Welcome to our virtual bake sale for Glad to Give, helping them raise funds and awareness around pediatric cancer. We promised great prizes and a fun new recipe to add to your collection and we are excited to do just that today!
I am one of those strange people that is not overly tempted by sweet things. I think I must be missing a sweet tooth gene or something. Whatever I lack in sweetness, I make up for in savory and salty dishes. That is why I wanted to offer a fun treat that would be perfect for parents perusing the bake sale aisles with hungry children or for those looking for a more satisfying snack that will fill them up.
Granola with almonds and dried fruits could be an expensive endeavor for a bake sale which is why I wanted to share our new favorite granola recipe, Honey Nut Granola. It is satisfyingly crunchy with sweetness from the honey and brown sugar, but a delicious salty bit with the peanuts and salt mixed in. In my opinion, it is the perfect balance!
Of course packaging those treats is just as important as what is inside of them and I found these clear treat bags and the grosgrain ribbon at the craft store for packaging. Divide the treats into ½ cup packages and sell them for $1.00 a piece at your next bake sale. Display on pretty cake stands and cover your tablecloth in the same color scheme as your ribbon.
Honey Nut Granola (adapted from AllRecipes.com)
3 cups rolled oats (not the quick cooking variety)
1/2 cup chopped peanuts
1/4 cup wheat germ
1/3 cup honey
1/3 cup brown sugar
1/4 cup canola oil
2 tablespoons warm water
1/2 teaspoon salt
2 teaspoons vanilla extract
Preheat oven to 250 degrees F (120 degrees C). Lightly grease a baking sheet. In a large bowl, combine oats, peanuts, and wheat germ. In a separate bowl, combine honey, brown sugar, vegetable oil, water, salt, and vanilla. Stir well; then pour into the oat mixture, and stir. Spread out on a cookie sheet. Bake for 1 hour, stirring every 15 minutes. Remove from oven, and cool before serving.
Don’t forget to make an extra batch for yourself. If your family is anything like mine, they will be fighting over this stuff and it just might be a great new breakfast and snack tradition in your house.

Good morning! As the momma of a 5 year old princess who also happens to be a cancer survivor, I want to thank you for what you are doing. Each and every dollar makes a difference and our kids deserve a cure. I didn’t even realize the astronomical number of kids who got cancer until our baby girl was diagnosed on 9/30/2008. She underwent a bone marrow transplant on 2/5/2009 and fought with everything she had to live. She is now doing great. Sadly, we will never hear the word ‘cured’ but relapse after 2 years is uncommon – we only have 9 months to go!
From the bottom of my heart, I thank you for bringing awareness to this horrible disease and for fighting for a cure.

This may sound simple (and it is) but it is ALWAYS a best seller at our school’s bake sales- melt chocolate chips, and then take small pretzels and put a drop of the melted chocolate in the middle of each one then take a m&m and put it in the middle of the chocolate drop. allow time to harden then bag several together and sell sell sell! All proceeds from our last bake sale and our upcoming bake sale have been and will be sent to cookies for kids cancer! Good luck to all!

Oatmeal Chip Cookies
Ingredients:
1 1/4 cup quick cooking oats
1 cup flour
3/4 cup chocolate chips
1/3 cup vanilla or white chips
1/2 cup slivered almonds
1/4 cup flaked coconut
1/2 cup brown sugar
1/2 cup sugar
1/2 cup butter
1 egg
1/2 T. vanilla
Directions:
Place oats in blender & pulse until fine. In large bowl cream butter, beat in egg & vanilla. Add all other ingredients (mixture will be dry) Drop by rounded tablespoons 2 inches apart on baking sheet. Bake at 375 for 10-15 mins or until lightly brown. Cool 2 mins before removing from pan.

I have lost many family members to cancer and our Brownie troop recently held a bake sale for Vanderbilt Children’s Hospital.
The following recipe is a childhood favorite of mine and a wonderful bake sale item.
Corn Flake Candy:
6 cups corn flakes (any brand will do)
1 cup sugar
1 cup corn syrup (light)
1 cup peanut butter
Start by having your corn flakes ready in a large mixing bowl.
Next, spray a 9×11 rectangular pan with cooking spray.
Next, melt sugar and corn syrup on medium heat until melted together (stir constantly).
Next, reduce heat and melt in peanut butter (still constantly stirring).
Add melted mixture to cornflakes and coat all pieces evenly.
Finally (this really is only about a 15 min. recipe) pour into pan and press down evenly. Let sit 5-10 min. Cut and enjoy!
Love this recipe. I’ll have to make some next week.

No BAKE COOKIES
Ingredients
* 1 3/4 cups white sugar
* 1/2 cup milk
* 1/2 cup butter
* 4 tablespoons unsweetened cocoa powder
* 1/2 cup crunchy peanut butter
* 3 cups quick-cooking oats
* 1 teaspoon vanilla extract
Directions
1. In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

I think that doing this is awesome idea! I will definately add these recipes to our book for church bake sale. It is fabulous that you are doing this for pediatric cancer research. These kids need us to help save their lives and prevent their families from unbelievable pain… Bless you!
Coconut Joys
1 stick of butter
2 C. powdered sugar
3 C. coconut
2 squares of baking chocolate or choc. chips
Melt butter. Remove from heat. Add sugar & coconut. Mix. Shape into balls (bouncy ball size). Make in indent in the top of the ball. Place balls on cookie sheet. Fill centers with melted chocolate. Chill until firm. Makes about 3 dozen. Store in Fridge until ready to serve.

This blueberry muffin recipe is quick easy but an instant hit. Sweet, moist and topped with crunchy sugar!!
Here is the blueberry muffin recipe:
1/2 cup milk (or buttermilk)
1/4 cup oil
1 egg
1 1/2 cup flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup fresh or frozen blueberries
Mix milk, oil, egg.
Combine dry ingredients, then add milk, oil & egg mixture
Carefully stir in blueberries
Bake in greased muffin tins
Sprinkle with sugar
Bake at 400 degrees for 20 minutes or until golden
Makes 12 muffins
I love making white cupcakes and then topping them with red frosting using the hair looking attachment on the pipping bag. Then adding fondant shapes to make my cupcakes look like elmo. They are a big hit at all the bake sales I host.

The pound cake recipe I submitted was so very yummy! My children, 2 and 3 years old, stole a whole pound cake when I wasn’t looking and I found them in the tub eating it! LOL
Taffy Apple Grapes – Simple and FAST
Green Grapes
White Chocolate
peanuts
Wash grapes
Crush peanuts
Melt white chocolate
Dip grapes into the white chocolate then dip into crushed peanuts
Lay grapes on wax paper and refridgerate.
Put 5-10 grapes in individual baggies for bake sale!
Takes just like a taffy apple…yummy.
Bake Sale Lemon Bars
* 24 Servings
* Prep: 10 min. Bake: 40 min. + cooling
Ingredients
* 1-1/2 cups all-purpose flour
* 2/3 cup confectioners’ sugar
* 3/4 cup butter, softened
* 3 eggs, lightly beaten
* 1-1/2 cups sugar
* 3 tablespoons all-purpose flour
* 1/4 cup lemon juice
* Additional confectioners’ sugar
Directions
* In a small bowl, combine flour, sugar and butter until crumbly; pat into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20 minutes.
* Meanwhile, in a bowl, whisk eggs, sugar, flour and lemon juice until frothy; pour over the hot crust.
* Bake at 350° for 20-25 minutes or until light golden brown. Cool on a wire rack. Dust with confectioners’ sugar. Cut into squares. Yield: 3-4 dozen.
I am so happy to have found this today! My daughter, who is now 25, is a childhood cancer survivor. She was diagnosed with AML (leukemia) at age 10 in 1996 and underwent a bone marrow transplant – my son was a perfect match and her donor! She is considered “cured” but unfortunately many complications from the transplant (they had many more complications 15 years ago than kids sometimes have today-which is wonderful for the kids now), and those have left her living at home and on total disability. She has had 12 surgeries in the past 18 months and had 3 surgeries in the last 4 weeks! Our journey has been long and incredibly hard and what you are doing to raise money for pediatric cancer research is so very important. There is so much need for finding less toxic therapies, so that what happened to my daughter has less chance of happening to kids that undergo chemo and other treatments today. Thank you for your efforts and please pray for my daughter – her name is Lindsey! I do my coupon blog as a way to “pay it forward” in the hopes of helping others learn ways to save money, and it is my way of saying thank you to people who have helped us along the way. So thank you!
