We made the Taco Soup this week in honor of the Super Bowl. It was INCREDIBLE and so very, very easy. The whole family loved it. I thought it was even better the second day after it had a chance to settle into itself a bit...some things just taste better the next day! This one is a keeper for our family; perfect on cold, busy days! Thank you!!

This slow-cooker beef stew is, without a doubt, the easiest and most flavorful stew I've ever made! The flavors were simply incredible. The extra time that it takes to sear the beef beforehand makes an incredibly rich, delicious stew. I did add some oil to the pan when searing because my stew meat was so lean. I got lots of nice browned bits on the bottom of the pan after the searing, so I took advantage of the concentrated flavor bits (I'm a Food Network junkie, too!) and deglazed the pan with the beef broth to add to the slow cooker. Incredible! My DH raved about this, and gave me an 11 on our 1-10 dinner rating scale! It's a keeper!! YIPEE! Thank you!

Ashli,

I love this dish too and almost posted it. The only difference is that I use chicken broth (instead of the water). That is one of my favorite new dishes that I found in the Kraft magazine.

Can't wait to see your other choices!

I love this idea. One of my friends just had a baby (her third) so she has everything she needs and really really appreciated this meal. Our church parent group offers meals to any new mom we hear about. It is a great way to help out and meet new moms. Here is one of my favorites to take to new mommies. I have a few other standards that I switch between - I'll send them later. I have two little ones nagging me to "swim mamma, swim"!!

Bruschetta Chicken Bake

1 can (14.5 oz) diced tomatoes, undrained
2 cloves garlic, minced
1 pkg. Stove Top Stuffing mix for chicken
1 tsp dried basil
1 lb. chicken breast cut into pieces
1 c shredded mozzarella cheese

Preheat oven to 400. Place tomatoes with liquid in medium bowl. Add garlic and stuffing mix and ½ c water; stir until stuffing is just moistened.

Place chicken in 13x9 baking dish; sprinkle with basil and cheese. Top with stuffing mixture.

Bake 30 minutes or until chicken is cooked through. I always take a loaf of crusty bread and a bagged salad with this.
