<p>Pour fudge topping into medium bowl. Whisk in 1 cup whipped topping. Add dry pudding mix; stir 2 min. Stir in chopped cookies. Arrange 4 ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; top with half the whipped topping mixture. Repeat layers. Top with remaining sandwiches. Frost top and sides with remaining whipped topping. Bring up foil sides; double fold top and ends to loosely seal packet. Freeze (at least) four hours.</p>
<p>Amy&#8217;s Notes- One year I had difficulty with the tin foil sticking to my cake so this year I prepared the cake in a cupcake tote container with a lid and that worked much better than wrapping in tin foil and was easier to stack with other items in our freezer.</p>

The blender should be about 3/4’s full. Place the lid on. Process for a full 2 minutes. Pour into cups and serve. Makes 4 &#8211; 12oz servings.</p>

<p>1/4 cup water, warm (100-110F)<br />
2 tbsp butter, melted<br />
3/4 cup milk, warm (100-110F)<br />
1/2 tsp vanilla extract<br />

3 &#8211; 3 1/2 cups all purpose flour<br />
1 tsp salt<br />
3 tbsp sugar<br />
2 1/2 tsp active dry yeast (.25-oz)</p>
<p>Sugar Mixture:<br />
2 cups brown sugar<br />
1 1/2 tbsp ground cinnamon<br />
1/2 tsp ground allspice<br />
1/2 cup butter, melted</p>
<p>Lightly grease a standard 10-in bundt pan with vegetable oil or any cake-shaped pan. Set aside.<br />
In a microwavable bowl, combine the water, milk, and butter and microwave it for one minute (or just until warm). Pour this into the bottom of your bread machine. Add the egg and vanilla next. Add the flour, salt, sugar, and then finally the yeast. Run the Dough cycle on your bread machine and let it run through the entire cycle until it beeps.</p>
<p>Turn dough out onto a very lightly floured surface and gently deflate so that dough is relatively flat (maybe 1/2-3/4 inch thick) Using a knife or a bench scraper, cut off small pieces of dough to form 1/2 to 1-inch balls. As you cut each piece of dough, roll it into a ball in the palms of your hands. Dunk each ball in butter, use the fork to remove it and transfer it to the sugar mixture to be thoroughly coated. Place all coated dough balls into prepared bundt pan.</p>
<p>Once all balls have been coated and places in the pan, cover the pan lightly with plastic wrap and let bread rise for 60 minutes, until almost doubled in size. I covered this with plastic wrap and then popped it in the fridge overnight.</p>
<p>Preheat the oven to 350F when you are ready to bake it. If it is in the refrigerator, pull it out a half hour before and let it rise on the kitchen counter before baking. Bake for 30-35 minutes. Bread will spring back when lightly pressed. Let bread cool in pan for 10 minutes, then turn out onto a serving platter. Eat immediately (or reheat leftovers), as the bread is best served warm and gooey.</p>

<p>Preheat oven to 350°F. Butter and flour two 9&#215;5x3-inch loaf pans. Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl. Stir into pumpkin mixture in 2 additions. Mix in walnuts, if desired.</p>
<p>Divide batter equally between prepared pans. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes. Transfer to racks and cool 10 minutes. Using sharp knife, cut around edge of loaves. Turn loaves out onto racks and cool completely.</p>

<p>2. Pour the cake mix into a large bowl. Make a well in the center, and add peanut butter, oil, eggs, and water. Mix until well blended. Drop by teaspoonfuls onto ungreased cookie sheets. Flatten slightly using a fork dipped in water.</p>

<p><em>Ingredients: Butter flavored cooking spray, 2 cups flour, 1 teaspoon baking soda, 1 teaspoon salt, 1/2 teaspoon baking powder, 1 cup mashed very ripe bananas, 1 cup sugar, 2 egg whites, 2/3 cup fat-free vanilla or banana yogurt, 2/3 cup chopped walnuts (I omitted the walnuts)</p>
<p>Directions: Preheat the oven to 350. Mist a 9&#215;5x3&#8243; nonstick loaf pan with cooking spray. Set aside. In a small bowl, combine the flour, baking soda, salt, and baking powder. Set aside. In a large mixing bowl, combine the bananas, sugar, egg whites, and yogurt. Using a sturdy whisk or a spoon, mix until throughly blended. Add the flour mixture. Stir until no flour is visible. Stir in the nuts. Pour into the reserved pan. Bake for 50-60 minutes or until a toothpick inserted in the center comes out dry. Cool in the pan on a rack for ten minutes. Remove to the rack and cool completely. Cut into eight slices. Serve warm or room temperature. Wrap and refrigerate any leftovers for up to three days.</em></p>

<p><strong>Davidâ€™s Skinny Chocolate Chip Cookies</strong></p>
<p><em>1 Â¼ cup all-purpose flour<br />
1 teaspoon baking soda<br />
Â½ teaspoon salt<br />
4 tablespoons unsalted butter, softened<br />
Â½ cup light brown sugar, firmly packed<br />
6 tablespoons granulated sugar<br />
1 large egg<br />
2 tablespoons whole milk<br />
1 teaspoon vanilla extract<br />
1 Â½ cups (about Â¾ of a 12-ounce bag) chocolate chips<br />
2 cookie sheets lined with parchment or foil</p>
<p>Set racks in the upper and lower thirds of the oven and preheat to 350 degrees. Mix the flour, baking soda, and salt together and set aside. Beat the butter and sugars together by machine with the paddle attachment on medium speed until well mixed (about one minute). Beat in the egg and milk until they are absorbed and then the vanilla. Donâ€™t worry if the mixture looks curdled, the flour mixture will smooth it out. Scrape down the bowl and beater and beat in the flour mixture on low speed. Use a large rubber spatula to fold in the chocolate chips. Chill the dough in the bowl for fifteen minutes to keep the cookies from spreading too much while they are baking. Form the dough into 1 1/2-inch balls or use a small ice cream scoop to form the cookies. Arrange the balls of dough 2 inches apart all around the prepared pans. Bake the cookies for eight to twelve minutes, or until they look dull on the surface, have spread, and are still quite moist. Cool the cookies on the pans on racks for five minutes. Slide the papers to racks and cool the cookies completely. For storing: keep the cookies between sheets of wax paper in a tin or plastic container with a tight-fitting lid.</em><br />
