<p>Heat the oil in a heavy skillet. Add the rice and stir over medium-high heat until rice is golden brown. Add the garlic and chopped onion, and sauté until the onion just begins to brown. Add the tomatoes, tomato sauce, chicken broth, chili powder and salt, lower heat and cover. Simmer for 20 to 25 minutes until all liquid is absorbed. Remove from heat and allow to sit, covered, for 5 minutes. Fluff with a fork and serve.</p>

<p>Adjust an oven rack to the middle position and heat the oven to four hundred degrees. Combine the chicken, 2 cups of the cheddar cheese, 1/2 cup of the enchilada sauce, the chiles and cilantro. Season with salt &#038; pepper to taste. Stack the tortillas on a microwave-safe plate, cover with plastic wrap and microwave on high until warm &#038; pliable (approximately 1 minute). Spread the warm tortillas out over a clean counter. Place 1/3 cup of the chicken mixture evenly down the center of each tortilla. Tightly roll the tortilla around the filling, then lay seam-side down in a 9&#215;13&#8243; baking dish lightly coated with vegetable oil spray. Lightly spray the enchiladas with vegetable oil spray. Pour 1 cup of the remaining sauce over the enchiladas to coat thoroughly. Sprinkle the remaining 1 cup cheddar down the center of the enchiladas. Cover the baking dish with foil and bake until the enchiladas are heated through, 20-25 minutes. Remove the foil and continue to bake until the cheddar browns, about five minutes longer. Season with salt to taste. Divide the filling evenly among the taco shells and serve passing any desired accompaniments separately.</p>
<p><strong>Make-Ahead Version:</strong> The filling can be fully prepared, cooled, covered tightly and refrigerated for up to three days. Reheat over medium-low heat, adding additional water to adjust the consistency.</p>

Sprinkle burritos with cheese, cover with foil and bake 20 minutes.<br />

<p><em>A yummy chip dip can be made by simply blending one brick of softened cream cheese with a jar of salsa. Blend with your hand mixer and serve with the tortilla chips. If you are in a time crunch, simply pour the salsa over the brick of cream cheese and serve with a spoon. </em></p>

To freeze, place shredded meat into freezer bag with juices. Press out all the air &amp; seal.Serve with tortillas, taco shells, lettuce, cheese, &amp; sour cream.</p>
