It is the berry season and nothing says summer to me like a big blueberry muffin. I am hoping to make it over to do a little berry picking with the kids this summer. This batch of berries was bought at our supermarket for only $.99 a pint. When berries are in season, they make a budget-friendly addition to the grocery cart.
I wanted to share with you my favorite little recipe for Blueberry Muffins. Growing up, my mom bought the Jiffy Blueberry Muffin Mixes. Did anyone else grow up on these? We always thought my grandmother’s blueberry muffins were so fancy because they were homemade. It is times like these when I reflect on how far I have come in the kitchen and the ease and pride I feel when making things myself. I will say though, those Jiffy mixes aren’t too bad, but to have the fresh blueberries makes all the difference in a muffin!
Lemony Blueberry Muffins
3 1/2 cups all-purpose flour
2/3 cups sugar
4 t baking powder
1/2 teaspoon salt
2 beaten egg
1 1/2 cups milk
1/2 cup cooking oil (I like canola oil)
1 lemon (zest & juice)
1 pint blueberries (two cups)
Sugar for dusting
Mix together all dry ingredients. In a separate bowl mix together beaten egg, milk, and oil, lemon zest, and squeeze in the juice from one lemon. Add the wet ingredients to the dry and mix until just moistened. Try not to over mix your batter- I know it’s hard! Fold in blueberries. Place in prepared muffin pan and sprinkle the tops with a little sugar. Bake at 400 degrees for about 22 minutes, or until tops are golden brown. Be careful not to overcook these- they cook quickly!

I grew up on those Jiffy mixes. They sure are a handy (and cheap) way to make a muffin. We always had the cornbread ones that were a great addition to a bowl of stew or chili. We don't get berries of any kind here so I miss them terribly. Some friends brought some strawberries to us from a neighboring country and I really ration them. Berries freeze very well so you could buy yours now and freeze them for the winter! I don't have a recipe but my Aunt always made me a strawberry pie for my birthday and it was my absolute favorite (non-chocolate) dessert! Other than that, I really just like some berries (especially black and raspberries) over some vanilla ice cream.

Saw your tweet. Yep, Jiffy mixes are a true southern staple down here and I have to say, they are good.
Those muffins look wonderful! I think that blueberry muffins are probably my favorite sweet muffin and I don't have them nearly enough. The lemon and blueberry are fantastic flavors together too. It's picking time right now and I need to get to a U-pick farm and put some blueberries up in the freezer!
I have several favorites as far as berries go so hard to pick just one, but one of my most favorite berry recipes is for my fresh strawberry pie! Just thinking about it makes me want to pop in the kitchen and get busy!

Mary- It is interesting that you say it is a Southern thing. My family roots are in TN so maybe that is where we get this tradition from. You are right- they are easy and yummy! It definitely takes the work out of the preparation! Your strawberry pie sounds delicious!!

Oh, yum! Your recipe sounds fabulous. One little thing that might make it even better: mix a little nutmeg in with your sugar for the muffin topping. I got that from my favorite blueberry muffin recipe and it gives it such a great flavor (and smells awesome when it's baking).

I JUST made lemon blueberry muffins two days ago! Aren't they yummy? Looks like the recipe I used was very similar, although I did a lemon glaze on top (powdered sugar and lemon juice) – they were really good!
