I love that dish because the sauce can be made while you are heating up the pasta water. It is one of my favorites and such an elegant dinner to entertain with. Next time I will take your advice and double the sauce!</description>

I like to add sliced fresh mushrooms and sometimes some cooked, chopped spinach for variety.&lt;br /&gt;&lt;br /&gt;I double the batch and freeze half the &quot;sauce&quot; for another time. Then, I just boil the noodles and reheat the sauce and combine. WAY easy!&lt;br /&gt;&lt;br /&gt;I do think it&#039;s a bit time-consuming for a &quot;busy&quot; weeknight, unless you do the freezer version.</description>

So easy and delicious...and toddler friendly, too! ;) &lt;br /&gt;&lt;br /&gt;Our favorite quick weeknight dinner is a one-pot chili that we make several times a month. &lt;br /&gt;&lt;br /&gt;1 lb. lean ground beef or turkey&lt;br /&gt;1 tsp. chili powder&lt;br /&gt;1 tsp. oregano&lt;br /&gt;32 oz. salsa, you pick your heat&lt;br /&gt;2 15-oz cans pinto, black, kidney beans (use your favorites), drained&lt;br /&gt;1/2 bag frozen shoepeg corn&lt;br /&gt;&lt;br /&gt;Brown the meat, add the spices and saute 1 min, then add the remaining ingredients. Simmer 20 minutes, and dinner&#039;s ready! We like cheese, tortilla chips and sour cream with this. The salsa gives the chili lots of flavor and vegetables (we buy the chunky version), and no chopping! So easy, and so fast! Thanks for keeping it easy and delicious with the great recipes, Amy!
