Here is a great go-to dish that can be made with a couple of easy ingredients in your pantry. If you do not have fresh rosemary on hand, you can substitute with dried rosemary instead. I serve this with a little rice and a vegetable for a quick weeknight dish.

Rosemary Chicken

4 pieces boneless, skinless chicken breast, 6 to 8 ounces each
2 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
3 stems rosemary, leaves stripped and chopped, about 2 tablespoons
Salt and coarse black pepper
4 cloves garlic, cracked away from skin with a whack against the flat of your knife

Coat chicken in balsamic vinegar, then olive oil. Season chicken with rosemary, salt and pepper and let stand 10 minutes. Heat a medium nonstick skillet over medium high heat. Add chicken breasts and cracked garlic to the pan. Cook chicken 12 minutes, or until juices run clear, turning occasionally. The balsamic vinegar will produce a deep brown, sweet finish on the chicken as it cooks.

    We love rosemary chicken, but I usually do it as a whole roasted chicken since I’m the only one who eats the breast meat.

    I’ve never thought of coating it with the vinegar – I’ll try that and see if it makes a difference!

    Christi- The vinegar will help to break the meat down a bit and make it more tender. I love a whole chicken too. Let me know if it works!!

    Laura- You know, my kids actually DID eat it :) I had it cut up so the rosemary was probably less noticeable. Ethan ate almost a whole piece of chicken by himself. It was a hit overall.

    Stef- We buy our chicken at two different places. The first place is at Sam’s Club- the bags of Tyson frozen chicken breasts. They do not use growth hormones in their chicken and the breasts are relatively the same size and in a good size portion.

    The second is from a local place called Shelton’s Farm. They actually provide meat for the area restaurants and it is fresh and good quality.

    Thanks Amy. I could totally see my kids saying “what’s the green stuff?” and then not eating, which is why I asked. But I remember that Ethan is a little picky, so if he ate a lot, it’s probably a good one. I’ll try it and see what happens! Thanks again.
