Quick Weeknight Dinner: Braised Balsamic Chicken

Braised Balsamic Chicken (Courtesy Of: AllRecipes Dinner Tonight Cookbook)

6 skinless, boneless chicken breasts
Ground black pepper to taste
1 teaspoon garlic salt
2 tablespoons olive oil
1 onion, thinly sliced (I omitted this)
1 (14.5 ounce) can diced tomatoes, undrained (I used petite diced)
1/2 cup balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried oregano
1/2 teaspoon dried thyme

Season chicken breasts with ground black pepper and garlic salt. heat olive oil in a medium skillet and brown the onion and seasoned chicken breasts. Pour tomatoes and balsamic vinegar over chicken and add basil, oregano, rosemary, and thyme. Simmer until the chicken is no longer pink and the juices run clear, approximately fifteen minutes. Serve over a bed of rice or spaghetti.

This would be delicious served up with a side of green beans and a big sprinkle of Parmesan cheese. The dinner comes together in about twenty minutes which makes it a great dish to entertain with or to throw together on a weeknight. Enjoy!

    We’re having a guest for dinner and I was debating how to prepare chicken. We were already going to have green beans and pasta tossed with artichokes… but I couldn’t decide on which chicken recipe.

    mmm never tried balsamic with chicken, sounds delish. i will not omit onions though! just learned to love onions this year myself and my youngest finally tried them this week and exclaimed “oh, i do love onions!”

    Laurel- I agree and you can see the amount of sprinkles on my chicken. I was thinking of playing around with this recipe too and maybe cutting the balsamic vinegar in half, but it might not be as tender.

    I probably print out 4-6 recipes a day with the intent to try them and I never do. I tried this one tonight and it was sooooo good. Like you, I omitted the onions. The diced tomatoes I used already had some onion and garlic. I didn’t have any basil or oregano so I skipped those too. The rosemary and thyme were fresh from my garden. I also added a few pieces of goat cheese. It was totally divine. Somewhere between my favorite frozen dinner chicken margherita and Carrabas’ Chicken Bryan. I will definitely make this again and am so glad to have leftovers.
