Sherri- What great feedback and I love the addition of the rosemary and goat cheese. I would have never thought of that! Thanks so much for trying it and I am so happy that this will be going in your family's rotation!

I probably print out 4-6 recipes a day with the intent to try them and I never do. I tried this one tonight and it was sooooo good. Like you, I omitted the onions. The diced tomatoes I used already had some onion and garlic. I didn't have any basil or oregano so I skipped those too. The rosemary and thyme were fresh from my garden. I also added a few pieces of goat cheese. It was totally divine. Somewhere between my favorite frozen dinner chicken margherita and Carrabas' Chicken Bryan. I will definitely make this again and am so glad to have leftovers.

Thanks!

Laurel- I agree and you can see the amount of sprinkles on my chicken. I was thinking of playing around with this recipe too and maybe cutting the balsamic vinegar in half, but it might not be as tender.

Thanks so much for trying it and I am glad you enjoyed it!

This was delicious! It did need the hearty dose of parmesan to cut the acidity, but the flavor was amazing, and the chicken was so tender...

We're having a guest for dinner and I was debating how to prepare chicken. We were already going to have green beans and pasta tossed with artichokes... but I couldn't decide on which chicken recipe.

So we're trying yours tonight! We might not be quite as fast as Mrs. Mordecai, but we're looking forward to it!

Mrs. Mordecai- Wow, you are fast! I am so glad that you enjoyed it and am thrilled you already got a chance to sample it. I will have to try it with chicken thighs sometime. Thanks for sharing your feedback.

Jessica- I do think this would be great with a whole grain rice. My children are noodle fans, but whole grain spaghetti would even be good with this. Thanks so much for visiting the site!
