have been dreading this for months. I had kept waiting & waiting for the magical phone call that would tell me that Ethan was not in the potty-trained class, but we never received it despite my request that Ethan be placed in the 2b class and not the 3-4 class.

Just in case you have missed my lovely blogs in the past, you will realize that I am either a) not approaching potty-training in the correct manner, b) my kid is not interested in potty-training, or c) we are just not ready for all of this and neither of us has the enthusiasm or time to devote towards making this a 24-7, 365 day hobby. With our amazing track record of peeing on the potty once, I did not see any light at the end of the potty-training tunnel and I realized that the school was either going to have to accept my diaper-clad kid or we were going to get to spend a lot of Ethan & mommy time together. Despite feeling a bit melancholy about Ethan returning to school, I am not so melancholy that I actually want him to miss out on school (puh-leez! Give me a break!)

We were told, once we got to his new classroom, that an opening had become available in the class that we had requested and they would be able to put Ethan where we really needed him to be. The best part was that it was for the days that we had already chosen so I didn’t even have to switch my days around to take advantage of the opening.

His class will still be new to him because he was out of school this summer (when he would have been in this class) so he will still have a new teacher, a new class, and teachers that will be working with him on the potty training too. What a blessing!

This was much cause for celebration so we celebrated by taking Ethan to Dairy Queen for an ice cream sundae, just like my parents did when we had our back to school night. What better place to celebrate returning to school than the big DQ & chocolate sundaes for all!

The Real History of Amy

I have read, on some feminist websites, that they are pretty darn unhappy with my happy-go-lucky attitude about being a homemaker. They consider my happiness with being home as a direct insult to the progress that we have made as women. I respect their feelings, but also know that I am making the most of what my role as at this time. No disrespect to those of you out there who are bringing home the bacon & frying it in the pan, but I actually enjoy being home.

The truth is that I was not always this way about running my household; in fact, I was pretty much a failure at it. Only in the last couple of years have I realized that this is actually something that I can do and I have tried to approach it with some enthusiasm.

To illustrate how far I have come, I will start from the beginning of our marriage….

When my husband & I were first married, I knew how to cook two things. My first dish that I knew how to make was baked chicken. No, nothing fancy with a sauce or anything elaborate…. just chicken. I would sprinkle Lawry’s seasoning on it and add a side of Rice a Roni and that was our dinner. Yum, yum!

My second dish consisted of tuna casserole. You know the one where the ingredients consisted of a can of cream of mushroom, cream of celery, noodles, & tuna. This second dish was probably the thing that I was most proud of because it felt like real cooking to me.

The first night that I cooked for my husband I made the tuna casserole for him. I proudly served up two bowls of the casserole and watched as my husband’s eyes filled with horror over his bowl. He took a few bites and then claimed that he was full and I just started bawling. You see, the only thing that I knew how to cook was this and he hated it. I think that I yelled at him and told him I was going to leave him (or something to that effect) and I felt a real sense of defeat. We lived hundreds of miles away from our family and anyone that I knew so I didn’t even have a mom out there to come show me how to cook.

That first year of our marriage was filled with a lot of baked chicken and going out to dinner. Seeing as we were both working, I really did not mind the break from the kitchen because we could afford to do that.

Only after my husband secured a job in Indiana did I finally learn to cook (this was towards the end of our third year of marriage) and this was only out of necessity. Ryan moved out to the Midwest to start his job and Ethan & I stayed at our home on the East coast until the house was sold.

Despite my lack of cooking, I did know how to stock a pantry with supposed “cook” ingredients. I realized that we would either have to eat the food in our pantry, give the food away or I would have to eat out by myself with Ethan every night until it was moving day.

With hours upon hours of being alone, I started watching the Food Network and I became almost fanatical in my desire to learn how to cook. If they showed how to cook something on television, I wanted to make it at home. This is really how my love for cooking began and that is when I realized some important cooking skills that I had been lacking.

Here are some of my own common misconceptions about the world of food:

– Beef stew does not come out of a can. I mean, it does, but that is not the way one was intended to eat it.

– Whipped cream is actually cream that has been whipped, it is not Cool Whip. This is one of those things I did not realize that you could actually make.

– Marinara sauce is not necessarily all made by Prego or Ragu- you can actually cook stuff from crushed tomatoes, garlic, & herbs.

– Not all rice is made in a minute.

– Chicken can be prepared in a variety of ways, which could include but not be limited to my baked chicken.

– Vegetables can be bought & prepared fresh…and they actually taste better than the Del Monte veggies.

– Roasting a whole bird (turkey or chicken), despite looking pretty complicated, is not as hard as it looks.

– Brownies can be made from basic ingredients in your pantry- they aren’t all made by Betty Crocker and brownies are not always put together in a powder form.

These are just a few of the simple things that I did not know and why I have attacked cooking & homemaking with a vengeance.

Through my Food Network knowledge, it has opened all of these new doors for me. Now I am not attributing Food Network with everything (watch Sandra Lee’s Semi-Homemade show to understand why I wouldn’t give them all the credit), but without my new love for cooking and a desire to be home with my family, I would have never had this blog, or my site, or all of this extra spending money (okay, that last part is a total lie, but you get the picture).

Go ahead, feminist sites, bash me away. Just try to make me look foolish! Ridicule my Donna Reed-ism & my Leave it to Beaver site…..say what you must!!

But just ask my husband once, if he would like a bowl of tuna noodle casserole and you just SEE if he wants his working woman back…..Hmmm…I think NOT!!

Now just where did I leave my apron?
