When my eldest went to school, I would pack her her favorite: cold tofu, sliced into square, with teriyaki sauce for dipping it in. She absolutely loved it. We also made a weekly menu that we followed, including "soup day" where she would take a thermos of miso soup.

I've never thought about freezing sandwiches. That is such a great idea!

You husband's co-workers are probably jealous that he has a wife who makes him lunch everyday. Lucky guy!

Here via Carnival of Family Life.

My kids love to take cheese quesadillas and salsa for lunch. They are super easy to make in the morning.

I've been packing my lunch since high school--20 years now! I've been a teacher for 10 years and have never eaten from the cafeteria. Leftovers are the VERY best. If I seriously can't figure out what to take for lunch, it's yogurt, crackers, and fruit.

I think your husband really does appreciate your homemade packed lunches. My sweetie's office is basically on the run in the car and because of the heat he's had to eat out for lunch each day. Financially it's a bummer, but he's gained weight and he says he misses home lunches. (We tried the whole cooler, ice packs, frozen water bottle thing, but it's seriously TOO HOT right now.)
